The girls and boys in my junior high home economics classes like this cake because it's not too sweet. I like it because it has high fiber and nutritional value-the apples are used unpeeled. Parents who have apple trees are always glad to donate the apples!

3 large eggs
1 cup vegetable oil
2 cups sugar
1 teaspoon vanilla extract
4 cups grated apples
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 cup raisins
3/4 cup chopped walnuts
NON-SWEET FROSTING:
1 cup butter, cubed
5 tablespoons all-purpose flour
1 cup whole milk
1 cup confectioners' sugar
1 teaspoon vanilla extract
1/2 cup broken walnuts

Steps:

  • Beat eggs and oil together in a bowl until foamy; add sugar and vanilla and continue to beat. Add apples, beating slightly; set aside. Sift together flour, soda, salt, cinnamon and cloves; add raisins and walnuts to flour mixture. Add flour mixture to egg mixture; beat slightly. Bake at 350° in greased 13x9-in. baking pan. Check for doneness after 25 minutes. , To make frosting, melt butter in saucepan; stir in flour until mixture bubbles. Add milk, stirring with wire whisk until mixture thickens. Cool. Add sugar and vanilla to cooked mixture; mix until smooth and blended. Spread on cooled cake; sprinkle with nuts.

A rustic fruit crumble cake with raisins and spice and a crunchy nutty topping - a spin on a classic

140g butter , cut into small pieces, plus extra for the tin
250g self-raising flour
2 tsp mixed spice
140g light muscovado sugar
100g raisin
3 large eggs , beaten
2 apples , peeled, cored and chopped
5 tbsp milk
1 rounded tbsp plain flour
25g butter
25g light muscovado sugar
1 rounded tbsp roughly chopped hazelnuts

Steps:

  • Heat oven to 160C/140C fan/gas 3. Butter and line the base of a 2-litre loaf tin with baking parchment. Tip the flour and spice into a food processor and add the butter. Whizz to make fine crumbs, then mix in the sugar. Tip into a mixing bowl and stir in the raisins, eggs, apples and milk. Mix well until everything is evenly combined, then spoon into the prepared tin and smooth the top.
  • To make the topping, rub the flour, butter and sugar through your fingers to make a rough crumble, then stir in the nuts. Sprinkle evenly over the cake mixture and bake for 50-55 mins, until firm to the touch and a fine skewer inserted into the centre comes out clean. Cool in the tin for 15 mins, then turn out and cool on a wire rack.

1 1/3 cups sugar
1 cup golden raisin
1 1/4 teaspoons ground cinnamon
1 teaspoon ground nutmeg
8 apples, peeled, cored and sliced
4 cups firmly packed brown sugar
4 cups all-purpose flour
1 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 13x9-inch baking dish.
  • In large bowl, combine sugar, raisins, cinnamon and nutmeg.
  • Add apples, tossing gently to coat.
  • Place apples in prepared baking dish.
  • For topping, in large bowl, combine brown sugar and flour.
  • Using a pastry blender, cut in butter until mixture is crumbly.
  • Sprinkle crumb topping evenly over apple mixture.
  • Bake 30-40 minutes, or until apples are tender and crust is golden.

  • Mix first 3 ingredients -- rub into crumbs.
  • Save 1 cup crumbs for top.
  • Mix remaining crumbs with rest of ingredients.

2 cups white sugar
½ cup water
2 eggs, lightly beaten

Steps:

  • Streusel: In a small bowl, combine the flour, brown sugar, and cinnamon. Add the butter and work with your fingers or a fork to form crumbs. Cake: Preheat oven to 350 degrees. Grease a 9 x 9" cake pan. In a medium bowl, combine the flour, baking powder, baking soda, and salt.
