1/4 cup apple jelly
2 tablespoons chopped fresh thyme
1 tablespoon cinnamon sugar
1/2 teaspoon applewood liquid smoke
1 Granny Smith apple, peeled, cored and chopped into tiny cubes
Kosher salt and coarsely ground black pepper
12 to 16 strips bacon

Steps:

  • In a large bowl, mix the jelly, thyme, cinnamon sugar, liquid smoke, apples, a tiny pinch of salt and several grinds of coarse black pepper. Set aside.
  • Line a baking sheet with nonstick aluminum foil and lay the bacon strips on top. Set the oven to 400 degrees F and place the bacon in the oven as it preheats. Bake until most of the fat is rendered, about 20 minutes. Remove from the oven and use paper towels to blot as much excess fat as possible.
  • Place a wire rack on the baking sheet and lay the bacon back on top. Brush or scoop the glaze over the bacon. Bake until the apple bits are golden and the bacon is crisp, an additional 20 to 30 minutes. Let cool for a few minutes before serving.

Rosemary and thyme in apple pie?! That's just crazy enough to work! This pie is exquisitely aromatic, and the herbs really allow the apples to shine. The crust is the result of years of experiments, and it is flaky, buttery, and delicious. This pie has become the most highly requested item for me to bring to parties, and is always devoured immediately with lots of 'oohs,' 'ahhs,' and 'mms.'

2 ½ cups all-purpose flour
1 tablespoon white sugar
1 teaspoon salt
1 cup unsalted butter, frozen
8 Granny Smith apples - peeled, cored and sliced
½ cup unsalted butter
3 tablespoons all-purpose flour
½ cup white sugar
½ cup packed light brown sugar
¼ cup water
1 ½ teaspoons chopped fresh rosemary
1 teaspoon dried thyme

Steps:

  • Whisk flour, sugar, and salt together in a large bowl. Place in the freezer for 30 minutes.
  • Fill a 1-cup liquid measuring cup with water. Drop in 3 ice cubes; set aside.
  • Remove butter and flour mixture from freezer. Grate butter into the flour mixture quickly. Toss using a spatula or an electric mixer to incorporate the grated butter. Drizzle 1/2 cup ice water into the bowl and mix, adding a little more water at a time until dough begins to form large clumps. Gather and lightly knead clumps of dough together into a mound using your hands.
  • Divide dough in 1/2 and wrap each portion separately in plastic wrap. Refrigerate for at least 1 hour.
  • When ready to bake, roll dough out on a lightly floured surface and place bottom crust into a 9-inch pie pan. Roll out second crust and slice dough into long, 3/4-inch wide strips using a rotary pizza cutter.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Fill bottom pie crust with apples. Cover with dough strips, weaving into a lattice crust; crimp edges to seal. Place pie in the refrigerator.
  • Melt butter in a saucepan over medium heat. Stir in flour to form a paste. Add white sugar, brown sugar, water, rosemary, and thyme. Bring to a boil. Reduce heat quickly and let simmer until rosemary and thyme are very aromatic and sauce has thickened, 5 to 7 minutes.
  • Take pie out of the refrigerator and gently and slowly pour caramelized liquid over the crust, distributing it as evenly as possible so that some liquid gets into all openings of the lattice.
  • Bake in the preheated oven for 15 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C).
  • Continue baking until apples are soft, 35 to 45 minutes. Remove pie from the oven and let cool on a wire rack before serving.

3 ½ pounds apples, cored and diced
3 cups water
7 ½ cups white sugar
½ teaspoon butter
1 (2 ounce) package powdered fruit pectin

Steps:

  • Place apples in a large pot; cover with water. Bring to a boil; reduce heat, cover, and simmer until apples are slightly tender, about 5 minutes. Crush cooked apples and simmer for 5 more minutes.
  • Transfer crushed apples to a sieve or cheesecloth. Let drip into a bowl until all liquid has drained, pressing gently to release all the juice. Measure 5 cups apple juice, adding water if necessary to have exact amount. Stir sugar into juice; add butter to reduce foaming.
  • Bring juice mixture to a rolling boil, stirring constantly. Stir in pectin; boil for exactly 1 minute to dissolve pectin, stirring constantly. Remove from heat. Skim off excess foam with a metal spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Ladle apple jam into the hot, sterilized jars, filling the jars to within 1/8 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand at room temperature for 24 hours. Store in a cool, dark area. Refrigerate opened jellies for up to 3 weeks.

  • Combine the cider, sugar and thyme in a 4-quart microwave-safe bowl, and

6 ounces apple juice
1/4 cup thyme syrup, recipe follows
1 large apple, peeled
4 fresh thyme sprigs
1 cup sugar
1/2 cup water
5 large sprigs fresh thyme

Steps:

  • Special equipment: melon baller
  • Chill the martini glasses.
  • Fill the shaker with ice. Combine the vodka, apple juice, and thyme syrup in a martini shaker. Shake for about 10 seconds. Divide between the 4 chilled martini glasses.
  • Use the melon baller to scoop out small balls of apple. Place 3 balls of apple and 1 sprig of thyme in each glass for garnish. Serve immediately.
  • In a saucepan combine sugar, water, and thyme over medium heat. Bring to a boil, reduce heat and simmer until the sugar has dissolved, about 5 minutes. Take the pan off the heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator.

FRENCH APPLE GALETTES

2 sheets frozen puff pastry, thawed in the refrigerator
6 Granny Smith apples
3/4 cup sugar
6 tablespoons (3/4 stick) cold unsalted butter, small-diced
3/4 cup apricot jelly or warm sieved apricot jam
3 tablespoons Calvados, rum, or water

Steps:

  • Preheat the oven to 400 degrees F. Line 2 sheet pans with parchment paper.
  • Unfold the sheets of puff pastry and cut each sheet into quarters. Place the pastry pieces on the prepared sheet pans and refrigerate while you prepare the apples.
  • Peel the apples and cut them in half through the stems. Remove the stems and cores with a sharp knife and a melon baler. Slice the apples crosswise in 1/4-inch-thick slices. Place overlapping slices of apples diagonally across each piece of pastry and place a slice of apple on each side. Sprinkle the full 3/4 cup of sugar over all the pastry pieces and dot with the butter.
  • Bake for 40 minutes, until the pastry is browned and the edges of the apples start to brown. Rotate the pan once during cooking. If the pastry puffs up in one area, cut a little slit with a knife to let the air out. Don't worry! The apple juices will burn in the pan but the galettes will be fine! When the galettes are done, heat the apricot jelly together with the Calvados and brush the apples and pastry completely with the jelly mixture. Loosen the galettes with a metal spatula so they don't stick to the paper. Allow to cool and serve warm or at room temperature.

1/4 cup confectioners' sugar
1 teaspoon salt
1 1/2 sticks (3/4 cup) cold unsalted butter, cut into bits
1 large egg yolk
2 tablespoons cold water
4 medium Gala or Empire apples (about 2 pounds)
1/4 cup white wine
1/3 cup sugar
1/2 cup white wine
1/2 cup apple jelly
1/4 cup loosely packed fresh thyme sprigs
Garnish: fresh thyme sprigs and 1 tablespoon fresh thyme leaves

Steps:

  • In a bowl stir together flour, confectioners' sugar, and salt. With a pastry blender or fingertips blend in butter until mixture resembles coarse meal. In a small bowl stir together egg yolk and cold water. Add yolk mixture to flour mixture, 1 tablespoon at a time, tossing to incorporate until mixture forms a dough. On a work surface smear dough in several forward motions with heel of hand to develop gluten in flour and make dough easier to work with. Scrape dough together to form a ball and flatten to a 1-inch-thick disk. Chill dough, wrapped in plastic wrap, 30 minutes.
  • Halve and core apples (do not peel) and cut crosswise into 1/4-inch slices. In a large bowl toss apple slices gently with wine.
  • Preheat oven to 400°F.
  • On a lightly floured surface roll out dough to a 15-inch round and transfer to a large baking sheet. Fold in edge 1 inch all around to form a border.
  • Arrange apple slices on pastry round in overlapping concentric circles. Brush apple slices and pastry border with wine remaining in bowl and sprinkle with sugar.
  • Bake galette 45 minutes, or until apples are tender and pastry border is golden. Cool galette on baking sheet on a rack.
  • In a small saucepan simmer wine with jelly and thyme until liquid is reduced by half, about 15 minutes.
  • Remove thyme with a slotted spoon and brush hot glaze generously over apple slices. Garnish galette with thyme sprigs and leaves.
