The wonderful taste of apple butter in a very easy to make bread. Your family will love it!

1 ½ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
⅓ cup butter, softened
1 cup sugar
1 egg
1 ¼ cups apple butter
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x4x2-inch loaf pan.
  • Mix flour, baking soda, baking powder, salt, nutmeg, and cloves in a bowl.
  • Beat the butter and sugar with an electric mixer in a separate large bowl until smooth. Add the egg and apple butter; continue beating until smooth. Mix in the flour mixture until just incorporated. Fold in the raisins and walnuts; mixing just enough to evenly combine. Pour into prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

Nonstick cooking spray
1 cup/130 grams all-purpose flour
1/2 cup/60 grams whole-wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon fine sea salt
1/2 cup/120 milliliters vegetable, or other neutral, oil
1/2 cup/100 grams granulated sugar
1/2 cup/110 grams dark brown sugar
2 large eggs, at room temperature
1 1/2 teaspoons vanilla extract
3/4 cup/180 milliliters apple butter
1/4 cup/60 milliliters plain yogurt
Turbinado sugar, as needed, for finishing

Steps:

  • Heat the oven to 350 degrees, and lightly grease a 9-by-5-inch loaf pan with nonstick cooking spray. In a medium bowl, whisk together the all-purpose flour, whole-wheat flour, baking soda, cinnamon, allspice, nutmeg and salt to combine. Set aside.
  • In a large bowl, whisk the oil, sugar and brown sugar until well combined (you may need to switch to a rubber spatula after a bit). Add the eggs one at a time and whisk well after each addition to incorporate. Whisk in the vanilla extract.
  • Add the flour mixture and stir just to combine. Add the apple butter and yogurt and mix well to incorporate. Pour the batter into the prepared loaf pan and spread into an even layer.
  • Sprinkle the surface of the loaf generously with turbinado sugar. Bake until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Let cool for 20 minutes in the pan, then unmold onto a cooling rack to cool completely before slicing and serving.

2 eggs
1 scant cup buttermilk
1 large apple, grated (about 1 cup)
1/2 cup melted butter
1 teaspoon vanilla extract
1 1/3 cup plain, unsweetened bran cereal
1 cup unbleached all purpose flour
1/2 cup oat bran or coarsely pulsed oats, plus more for topping
1/2 cup natural cane sugar
1/3 cup muscavado sugar (or brown sugar), plus more for topping
1/2 cup chopped pecans
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon fresh ground nutmeg
Salted butter, room temperature, for serving

Steps:

  • Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
  • Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
  • While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
  • Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
  • Slice with a serrated knife and serve with butter on the side.
  • Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.

I found this through my electric co-op magazine and boy am I ever glad I did. Truly a nice moist quick bread. The key to this bread is obtaining a dark, rich apple butter - the darker the better for flavor. I used White House Apple Butter which was wonderful and outside of my mom's fresh homemade apple butter it is the best I've tried. I hope you enjoy this recipe as much as my family.

3/4 cup apple butter
2 teaspoons cinnamon
1/2 teaspoon clove
1/2 cup water
1/2 cup canola oil
1 1/4 cups brown sugar
2 large eggs
1 3/4 cups all-purpose flour, sifted
1 teaspoon baking soda
3/4 teaspoon salt

Steps:

  • In a mixing bowl, combine the apple butter, cinnamon and cloves.
  • Whisk in the water, then oil, then brown sugar, then the eggs (not all together). Mix until smooth.
  • Sift together (important so you don't get white lumps in your dark bread), flour, baking soda and salt. Then combine with the apple butter mixture and mix until smooth.
  • Pour into a greased 9-inch loaf pan or 3 to 4 mini-loaf pans.
  • Bake at 350F for 65-70 minutes for the 9-inch pan or 45-50 minutes for the mini-loaves.
  • Let stand for 10-15 minutes to cool slightly before removing from the pans and letting cool completely on a wire rack.

1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon

2 eggs, lightly beaten
1/2 cup sugar (or use less if you prefer)
1/2 cup mashed ripe banana (about 2 small)
1/2 cup apple butter
1/4 cup canola oil
1/4 cup brown sugar, packed
3 tablespoons all-purpose flour
2 tablespoons butter, cold
1/3 cup chopped walnuts or 1/3 cup pecans

Steps:

  • Preheat oven to 350°.
  • Grease and flour bottom and sides of a 9x5 pan only about 1/2 inch up sides of pan and set aside.
  • In a large bowl combine flour, baking powder, cinnamon, baking soda, salt and nutmeg until blended and set aside.
  • In a medium bowl combine eggs, banana, apple butter, sugar and oil and blend.
  • Combine egg mixture to flour mixture, stir just until moistened and pour into prepared pan.
  • Bake at 350° about 45 minutes or until bread tests done with a toothpick.
  • Cool bread in pan for about 5-10 minutes and then remove from pan and cool completely on a wire rack.
  • It's best to refrigerate before serving.
  • *** NOTE: For nut topping, mix sugar and flour together and cut in cold butter with a pastry blender until mixture resembles course crumbs. Stir in nuts and top bread before baking.

I love apples and I love baking with apple butter. I searched zaar looking for a muffin recipe that used both as ingredients but found nothing so I decided to experiment and create my own recipe using the ingredients that I like. This was the end result and I was so pleased with how they turned out that I had to share! You could add 1/4-1/2 cup of nuts or raisins if you'd like but I like them just the way they are. Enjoy!

1 1/4 cups unbleached all-purpose flour
1/4 teaspoon baking soda
1 1/2 teaspoons baking powder

1/2 cup wheat bran (or oat bran)
3/4 cup milk
2 eggs, slightly beaten
1/3 cup apple butter
2 tablespoons oil
1 cup shredded granny smith apple (about 2 small)

Steps:

  • Preheat oven to 375°.
  • Grease a large muffin tin (I use my "Texas" sized muffin pan).
  • In a medium bowl combine flour, baking soda, baking powder, salt, sugar, and cinnamon and mix to blend.
  • In another bowl add wheat bran and milk and blend well.
  • Then to the bran mixture add eggs, apple butter and 2 tbsp oil and mix to blend.
  • Let bran mixture sit 5-10 minutes.
  • Meanwhile, peel, core and shred the apples.
  • Squeeze out any excess moisture from apples with your hands.
  • Add shredded apples to the bran mixture and mix well to blend.
  • Add wheat bran mixture to flour mixture and stir to blend (batter will be thick).
  • Spoon batter into muffin cups evenly.
  • Bake at 375° for 25-30 minutes or until they just begin to brown and test done with a toothpick.
  • Cool muffins in pan on a wire rack 5-10 minutes.
  • Remove muffins from muffin pan and cool completely.
  • *** Preparation time includes preparing the apples. You can make 12 standard size muffins instead of six large but you'll need to reduce baking time to approximately 15-20 minutes or until they test done.

2 cups all-purpose flour (I used half whole wheat flour)
1 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups apple butter (divided)
1/2 cup apple juice
1/4 cup butter, melted
1 egg, beaten
1 cup raisins (optional)
1/2 cup chopped walnuts

Steps:

  • Combine flour, brown sugar, baking powder, baking soda and salt in a large mixing bowl.
  • In a small bowl mix 3/4 cup apple butter, apple juice, butter and egg together. Fold in the raisins and chopped nuts. Add the apple butter mixture to the dry ingredients and blend together. Pour half the mixture in a loaf pan that has been sprayed with cooking spray. Gently spread the reserved 3/4 cup apple butter over the batter. Pour the rest of the batter over the apple butter mixture and spread evenly over the top to cover. Bake at 350 degrees for 55 to 65 minutes or until done.
  • To bake "my mistake loaf" just put all the apple butter in the wet ingredients and blend into the dry ingredients. I cut up dried pineapple pieces and added with the nuts instead of the raisins. Pour the whole batter into the loaf pan and bake as above.
  • This makes a heavy moist bread that is delicious.
  • Any kind of nuts can be used and any kind of dried fruit that your prefer.
  • This can be sugar free using Splenda Brown Sugar blend and Margo's Apple Butter recipe using Splenda.
