GREAT GRANDAD'S EGGNOG
Creamy and downright delicious! Naturally, adjust alcohol amounts to suit...but we loved this wonderfully classic recipe as-is.

Steps:
- 1. Separate the eggs. Put the whites in a small mixing bowl and whip until stiff peaks form. Add 1/4 cup sugar to the whites and gently fold to combine.
- 2. Add the remaining 1/2 cup sugar and beat into the yolks until light.
- 3. Mix the whites with the yolk mixture in a punch bowl. Stir in the cream and milk. Add the whiskey and rum. Stir thoroughly.
- 4. Serve cold with grated nutmeg.

Steps:
- Beat the egg whites until soft peaks form. Add 6 tablespoons of the sugar, one spoon at a time, beating until stiff, but not dry. Transfer to a gallon container or punch bowl. Beat the egg yolks and ¾ cup sugar in a large bowl until pale yellow and a slowly dissolving ribbon forms when the beater is lifted. Fold gently into the egg whites. Beat the whipping cream until soft peaks form. Add to the egg mixture and fold together gently. Gently stir in the milk, then gently stir in the bourbon and rum. Cover and refrigerate overnight. Just before serving, gently fold together to recombine. Top with freshly grated nutmeg.

- With an electric mixer, cream butter. Stir in grated cheeses. In separate bowl, mix flour, cayenne and salt. Add cheese mixture and mix well. Knead a few times on lightly floured board, Divide in four.
- Roll one piece out to about 1/8" thick (be sure there is enough flour to release dough from surface). Cut out shapes and place on an ungreased cookie sheet. Shapes may be moons or stars or whatever festive cookie cutters you may have. When cookie sheet is full, brush each shape with egg, then sprinkle with chopped walnuts (or chopped red and green pistachios, for colour).
- Bake in preheated 375° oven for about 8 minutes or until golden brown. Warm them ina moderate oven before serving.
- Note: I'd personally use more than the stingy 1/2 tablespoons chopped nuts.

VICTORIAN EGGNOG
Posting this for ZWT II - England. Recipe from "Bon Appetit Tastes of the World". The Englis used to call this version of the classic Christmas drink sack posset. "Sack" referred to wines imported from Spain. "Posset" from the Middle English - a hot drink made of sweetened, special milk and ale or wine.

Steps:
- Bring cream and half and half to simmer in large saucepan. Whisk yolks and sugar in large bowl to blend. Gradually whisk hot cream mixture into yolk mixture. Return mixture to same saucepan. Stir over medium-low heat until mixture thickens and leaves path on back of spoon when finger is drawn across, about 4 minutes (do not boil). Strain into bowl. Stir in nutmeg. Cool slightly. (Can be made 1 day ahead, Cover and chill. If desired, rewarm over low heat stirring occasionally, before continuing).
- Divide warm or cold mixture amount 6 cups or glasses. Stir 1 tablespoon sherry into each. Sprinkle additional nutmeg over each and serve.

VIRGINIA PLANTATION EGGNOG
Rich, very, very rich. This is an old recipe from the 1700's. Originally, a friend gave me this and swore me to secrecy, but later, I found this same recipe in an old cook book. I would not drink this often, with or without the alcohol! Certainly make sure your guests have a desiginated driver! This is awesome eggnog!

MY GRANDPA'S OLD FASHIONED EGG NOG
My grandpa made this, then my mom took over when he passed, and now I carry the torch. I have had many people tell me they don't like egg nog....until they taste grandpa's. I have had to double and triple the recipe each year so that I could have left overs lol; enjoy!

Not for the younger set. This was very popular in the 1800s and early 1900s around the Missisppi Area. It is printed in the Savoy Book. It was a favorite beverage of William Henry Harrison. No promises on any other type of cider. If you don't know what hard cider is, you don't need to be making this.
