ANGEL HAIR PASTA W/CREAMY MUSHROOM SAUCE
This is a yummy meatless dish that is so creamy you will not miss the meat! I got in online several years ago. It turns out perfect every time. I have used low fat milk, cream cheese and butter with great results.

Steps:
- 1. Cook pasta according to package directions, drain.
- 2. Meanwhile, for sauce, in a med. saucepan cook the mushrooms and onion in the butter till they are tender.
- 3. Stir in the cream cheese (I have used the low-fat and it tasted just as good) and salt and pepper.
- 4. cook and stir over low heat till cheese is melted.
- 5. gradually stir in the milk and chives; heat through.
- 6. pour sauce over pasta. toss to coat and serve hot.
SHRIMP AND MUSHROOM ANGEL HAIR PASTA

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse under cold water.
- In a large skillet, melt 1 tablespoon butter over medium heat; saute mushrooms until soft. Season with salt to taste; set aside.
- In a large skillet, melt 2 tablespoons butter over medium-low heat; cook shrimp for a few minutes. Season with salt to taste; set aside.
- In a large skillet, melt 1 tablespoon butter over medium heat; saute shallots for a few minutes. Pour in port wine, white wine and cream; allow to cook over medium-low heat until it thickens.
- Stir in mushrooms, shrimp, garlic, salt, sugar and ground white pepper; toss with pasta and serve.

DELICIOUS ANGEL HAIR PASTA
Angel hair pasta cooked and served with essentially a hot pasta salad dressing and cheese. I came up with this recipe as I could not find anything to eat, so I went through my spice cabinet and refrigerator, found these ingredients and threw them together. Serve with fresh chopped tomato.

- Saute garlic and onion in olive oil over medium heat; add mushrooms as the aroma develops. Add chicken stock and wine, and cook until mixture is reduced to 1/2 volume. Blend in cream, and reduce to desired thickness. Season with salt and pepper to taste.

SAVORY SEA SCALLOPS AND ANGEL HAIR PASTA

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
- Melt butter in a skillet over medium heat. Stir in the garlic and cook just until fragrant and softened, about 1 minute. Slice any scallops over 3/4-inch thick in half so they'll cook evenly; stir scallops, basil, and parsley into the skillet. Cook and gently stir just until scallops feel slightly firm when pressed with a finger, 2 to 3 minutes. Scallops will become tough and chewy if overcooked. - Grate yellow zest from lemons, being careful not to include any bitter white pith.
- In a small bowl, combine lemon zest, garlic and parsley.
- Set gremolata aside.
