These Crispy oven-roasted turkey wings are coated in a mouthwatering homemade dry rub. This is a tastier way to enjoy your turkey, without the oily mess.

3 lb Turkey wings
1/2 Tsp Cumin
1 Tsp Cayenne
1/2 Tbsp Paprika
1/2 Tbsp Garlic powder
1/2 Tbsp Onion Powder
1/2 Tbsp Oregano
1/2 Tbsp Thyme
1/2 tsp salt
1 tsp Black pepper
1 tsp white pepper
3 Tbsp Oil

Steps:

  • Heat oven to 400°F with racks in the middle position.
  • Wash the wings well, and use a paper towel to pat them dry and place the wings in a large bowl.
  • In a small bowl, whisk together the seasoning and spices.
  • Add the oil and sprinkle the seasonings on the wings and massage all over the wings.
  • Line a rimmed baking sheet with parchment paper or aluminum foil. Then, place a wire rack on top of the baking sheet.
  • Arrange the wings on the rack.
  • Place in the oven and bake for 1 hour to 1 hour 15 minutes or till desired crispiness. Remove from the oven and serve.

2 -3 cups water
1 (8 ounce) jar apricot preserves
2 teaspoons soy sauce
1 1/2 teaspoons dry mustard

  • Place turkey in a large pot with water.
  • Cook about 1-1/2 hours.
  • Refrigerate till ready to use.
  • Combine glaze ingredients.
  • Preheat grill.

4 turkey drumsticks (about 7 pounds 11 ounces)
Kosher salt and freshly ground black pepper
2 teaspoons sugar
1 stick unsalted butter, softened
1/2 teaspoon ground cumin
10 sprigs fresh thyme, leaves stripped (about 1 tablespoon leaves)
2 cups pomegranate molasses

Steps:

  • Pat the drumsticks completely dry and place on a baking sheet fitted with a cooling rack. Mix 1/4 cup salt, a few grinds black pepper and the sugar in a small bowl, then rub the mixture all over the drumsticks. Refrigerate, uncovered, for 4 hours and up to overnight. Rinse the legs and pat them completely dry.
  • Preheat the oven to 350 degrees F.
  • Mix the butter with the cumin, thyme, 1/2 teaspoon salt and a few grinds of black pepper and rub the mixture all over the drumsticks, getting underneath the skin if you can. Brush the drumsticks all over with the pomegranate molasses. Add 1 cup water to the bottom of the baking sheet and tent the sheet with foil. Bake for 1 hour and 30 minutes.
  • Remove the foil from the pan and brush the turkey legs all over with the pomegranate molasses. Continue baking for 30 minutes, uncovered, then brush one last time. Bake until the skin is crispy and the turkey has reached 165 degrees F (avoiding bone), about 30 minutes more. Brush a final time with the molasses (be sure to use a fresh bowl of molasses and a clean brush to avoid cross-contamination with raw turkey juices) and let rest for 10 minutes. Slice the turkey and serve with the remaining pomegranate molasses on the side.

4 lbs turkey wings (2 kg, Note 1)
2 tablespoons olive oil
1/2 teaspoon fine sea salt
1/4 teaspoon ground black pepper
1 tablespoon dry rub of choice (Note 2)
1 cup chicken stock (250 ml, Note 3)

Steps:

  • Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
  • Separate the turkey wings at the joint if they are not already divided. Cut the skin and meat around the joint to reveal it slightly. Grab the wing with both hands and break it at the joint. The two parts will still be attached here and there. Retake the knife and cut around to release them completely.
  • Season: Place the wing sections into a large (deeper) roasting tin. Rub them well with olive oil. Sprinkle with salt, pepper, and dry rub, and use your hands to coat them completely with the spices.
  • Bake covered: Pour the hot stock into the tin around the wings so that the spices are not washed away. Cover the dish with aluminum foil. Bake for 1 hour.
  • Bake uncovered: Remove the foil and continue roasting for 45 minutes or until the wings are cooked through and the skin is crispy.
  • Check internal temperature: If the wings are larger, prolong the cooking time until the turkey's internal temperature is 74 degrees Celsius/ 165 degrees Fahrenheit. Check that with a meat thermometer or by cutting into the thickest part of a wing, the meat should be soft, and the juices should run clear.

1 (2 liter) bottle lemon-lime flavored carbonated beverage
2 tablespoons sugar
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 tablespoon black pepper
1 large sweet onion, sliced

2 tablespoons honey
1 tablespoon steak seasoning

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).

2 turkey wings
2 turkey drumsticks
4 turkey neck (optional but definitely worth trying)
3 tablespoons butter, melted

1/4 cup barbecue sauce, your favorite (optional)

Steps:

  • Preheat oven to 250F (low). Heat 1 tbsp butter and the olive oil in a large ovenproof skillet (or transfer to 9x13 after browning) over medium high heat.
  • Add wings and drumsticks only. Sear outside to brown, turning as needed, about 5 minutes.
  • Add necks so that all the meat is single layer in the pan. Season well with remaining butter, salt, and black pepper. (Brush with BBQ sauce now if using).
  • Cover tightly with lid or aluminum foil and bake for about 3 1/2 hours (4 hrs if using legs).
  • Carefully remove lid (watch for steam). Enjoy.

3 tablespoons butter
1 large red onion, chopped finely
3 garlic cloves, crushed
1 tablespoon chili powder
2/3 cup ketchup
1/3 cup brown sugar
1 tablespoon lemon juice
1/2 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon pepper
1/4 teaspoon Tabasco sauce
4 (1 1/2 lb) turkey wings

Steps:

  • In saucepan, melt butter. Add onion and garlic and cook until onion is soft.
  • Stir in chili powder and cook one minute.
  • Add ketchup, brown sugar, lemon juice, salt basil, pepper and Tabasco. Stirring constantly, bring sauce to a simmer.
  • Remove from heat; set aside.
  • Place turkey pieces in large roasting pan. Pour sauce evenly over pieces. Cover with foil and bake at 350°F for two hours.
  • Remove foil and continue baking for 20 minutes.

1 quart buttermilk
2 Tbsp. Diamond Crystal or 1 Tbsp. plus ½ tsp. Morton kosher salt
2 tsp. freshly ground black pepper
4 turkey wings (about 3 lb.), flats and drumettes separated
1 14-oz. can jellied cranberry sauce
⅔ cup fresh orange juice
3 Tbsp. soy sauce
2 Tbsp. Diamond Crystal or 1 Tbsp. plus ½ tsp. Morton kosher salt, plus more
Vegetable oil (for frying; about 12 cups)
1½ cups all-purpose flour
2 tsp. freshly ground black pepper
Coarsely chopped parsley (for serving)
A deep-fry thermometer

Steps:

  • Stir buttermilk, salt, and pepper in a large bowl to combine. Add turkey wings to buttermilk brine (make sure they are submerged). Cover and chill at least 4 hours and up to 12 hours.
  • Cook cranberry sauce, orange juice, and soy sauce in a small saucepan over medium heat, breaking up cranberry sauce with a whisk, until cranberry sauce is melted and mixture is reduced slightly, 8-10 minutes. Season cranberry glaze with salt and let cool.
  • Fit a medium Dutch oven or other heavy pot with thermometer. Pour in oil to come 3" up sides. Heat over medium-high until thermometer registers 325°. Line a rimmed baking sheet with paper towels; set a wire rack inside baking sheet.
  • Whisk flour, pepper, and 2 Tbsp. Diamond Crystal or 1 Tbsp. plus ½ tsp. Morton kosher salt in a large shallow bowl.
  • Using tongs, remove wings from brine, letting excess drip back into bowl, and place on a large plate. Spoon 3 Tbsp. brine into flour mixture and rub in with your fingers until mixture is the texture of coarse meal with some larger pieces; discard remaining brine.
  • Working one at a time, dredge wings in flour mixture, turning to coat completely and pressing to adhere. Shake off excess and transfer wings to another large plate or baking sheet.
  • Carefully slide wings into pot and fry, undisturbed, adjusting heat as needed to maintain temperature, until deep golden brown and crisp underneath, 6-8 minutes. Turn over and fry until deep golden brown on the other side and cooked through (an instant-read thermometer inserted into each piece should register 165°), about 4 minutes. Using a slotted spoon, transfer to prepared rack and let cool slightly.
  • Using tongs, dip wings in cranberry glaze, turning to coat, then arrange on a platter. Sprinkle parsley over.

  • Ingredient amounts are any amount you wish to use.
  • This is a method more than a recipe since the amounts you use will depend upon how many you are serving and whether you want to have turkey to freeze for future casseroles/salads.
  • Generally speaking, roast 6 legs/wings at a time, usually enough for supper and lots left for freezing Ask your butcher to cut the turkey legs crosswise for you, dividing each one of them into three pieces, a bony part at the bottom which is saved for broth making and two equal portions from the fleshy part of the leg.
  • Place the fleshy parts of the legs in an uncovered roaster, and bake at 375 degrees for 1 hour.
  • Sprinkle the legs with sage, salt and pepper, add water to roaster, cover and bake at 325 degrees for 1 hour.
  • Remove the roaster from the oven, add the potatoes, onions and carrots, sprinkle them with salt and pepper, cover roaster and roast for another hour or until veggies are tender.
  • (Those troublesome tendons in the turkey legs which cause so much trouble are very easy to remove after the meat is tender.) Serve the turkey and veggies, counting exchanges for the portion used.
  • After the unused turkey is cool enough to handle, remove the meat from the bones and freeze in portions to use for future casseroles or salads.
  • Calculate the exchanges used according the the amount used.
  • Low sodium diets- omit salt.
