Champiñones Salteados - Sauteed Mushrooms image

This is a Spanish recipe and is often served as tapas, but can also be a side dish. Easy to make and pretty darned tasty! My mom used to add a splash of sherry.

Number Of Ingredients 6

Ingredients

1 lb mushrooms, stems trimmed
2 tsp unsalted butter
6 clove garlic, minced
2 Tbsp flat-leaf parsley, minced
2 Tbsp bread crumbs
salt & pepper

Steps:

1. Wash the mushrooms and dry well. Cut in half.
2. In a large skillet, melt the butter. Add the mushrooms, garlic and parsley. Saute over medium high heat until the mushrooms are lightly browned.
3. Add the bread crumbs, then salt and pepper to taste.

First, clean the mushrooms by cutting the base of the stem, and then gently wiping with a damp cloth. Once clean, slice the mushrooms from top to bottom.
Place a frying pan over medium heat, and add the olive oil. When the oil is hot, add the finely sliced garlic cloves and the cayenne peppers.
Once the garlic starts to turn golden, add the mushrooms to the pan, along with the white wine and a pinch of salt. After the wine is reduced and absorbed by the mushrooms, leave the pan on the heat for five minutes more and then remove from heat.
