I've made this sweet berry bruschetta recipe by toasting the bread on a grill at cookouts, but any way I serve it, I never have any leftovers. The bruschetta is sweet instead of savory as is often expected, and visitors enjoy that change. -Patricia Nieh, Portola Valley, California

10 slices French bread (1/2 inch thick)
Cooking spray
5 teaspoons sugar, divided
6 ounces fat-free cream cheese
1/2 teaspoon almond extract
3/4 cup fresh blackberries
3/4 cup fresh raspberries
1/4 cup slivered almonds, toasted
2 teaspoons confectioners' sugar

Steps:

  • Place bread on an ungreased baking sheet; lightly coat with cooking spray. Sprinkle with 2 teaspoons sugar. Broil 3-4 in. from the heat for 1-2 minutes or until lightly browned. , In a small bowl, combine the cream cheese, extract and remaining sugar. Spread over toasted bread. Top with berries and almonds; dust with confectioners' sugar. Serve immediately.

1 French bread baguette (8 ounces), cut into 24 slices
1/4 cup butter, melted
3 tablespoons sugar
1/2 teaspoon ground cinnamon
1 package (8 ounces) cream cheese, softened
1/4 cup confectioners' sugar
2 teaspoons lemon juice
1 teaspoon grated lemon zest
2-1/2 cups fresh strawberries, chopped
1/3 cup slivered almonds, toasted

Steps:

  • Preheat oven to 375°. Place bread on an ungreased baking sheet; brush with butter. Combine sugar and cinnamon; sprinkle over bread. Bake 4-5 minutes on each side or until lightly crisp., In a small bowl, beat cream cheese, confectioners' sugar, and lemon juice and zest until blended; spread over toast. Top with strawberries; sprinkle with almonds.

I always serve this as a starter at dinner parties. Everyone loves it because it is so light and tasty.

1 French baguette, cut into 1/2 inch thick circles
8 plum tomatoes, diced
1 cup chopped fresh basil
½ red onion, minced
freshly ground black pepper
3 cloves garlic

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine tomato, basil, and red onion in a small mixing bowl; stir well. Season with freshly ground black pepper. Set aside.
  • Arrange bread on a baking sheet. Place in oven, and bake until well toasted, approximately 5 minutes.
  • Remove bread from oven, and transfer to a large serving platter. Let bread cool 3 to 5 minutes. Rub garlic into the top of each slice of toast; the toast should glisten with the garlic. Spoon the tomato mixture generously onto each slice, and serve.

Who ever invented Nutella I think deserves a Nobel Prize. I usually make this recipe with bananas but strawberries is a good substitution.

6 slices French bread
1/2 cup nutella
3 tablespoons hazelnuts, chopped
3 tablespoons brown sugar
2 bananas, sliced
3 tablespoons butter
1 tablespoon unsweetened cocoa powder
dark chocolate curls
white chocolate curls

Steps:

  • Toast bread just a little bit. Spread them with Nutella.
  • Combine nuts and sugar.
  • Layer bananas on top of Nutella.
  • Brush bananas with melted butter and top with sugar nut mix.
  • Broil for 30 seconds.
  • Garnish with cocoa powder and chocolate curls.

10 slices French bread baguette (1/4 inch thick)
1/2 cup chopped dried apricots
1/2 cup apricot nectar
1 teaspoon grated lemon peel
1/4 cup reduced-fat ricotta cheese
1/4 cup apricot preserves
2 tablespoons sliced almonds, toasted

Steps:

  • Place bread on an ungreased baking sheet. Bake at 350° for until toasted, 4-6 minutes. Cool., Meanwhile, in a small saucepan, combine apricots, nectar and lemon peel. Bring to a boil. Reduce heat; simmer, uncovered, for 2 minutes. Remove from the heat; cool to room temperature. Strain and discard liquid., Combine cheese and preserves; spread over toasted bread. Top with apricot mixture. Sprinkle with almonds.
