MEAT LOAF
Nothing says classic comfort like Ina Garten's Meatloaf recipe from Barefoot Contessa on Food Network.

- Preheat the oven to 325 degrees F.
- Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Recipe video above. Meatloaf is so much more than a giant hunk of ground beef in a loaf shape. It should ooze with flavour, be moist and tender yet not crumble apart when sliced. And the caramelised glaze is the crowning glory!

- Preheat oven to 180C/350F. Oil or spray a loaf tin. (Note 3)
- Glaze: Mix together in a small bowl. Set aside.
- Meatloaf: Place breadcrumbs in a very large bowl. Grate over onion. Mix so the breadcrumbs are all wet. (Note 4)
- Add remaining ingredients. Mix well using your hands. Form into a loaf shape, pinching together then smoothing over creases and cracks (helps prevent cracks during baking).
- Transfer into loaf tin. Brush generously with glaze, using about 1/2.
- Bake for 45 minutes. Remove from oven and brush with most of the remaining glaze. If there is excess fat pooling, scoop/pour it off.
- Bake for a further 30 minutes. Remove from oven.
- Stand for 10 minutes before turning out and cutting into thick slices. You will probably get a bit of crumbling just on the edges of the first couple of slices, this is normal and indicative of the tenderness of the meatloaf (zero crumble indicates firm packed harder meatloaf which isn't as enjoyable!).
- Ideal served with a dollop of ketchup, creamy mashed potatoes and steamed vegetables.

- Preheat oven to 350°. Tear bread into 2-inch pieces; place in a blender. Cover and pulse to form coarse crumbs; transfer to a large bowl. Stir in egg, milk, cheese, onion, carrot, salt and pepper. Add beef; mix lightly but thoroughly. Transfer to a greased 9x5-in. loaf pan. , In a small bowl, mix glaze ingredients; spread over loaf. Bake 60-75 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Freeze option: Bake meat loaf without glaze. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw meat loaf in refrigerator overnight. Prepare and spread glaze over top; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

ANOTHER RECIPE FOR A LOAF OF MEAT
At the time of this posting there are 1704 recipes for meatloaf. Eh, what the hey I'll throw mine into the mix too. I made my first meatloaf about three years ago and found the basic recipe on epicurious. I made a few changes, served it up, and everybody loved it. We haven't tried another loaf of meat recipe since. This doesn't include a sauce - that's because I don't like sauce on my meatloaf. If I am feeling adventurous I will get out the ketchup.

- Heat oven to 375 degrees.
- In a large bowl mix all ingredients together. It's easiest to use your hands!
- Shape into a loaf and place into a loaf pan or in the middle of a 13x9 pan (my preferred method).
- Bake for 1 hour.

LOAF OF MEAT
Steps:
- Preheat oven to 400 degrees F.
- Spread a large sheet of aluminum foil on your counter. Crack egg into center of foil and put all meat on top of egg. Work the egg into the meat and the meats together using your hands until well blended. Flatten out meat. Cover mixture with all remaining ingredients.
- Work all the ingredients together with your hands until well blended, do not rush. Flatten out resulting mixture into what resembles a very large hamburger patty, making sure that it is fairly uniform, 1 1/2 inches thick at most. Separate coating ingredients into 2 equal parts.
- First sprinkle garlic powder, salt, paprika, and sugar over the top of the meat patty/loaf. Flip the loaf over and repeat coating on the other side. Place the loaf on a baker's rack over the top of a casserole dish so the extra fat can drip away from the loaf as it cooks. Put the loaf in the center of the rack and cook for 1 hour. Check by cutting the loaf in half to make sure the center is fully cooked, 1 hour usually does it, but if not then cut out two thick pieces from the center and just put those 2 back into the oven for 10 or 15 more minutes.
CLASSIC MEATLOAF
Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

- Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
- Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
- Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
- Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.
