This is a mouth-tingling, numbing hotpot! The spicy soup stock base is a delicious broth in which fresh ingredients are poached - like a Chinese fondue. The Mandarin word for such a feast is 'Huo-guo', meaning 'hotpot', because all the ingredients are cooked in a hotpot! I love this kind of feast, it is easy to prepare, and is great for interaction with friends. All you need is an electric wok or fondue set up in the centre of the table and plenty of soup ladles and away you go. I had this dish in Chengdu in the middle of summer and it was fantastic. Be warned - this is extremely spicy.

Number Of Ingredients 31

2 tablespoons groundnut oil (peanut)
3 to 4 long dried Sichuan chiles or long dried chiles
2 ounces whole Sichuan peppercorns
1 tablespoon chile bean sauce*
1 tablespoon chile sauce
6 cups hot vegetable stock
2 star anise
6 dried Chinese mushrooms or 6 dried shiitake or porcini mushrooms
1 small handful dried orange peel or the zest of 1 orange
9 ounces chile oil
1 (1-inch) piece fresh ginger, peeled
2 medium red chiles, seeded and sliced
9 ounces (MSG free) fish balls
1 large spring onion, coarsely chopped
1 small handful Chinese cabbage leaves, sliced 1-inch thick
1 small handful deep-fried tofu
1 small handful fresh tofu, cut into 1-inch chunks
3 tablespoons black rice vinegar (recommended) or balsamic vinegar
3 tablespoons light soy sauce
1 red chile, seeded and finely chopped
1 egg yolk
1 tablespoon Oriental satay sauce* or barbeque sauce
1 tablespoon light soy sauce
1 tablespoon finely chopped fresh cilantro leaves
1 tablespoon finely sliced spring onions (green)
9 ounces (MSG-free) fish cake, sliced
Baby corn, as needed*
Raw lamb, thinly sliced, as needed
Raw prawns or shrimp, shelled and deveined, as needed
Firm tofu, cut into chunks, as needed
Enoki mushrooms, as needed

Steps:

  • For the soup base:
  • Heat a 3 1/2 pint capacity wok over a high heat, and add the groundnut oil. Stir-fry the chiles and Sichuan peppercorns until fragrant. Add the chile bean sauce, and chile sauce, then pour in the stock. Add the star anise, mushrooms, orange peel, chile oil, and ginger, and bring everything to a boil. Then, reduce the heat to medium-low, and simmer for 20 minutes. Ten minutes before serving, stir in the chiles.
  • For the hotpot:
  • Whilst the stock is simmering, divide all the fish balls, spring onions, cabbage, deep-fried tofu, and fresh tofu on 4 serving plates, cover with plastic wrap, and chill them in the refrigerator.
  • For the soy dipping sauce:
  • Combine the black vinegar, soy sauce, and chiles in a bowl, and set the sauce aside.
  • For the special dipping sauce:
  • Let each guest prepare their own Taiwanese dipping sauce at the table. In a small bowl, stir to combine, the egg yolk, satay sauce, cilantro, and spring onions.*
  • For the assembly:
  • To serve, arrange all the ingredients on the table. Transfer the soup base to an electric wok or fondue pot, and set it up in the center of the table. Let the guests help themselves, and cook the raw ingredients in the spicy broth. Serve with both dipping sauces.

SWEET & SPICY ASIAN DIPPING SAUCE

This simple sauce can be thrown together with items most people have in their pantries! Great for dipping potstickers, Spring rolls or Summer rolls. The Asian hot sauce in the ingredient list below can be subbed with Asian hot chili oil, if you prefer. I like to use Sriracha Hot Chile Sauce.

3 tablespoons rice wine vinegar
1 tablespoon Asian chili sauce (I like Sriracha Hot Chile Sauce)

sesame seeds (to garnish) (optional) or chopped scallion (to garnish) (optional)

Steps:

  • Wisk together ingredients in a bowl, making sure sugar is completely disolved.

2 pounds chicken wings
6 green onions, chopped
3 1/4-inch-thick slices fresh ginger
1 garlic clove
1/8 teaspoon whole black peppercorns
10 cups (or more) cold water
2 ounces bean thread noodles*
1 pound partially frozen skinless boneless chicken breasts, cut crosswise into 1/8-inch-thick slices
Sweet-and-Spicy Dipping Sauce
2 heads butter lettuce, leaves separated
1/2 cup finely shredded peeled carrots
1/3 cup fresh mint leaves
1/3 cup fresh cilantro leaves
*Clear dried noodles that are also known as cellophane or transparent noodles; available at Asian markets and in the Asian foods section of some supermarkets.

Steps:

  • Combine chicken wings, 2 green onions, ginger, garlic and peppercorns in large saucepan. Add enough cold water to cover mixture by 2 inches. Bring to simmer. Reduce heat to medium-low. Simmer gently until liquid is reduced to 4 cups, about 2 1/2 hours. Strain broth into large glass measuring cup; discard solids. Season broth to taste with salt. Refrigerate at least 30 minutes. Spoon fat off top of broth. (Can be made 2 days ahead. Cover and chill.)
  • Using scissors, cut noodles into 3-inch lengths. Place in large bowl. Add enough hot water to cover; let stand until softened, about 10 minutes. Drain well.
  • Arrange sliced chicken on platter. Place Sweet-and-Spicy Dipping Sauce, lettuce leaves, carrots, mint, cilantro, remaining 4 chopped green onions and noodles in separate bowls.
  • Return broth to saucepan; bring to simmer. Transfer broth to fondue pot. Set pot over fondue burner and adjust heat so that broth simmers. Allow guests to simmer chicken slices in broth until cooked through, about 3 minutes. Serve with sauce, vegetables and noodles.

This is our favorite sauce! It is great with sesame seeds and cilantro on battered chicken breast pieces. It is awesome on grilled chicken or fish. It would probably be great in a stir fry as well. We usually serve the chicken (or fish) with extra cilantro on top of the sauce.

1 teaspoon canola oil or 1 teaspoon peanut oil
1/2 cup dark brown sugar
2 tablespoons water
1/4 cup lee kum kee hoisin sauce
1 tablespoon chili paste
2 teaspoons cilantro
1/4 teaspoon soy sauce
1 teaspoon vinegar

Steps:

  • In a small saucepan, saute garlic in oil for a minute or two.
  • Add everything except the vineger and mix well.
  • Cook on low heat (simmer) for about 6 minutes.
  • Remove from heat and add vinegar.
  • Brush onto chicken or fish and enjoy!

1/4 cup sesame seeds
1/4 cup water
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar (not seasoned)
1 1/2 teaspoons Asian sesame oil
1 teaspoon peanut butter
1/2 teaspoon minced peeled ginger
1/2 teaspoon sugar
1/8 teaspoon hot red-pepper flakes
For garlic dipping sauce:
2 tablespoons low-sodium soy sauce
2 tablespoons water
1 1/2 tablespoons finely grated garlic
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon sugar
For broth:
3 cups reduced-sodium chicken broth
2 cups water
1 garlic clove, sliced
3 thin slices peeled ginger
To cook and dip:
1/2 skinless boneless chicken breast (raw), thinly sliced
1/2 cup cubed firm tofu
1 ounce rice vermicelli (cooked according to package instructions and plunged into cold water to stop cooking)
1/2 cup sliced stemmed fresh shiitake mushrooms
1/2 cup fresh enoki mushrooms, cut into 3-inch lengths and spongy base discarded
2 scallions, sliced
1 cup snow peas, trimmed
2 Napa cabbage leaves, quartered
1 carrot, thinly sliced

Steps:

  • Make Sesame sauce:
  • Toast sesame seeds. Purée in a blender with remaining ingredients until smooth.
  • Make Garlic Sauce:
  • Stir together all ingredients until sugar has dissolved.
  • Make broth:
  • Bring broth, water, garlic, and ginger to a boil in a small saucepan. Discard ginger. Keep at a brisk simmer.
  • To cook:
  • Simmer chicken, tofu, noodles, and vegetables in small batches (chicken will take 30 seconds to 1 minute; make sure not to contaminate other food with utensils for the raw chicken). Serve with dipping sauces in small bowls.

Steps:

  • Each of the ingredients above is a dipping sauce, all by itself, other than the sichuan pepper and salt.

1 (8 ounce) can water chestnuts, drained and finely chopped
1/2 cup thinly sliced green onions with top
1/4 cup grated carrot
1 teaspoon peeled and grated fresh gingerroot
1 teaspoon soy sauce
1 egg white, lightly beaten
1/4 cup mayonnaise
1 garlic clove, chopped
24 square wonton wrappers
1/2 cup red jalapeno jelly
1/4 cup rice vinegar
2 tablespoons soy sauce

Steps:

  • Preheat oven to 425. For potstickers, in large bowl, combine chicken, water chestnuts, green onions, carrot, gingerrott, egg white, mayonnaise, and garlic. Mix well.
  • To assemble potstickers, place 12 wonton wrappers on a smooth surface. Lightly brush edges with water. Place a mounded scoop of filling into the center of each wonton. For each potsticker, fold one point over filling and overlap with opposite point. Repeat with remaining two points, folding envelope style. Place potstickers on oven-safe pan. Lightly spray with oil. Repeat with remaining wontons.
  • Bake 12-15 minutes, or until potsticker edges are golden brown.
  • For dipping sauce, place jelly in a small bowl. Microwave on high 30-40 seconds or until warm; add vinegar and soy sauce. Whisk until blended.
  • Serve potstickers with dipping sauce.
