4 - chicken thighs
- salt and pepper
3 tablespoon(s) olive oil
8 ounce(s) mushrooms cut into pieces
2 small shallots diced
4 clove(s) garlic minced
5 tablespoon(s) flour
2 can(s) coca cola
1 cup(s) chicken stock
1 - bay leaf
- fresh parsley chopped

Steps:

  • Pat the chicken dry and season with salt and pepper. Place a large skillet on stove over medium high heat. Add the oil. Place the chicken in pan and cook until golden on one side then turn and cook until golden on other side. Remove from pan and set aside.
  • Add the mushrooms and onions to the pan. Saute until they are softened. Add the garlic. Saute one minute. Whisk in the flour and then add the coke and chicken stock. Whisk until smooth. Add the bay leaf.
  • Place the chicken back in the pan and turn heat to medium low and simmer for 25 to 30 minutes until chicken are no longer pink.
  • Serve over noodles, pasta or rice and top with parsley.

4 skinless chicken breasts
1 tbsp plain flour, seasoned
150ml chicken stock (use ½ a cube)
250g pack chestnut mushroom, halved
few thyme sprigs, leaves only
150ml red wine
1 tbsp mild olive oil or vegetable oil

Steps:

  • Toss the chicken in the flour, then tap off the excess. Mix 1 tsp of the excess flour with a little stock and set aside. Heat the oil in a frying pan, then add the chicken, mushrooms and thyme. Cook over a medium-high heat for about 5 mins, turning the chicken breasts over once until golden.
  • Lift the chicken out, then set aside. Pour in the wine and the remaining stock and boil for 5 mins or until reduced by half. Add the flour and stock mix, stirring until the sauce thickens a little. Put the chicken back into the pan, along with any juices from the plate, then simmer for 5 mins or until cooked through and the sauce is glossy. Serve with mash.

4 skinless, boneless chicken breast halves
salt and pepper to taste
2 tablespoons Worcestershire sauce
1 cup ketchup
1 cup cola-flavored carbonated beverage

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the chicken pieces into a 9x13 inch baking dish. Season with salt and pepper. In a medium bowl, mix together the Worcestershire sauce, ketchup and cola. Pour over the chicken. Cover with a lid or aluminum foil.
  • Bake for 50 minutes in the preheated oven, until the chicken is no longer pink.

1 teaspoon butter
1 cup minced onion
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 cup ketchup
1 can Coca-Cola Classic
1 -2 minced jalapeno (optional)

Steps:

  • Melt butter in a medium saucepan over medium high heat and saute the onion until translucent.
  • Add remaining ingredients-watch the coke-it will foam!
  • -mixwell, and bring to a boil.
  • Reduce heat to medium low, stirring frequently-watch it or it will burn-and simmer until thick, around 1 1/2 hours.
  • That's it-great on pork and chicken.
