2 sticks (1 cup) salted butter, plus more for greasing the pan
2 Granny Smith apples
Two 8-ounce cans refrigerated crescent roll dough
1 1/2 cups sugar
1 teaspoon vanilla extract
8 ounces citrus-flavored soda, such as Mountain Dew (two-thirds of a 12-ounce can)
Cinnamon, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch pan.
  • Peel and core the apples, then cut each into 8 slices. Roll each apple slice in a crescent roll piece, then transfer to the prepared pan.
  • Melt the butter in a saucepan, then add the sugar and barely stir. Add the vanilla and stir slightly, then pour the entire mixture over the apples. Pour the citrus soda around the edges of the pan. Sprinkle with cinnamon and bake until golden brown and crispy on top, about 40 minutes.
  • Serve, spooning some of the sweet sauces from the pan over the top.

This is similar to wonton soup but is much quicker when using the Instant Pot® and store-bought frozen wontons. I've used chicken wontons but any protein will work. Great for those nights when you only have the time or energy to slice bok choy and chop ginger and garlic.

1 teaspoon sesame oil
1 teaspoon olive oil
1 tablespoon finely chopped ginger
1 teaspoon finely chopped garlic
10 cups low-sodium chicken broth
1 ½ pounds frozen wontons
1 teaspoon dried parsley
½ teaspoon salt, or more to taste
½ teaspoon freshly ground black pepper
2 cups thinly sliced bok choy
2 tablespoons low-sodium soy sauce (such as Bragg®)
4 green onions, thinly sliced

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Adjust to Low if necessary. Pour in sesame oil and olive oil. Add ginger and garlic to the hot oil; cook until fragrant without browning, about 1 minute. Add chicken broth, wontons, parsley, salt, and pepper. Break apart any wontons that have frozen together. Close and lock the lid.
  • Select Soup function; set timer for 2 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Mix in bok choy and soy sauce and let sit, stirring occasionally, for 3 minutes. Taste and season with additional salt if necessary.
  • Ladle soup into bowls and top with green onions.

These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

1 recipe pastry for double-crust pie
6 large Granny Smith apples, peeled and cored
½ cup butter
¾ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
3 cups water
2 cups white sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
  • On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
  • With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
  • In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
  • Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

1 teaspoon salt
1 cup shortening
1/3 cup cold water
8 medium tart apples, peeled and cored
8 teaspoons butter
9 teaspoons cinnamon sugar, divided
SAUCE:
1-1/2 cups packed brown sugar
1 cup water
1/2 cup butter, cubed

Steps:

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide into 8 portions. Cover and refrigerate at least 30 minutes or until easy to handle., Preheat oven to 350°. Roll each portion of dough between 2 lightly floured sheets of waxed paper into a 7-in. square. Place an apple on each square. Place 1 teaspoon butter and 1 teaspoon cinnamon sugar in the center of each apple., Gently bring up corners of pastry to each center, trimming any excess; pinch edges to seal. If desired, cut out apple leaves and stems from dough scraps; attach to dumplings with water. Place in a greased 13x9-in. baking dish. Sprinkle with remaining cinnamon sugar., In a large saucepan, combine sauce ingredients. Bring just to a boil, stirring until blended. 5 large apples, such as granny smith (cored, peeled, sliced)
2 1/2 cups water
2 cups riesling wine
1/2 cup sugar
2 inches piece cinnamon sticks
1 tablespoon grated lemon zest
1 1/2 tablespoons raspberry jam
3 tablespoons unseasoned fine dry breadcrumbs
1/2 lemon, juice of
2 medium apples, peeled cored grated
1 1/4 cups unseasoned fine dry breadcrumbs
2 tablespoons calvados or 2 tablespoons apple brandy
2 tablespoons sugar
1/4 teaspoon cinnamon
1 tablespoon grated lemon zest
1 large egg, lightly beaten
2 cups dry white wine
1 cup water
1/4 cup sugar

Steps:

  • Combine the sliced apples, water, riesling, sugar, cinnamon stick and lemon zest in a large soup pot.
  • Bring to a boil over high heat, then reduce the heat to low and simmer, covered, till the apples are soft, about 15 minutes.
  • Stir in the raspberry jam, bread crumbs and lemon juice and simmer till the apples are almost mushy, 10 minutes.
  • Remove the soup from the heat and cool slightly.
  • Place the soup in a food processor and pulse several times, but do not puree. Allow the soup to cool, then place in the refrigerator at least 2 hours.
  • To make the dumplings, combine the grated apples, bread crumbs, calvados, sugar, cinnamon, lemon zest, and egg in a large bowl.
  • Stir well to mix, then refrigerate the dumpling mixture for about 15 minutes.
  • in a large enameled saucepan, combine the wine, water and sugar. Bring to a boil, stirring to dissolve the sugar.
  • Reduce the heat to medium low.
  • Using a melon baller, form the dumpling mixture into balls about 1 inch in diameter.
  • Drop the dumplings into the liquid and poach until they rise to the surface, about 3 minutes.
  • Remove the dumplings with a slotted spoon, cool an dadd to the soup.
  • Return the soup to the refrigerator to finish chilling.
  • Serve 3 or 4 dumplings in each bowl of soup.

3/4 cup lard, softened
4 tablespoons unsalted butter, softened
1/2 cup water
6 Granny Smith apples
1 cup brown sugar
4 tablespoons unsalted butter, cut into 12 pieces
Ground cinnamon, for sprinkling
3 cups water
2 cups granulated sugar
2 tablespoons unsalted butter
1 teaspoon vanilla extract

Steps:

  • For the pastry dough: Mix together the flour and salt in a large bowl. Add the lard and butter and mix with your hands until crumbly. Slowly add the water and mix until the dough comes together, then coat with flour to prevent sticking. Refrigerate the dough for a minimum of 2 hours and preferably overnight.
  • Preheat the oven to 375 degrees F. Roll out the dough into a 1/8-inch-thick square on a lightly floured surface, then cut the into six 7-by-7-inch squares.
  • For the apple filling: Peel and core the apples. Place an apple in the center of each dough square. Put 1 piece of butter into the center of each apple. Push some brown sugar down on top of the butter until packed tight. Put a second piece of butter on top of the sugar. Sprinkle cinnamon liberally across the dough and the filled apples. Fold opposite corners of the dough up around each apple, and then turn over and mold the rest of the dough over the apples, being careful not to leave any parts of the apples exposed. Tear off any excess dough on the bottom of each apple.
  • Place the apples in a 9-by-13-inch baking dish.
  • For the dumpling sauce: Combine the water, granulated sugar, butter and vanilla in a small saucepan and bring to a boil over high heat.
  • Ladle 1/2 cup of the dumpling sauce over each dumpling and pour the excess sauce into the baking dish. Bake until the crust is golden brown and the fruit is tender, about 35 minutes. Serve warm.

4 apples - peeled, cored and halved
1 cup white sugar
1 cup water
½ cup butter, melted
2 teaspoons vanilla extract

  • Preheat oven to 350 degrees F (175 degrees C).
  • Butter a 7x11 inch baking pan. Separate biscuit dough into 8 pieces. Flatten each piece of dough into a circle. Wrap one biscuit around each apple half and place, seam side down, in pan.
