ASIAN TUNA PATTIES
A delicious, fast, and different way to eat tuna. Everyone who has tried this has asked for the recipe.

- In a large bowl, mix tuna, egg, bread crumbs, green onions, and garlic. Blend soy sauce, teriyaki sauce, ketchup, sesame oil, and pepper into the mixture. Form the mixture into about 6 patties approximately 1 inch thick. Lightly sprinkle each patty on all sides with cornmeal.
- Heat oil in a medium skillet over medium heat. Fry each patty about 5 minutes on each side, until golden brown.

- Beat eggs and lemon juice in a bowl; stir in Parmesan cheese and bread crumbs to make a paste. Fold in tuna and onion until well-mixed. Season with black pepper. Shape tuna mixture into eight 1-inch-thick patties.
- Heat vegetable oil in a skillet over medium heat; fry patties until golden brown, about 5 minutes per side.

ASIAN TUNA PATTIES
I invented/adapted this recipe from an asian pork cutlet recipe. Tweaked it a bit more to make it conform with the WW Core eating plan. We (including kids) love these, hope you enjoy, too! (The teaspoon of sesame oil adds 1 point to the whole recipe.)

Steps:
- Heat skillet.
- In large mixing bowl, flake tuna and add in the rest of the ingredients (except sesame seeds.).
- Drop spoonfuls to desired size on heated skillet. The mix will be kind of runny, not something you want to try to mold in your hands. If you like, you can lightly sprinkle sesame seeds on top before turning (this is mostly for looks.).
- Great served with soy sauce, brown rice and steamed veggies or with a gyoza dipping sauce. *Note: If you're not concerned about the WW Core-ness of this recipe, you can use breadcrumbs instead of oatmeal and increase the oil a bit. Serving size is 2-3 patties.

TUNA FISH PATTIES
This is a great recipe I came up with to get rid of leftover bread. I generally use the contents of my vegetable drawer here so I kind of throw in whatever I have at the time, so you can use your own judgment. They taste really nice when eaten with sour cream or low-fat mayo or even on their own - though my husband prefers ketchup. I generally use this recipe as a guideline, so have fun with it!

- Soak bread in water in a large shallow dish until softened completely; remove from dish and squeeze as much water from bread as possible.
- Heat 1 tablespoon olive oil in a non-stick skillet over medium heat; cook and stir onion, spinach, and garlic in the hot oil until the onion softens, about 5 minutes.
- Mix the onion mixture with softened bread, tuna, mushrooms, zucchini, celery, eggs, dill, salt, pepper, basil, and oregano in a large bowl until combined. Form the mixture into about 24 thin, palm-size patties.
- Heat 1 tablespoon olive oil in a large skillet over medium heat; cook the patties in the skillet until cooked through, 2 to 3 minutes per side.

- Whisk well mayonnaise (2 Tbsp) and gochujang (1 tsp) in a small bowl. Combine canned tuna, eggs, green onion, onion, bell peppers, flour, salt, gochujang mayo sauce from earlier, and a 1/2 cup of panko breadcrumbs in a mixing bowl. Mix them well.Place the remaining panko breadcrumbs in a wide bowl (e.g. pasta bowl). Shape the mixture into small balls. I use an ice cream scoop to make even sized patties. As you make small balls of mixture, gently place them on panko and roll around to coat. Gently flatten the balls into patties with your hands. Coat with more panko and set aside. Repeat this with the remaining tuna mixture.
- Stove Top Method – Preheat a skillet over medium low heat. Once heated, add some cooking oil and spread well. Gently place the tuna patties into the skillet (without over crowding) and cover with the lid, cook for 5 mins. Add some oil over the tuna patties and flip them. Cook for a further 5 mins, covered. Flip once more and cook another 5 mins, or until golden brown.Air Fryer Method – Spray the fryer basket with cooking spray. Gently place the tuna patties in the basket (without over crowding). Set the air fryer to 180 C / 356 F and cook for 8 to 10 minutes. Then flip the patties with tongs and cook for 8 to 10 minutes more, or until golden brown.Oven Method – Preheat oven at 200 C / 392 F. Line a large baking sheet with baking paper. Gently place the tuna patties and lightly spray with cooking oil. Bake for 10 mins. Remove the tray from the oven, flip the patties, and lightly spray with some cooking oil. Return to oven and bake for another 10 mins or until golden brown.
- Serve warm with your choice of dipping sauce (e.g. gochujang mayo dipping sauce, ketchup, soy dipping sauce, aioli, or tartar sauce).
