COCKEREL IN RIESLING MUSHROOM SAUCE WITH RIBBON NOODLES

1 cup white bread flour
3 eggs
1 teaspoon salt
Dash vinegar
Oil, for frying
1 (3 to 4-pound) chicken quartered into 2 halves, breast with wing and 2 thighs
Salt and freshly ground black pepper
1/2 cup all-purpose flour
4 tablespoons butter
2 tablespoons vegetable oil
1 1/2 cups button mushrooms, cleaned and quartered
2 shallots, finely chopped
2 garlic cloves, minced
2 tablespoons cherry brandy
1 cup Riesling wine
1 cup chicken stock
1 sachet d'epices of 8 peppercorns, 1 bay leaf and 6 parsley stems wrapped in cheesecloth
3 1/2 ounces creme fraiche

Steps:

  • Place flour in a mound on a wood surface and make a small well in the middle of the flour. Lightly beat eggs with salt and vinegar. Gradually add egg mixture a little at a time to the flour, combing with a fork to moisten all bits of flour. Knead dough into a cohesive mass. Then continue kneading until smooth and elastic, about 400 strokes. Separate about 1/4 of the dough into a separate ball for frying. Cover each portion of dough with plastic wrap to prevent drying out and let rest for about 20 minutes at room temperature.
  • Season chicken with salt and pepper and dredge in flour. Heat butter and oil in a large rondeau or saute pan, and brown chicken on all sides. Remove chicken to a utility platter, and add mushrooms to pan and saute until golden brown. Then add shallot and garlic and cook until translucent. Add cherry brandy, then de-glaze pan with wine. Add the chicken stock, bring to a boil and reduce to a simmer. Return the chicken parts to the sauce, add the sachet, cover and cook over low heat until chicken is tender, about 40 minutes.
  • While chicken is cooking, roll out dough in pasta machine (1/4 at a time) until it is about 1/16th of an inch thick. Cut the reserved portion for frying into thin strips, 2-inches long. Cut the larger portion into ribbons with a pasta roller or pizza cutter. Fry the smaller reserved portion at 350 degrees F until golden brown and place on paper toweling to drain. Cook larger portion in boiling water until al dente, just a few minutes for fresh pasta, and drain.
  • Gently remove chicken to a platter, strain sauce and return the sauce to the pan. Allow sauce to reduce until it is thick enough to coat the back of a spoon. Finish sauce by removing from heat and whisking in creme fraiche. Season with salt and pepper, as needed.
  • Place boiled pasta on serving plate and top with chicken. Spoon sauce around chicken and top with fried dough.

30 g butter
1 tablespoon olive oil
1 onion (sliced)
2 teaspoons garlic (minced)
250 g mushrooms (sliced or if small cut into 4)
salt and pepper (freshly ground to taste)
1/3 cup flour
800 g chicken thighs (boneless, each cut into 3 pieces)
750 ml riesling wine
1 sprig thyme (big)
2 bay leaves

Steps:

  • Heat butter and olive oil in a wide based pot or saute pan and add the onion and cook over a moderate heat until it is a pale golden brown and then add the garlic and the mushrooms.
  • Cook for another few minutes and season well with the salt and pepper.
  • Place the flour in a plastic bag and season with salt and pepper and then add the chicken pieces and toss the chicken around to coat well and then add the whole lot to the pan.
  • Cook for a few minutes and add the wine and the herbs and bring to the boil and simmer gently for 10 minutes.
  • Allow to sit for 5 minutes and serve - over noodles or pasta was suggested.

2 (2 1/2 lb) roasting chickens (2 1/2 to 3 lbs each, legs tied together with kitchen twine)
1 onion (whole)
6 whole cloves
5 tablespoons unsalted butter
2 shallots, peeled and finely chopped (about 3 tbsps)
1/2 small white onion, peeled and finely chopped (about 3 tbsps)
3 tablespoons all-purpose flour
3 cups riesling wine (or other delicate fruity white wine, sweet is key)
1 cup white pearl onion, peeled
2 cups white button mushrooms (quartered)
salt
fresh ground black pepper
1 cup heavy cream
fresh parsley (Chopped)

Steps:

  • Place the chickens in a large saucepan or casserole and cover with cold water.
  • Pierce the onion with the cloves and place in the pot.
  • Bring to a boil over high heat, reduce the heat to low, and gently simmer until the chickens are fully cooked, about 25 to 30 minutes.
  • Discard the onion, remove the chickens from the pan, and set aside, covered, while finishing the dish.
  • Bring the broth to a boil over high heat and reduce by about three-quarters. (Make sure you end up with at least 3 cups of reduced broth.) Strain and set aside.
  • Melt 3 tablespoons of the butter in a large saucepan over medium-high heat, add the shallots and onion, and sauté until translucent and softened, about 2 minutes.
  • Whisk in the flour to make a roux, add the Riesling and 3 cups of the reduced broth, and bring to a boil.
  • Reduce the heat to medium low and simmer the sauce until is thickened, stirring occasionally, about 3 to 5 minutes.
  • Meanwhile, melt the remaining 2 tablespoons of butter in a large sauté pan over medium-high heat, add the pearl onions and mushrooms, and sauté until the onions are slightly translucent and the mushrooms are slightly softened.
  • Remove the kitchen twine from the chickens and carve them, removing the breast meat, separating the legs and thighs, and reserving the wings for another use.
  • Arrange the chicken pieces on a serving platter, sprinkle with salt and pepper, and spoon the pearl onions and mushrooms overtop.
  • To finish the sauce, stir the heavy cream into the thickened sauce and season with salt and pepper.
  • To serve, pour the sauce over the chicken and garnish with parsley. Serve with spätzle or egg noodles.

1 whole chicken (about 3 1/2 pound), backbone discarded and chicken cut French style into 8 pieces (see cooks' note, below)
1 tablespoon vegetable oil
3 tablespoons unsalted butter, divided
4 medium leeks (white and pale green parts only), finely chopped (2 cups)
2 tablespoons finely chopped shallot
4 medium carrots, halved diagonally
1 cup dry white wine (preferably Alsatian Riesling)
1 1/2 pound small (2-inch) red potatoes
2 tablespoons finely chopped flat-leaf parsley
1/2 cup crème fraîche or heavy cream
Fresh lemon juice to taste

Steps:

  • Preheat oven to 350F with rack in middle.
  • Pat chicken dry and sprinkle with 1 teaspoon salt and a rounded 3/4 teaspoon pepper. Heat oil with 1 tablespoon butter in a wide 3 1/2- to 5-quart heavy ovenproof pot over medium-high heat until foam subsides, then brown chicken in 2 batches, turning once, about 10 minutes total per batch. Transfer to a plate.
  • Meanwhile, wash leeks and pat dry.
  • Pour off fat from pot, then cook leeks, shallot, and 1/4 teaspoon salt in remaining 2 tablespoons butter, covered, over medium-low heat, stirring occasionally, until leeks are pale golden, 5 to 7 minutes. Add chicken, skin sides up, with any juices from plate, carrots, and wine and boil until liquid is reduced by half, 3 to 4 minutes. Cover pot and braise chicken in oven until cooked through, 20 to 25 minutes.
  • While chicken braises, peel potatoes, then generously cover with cold water in a 2- to 3-quart saucepan and add 1 1/2 teaspoons salt. Bring to a boil, then simmer until potatoes are just tender, about 15 minutes. Drain in a colander, then return to saucepan. Add parsley and shake to coat.
  • Stir crème fraîche into chicken mixture and season with salt, pepper, and lemon juice, then add potatoes.

Pork Tenderloin With Riesling Cream Sauce image

I came up with this basic idea one night, and after a little trial and error, got it nailed down to this. I think it's excellent! It makes an impressive entree for a dinner party or holiday meal. It is important that you use a good riesling with this sauce. If you are not familiar with riesling, it is a sweet white wine, the best of which come from Germany. Be aware that a "late harvest" riesling may be too sweet for your tastes in this sauce. You may be able to substitute a Gewürztraminer or viognier, but I've never tried it. If using bacon instead of pancetta, do not use a flavored bacon, like maple - just plain old bacon. If you use milk instead of cream, expect your sauce to break. This isn't a low-fat recipe, but it is delicious!

2 (1 1/2 lb) pork tenderloin, trimmed, about 1-1 . 5 lb each
4 slices pancetta or 4 slices bacon, chopped
1 medium shallot, minced
1 garlic clove, smashed
1/4 cup riesling wine
1 cup cream
2 tablespoons fresh parsley, chopped
1 tablespoon butter, cold
salt and pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a cast iron or other heavy bottomed skillet (NOT non-stick), cook the pancetta or bacon bits over medium-high heat until crispy. Remove with a slotted spoon and reserve, leaving the grease in the pan.
  • Season the pork with salt and pepper. Place the tenderloins into the pan with the bacon grease and sear on all sides. You may have to do this one at a time. Remove from the pan and place into an oven-safe dish. Put the pork in the oven to continue cooking while you prepare the sauce, about 10-15 minutes, or until a thermometer registers 145 degrees F.
  • Remove all but 1 tablespoon of grease from the pan where you cooked the bacon and tenderloins - should be just enough to thinly coat the bottom of the pan. Return the heat to medium and add the smashed garlic, stirring until fragrant, about 30 seconds. Remove the garlic.
  • Add in the shallots and riesling, allowing to simmer until the shallots are soft and the wine is reduced by at least half.
  • Add the cream all at once and reduce the heat to low. You want it to just barely simmer while it reduces.
  • Allow the sauce to simmer until it is thickened. If you place the back of a spoon in the sauce, it should coat it well without dripping.
  • Remove the pan from heat. Season the sauce with just a little salt and pepper, stirring in the fresh parsley and the butter right before serving.
  • Slice the tenderloin and serve over mashed potatoes, topped with a generous spoonful of sauce!
