TRIPLE-SEED WHEAT BREAD



Triple-Seed Wheat Bread image

Poppy, sesame and fennel seed create the character for a homemade wheat bread loaf.

1 1/2 to 2 cups Gold Medal™ all-purpose flour
2 tablespoons sugar
1 1/2 teaspoons salt
1 1/2 teaspoons poppy seed
1 1/2 teaspoons sesame seed
1 teaspoon fennel seed
1 package regular active or fast-acting dry yeast
1 cup water
2 tablespoons butter or margarine, softened
1 1/2 to 2 cups Gold Medal™ whole wheat flour
1 egg white, beaten
1 teaspoon poppy seed
1 teaspoon sesame seed
1 teaspoon fennel seed

Steps:

  • In large bowl, mix 1 1/2 cups of the all-purpose flour, the sugar, salt, 1 1/2 teaspoons poppy seed, 1 1/2 teaspoons sesame seed, 1 teaspoon fennel seed and the yeast. In 1-quart saucepan, heat water and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in remaining all-purpose flour and enough of the whole wheat flour to make dough easy to handle.
  • Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
  • Grease large cookie sheet with shortening or cooking spray. Roll dough into rope, about 20 inches long. Place on cookie sheet. Curl each end of rope in the opposite direction to form a coiled "S" shape. Cover; let rise in warm place 30 to 40 minutes or until almost double.
  • Heat oven to 375°F. Brush egg white over dough; sprinkle with 1 teaspoon each poppy seed, sesame seed and fennel seed. Bake 20 to 25 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

When I think of Gramma's kitchen, this bread comes to mind. It smells wonderful and is heavenly as toast, especially with homemade applesauce spread on top! Pungent fennel seeds and plump sweet raisins will make this a favorite at your house.

2 (.25 ounce) packages instant yeast
1 cup lukewarm water
1 quart warm water
1 tablespoon salt
1 teaspoon ground ginger
2 tablespoons white sugar
½ cup fennel seed
⅓ cup unsulfured molasses
1 tablespoon melted butter
2 cups rye flour
1 ½ cups golden raisins
9 cups bread flour

Steps:

  • In a small bowl, dissolve the yeast in 1 cup of lukewarm water. Let stand until foamy, about 10 minutes.
  • In a large bowl, stir together the quart of warm water, salt, ginger, sugar, fennel, molasses, and melted butter. Mix in the yeast slurry and rye flour, breaking up any lumps of flour with a whisk. Stir in raisins. Work in the bread flour 1/2 cup at a time, until the dough becomes stiff.
  • Then, turn it out onto a floured surface and knead in as much of the remaining flour as necessary to make a stiff but workable dough. Knead for an additional 10 minutes to develop the gluten. Place dough into a greased bowl, and turn to coat. Cover and let rise until double, about 1 hour. Punch down the dough and let it rise again until double.
  • Remove dough from bowl, and divide into 4 equal pieces. press out air bubbles, and roll dough into loaves. Place the loaves into four 8x4 inch well greased loaf pans. Let rise in a warm place until doubled in size.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake the loaves for 40 to 45 minutes, or until the tops are nicely browned, and the loaves sound hollow when tapped on the bottom.

Hearty bread goes great with soup and stew. Recipe source Bon Appetit (January 1982). Prep time includes 3 rises.

1/3 cup molasses
1/4 cup Crisco or 1/4 cup vegetable shortening
2 teaspoons salt
2 cups hot water
4 cups white flour
4 cups whole wheat flour
1 cake yeast, dissolved in
1/2 cup warm water (or use 1 envelop yeast disolved in 1/2 cup warm water)
1 1/2 teaspoons fennel seeds, crushed

Steps:

  • Grease large bowl and set aside.
  • Combine first 3 ingredients (molasses-salt) in large bowl.
  • Add hot water and beat with an electric mixer until well blended.
  • Add 2 cups white flour and 4 cups whole wheat flour, blending at medium speed or stirring with a wooden spoon until well blended.
  • Add dissolved yeast and fennel.
  • Stir in enough remaining white flour to make a stiff dough.
  • Gather dough into a ball and transfer to floured bread board and knead for several minutes.
  • Gather into ball and put in prepared greased bowl, turning to coat both sides of ball.
  • Cover with plastic wrap or damp towel and let rise in draft-free area (I use an unheated microwave) for about 2 hours or until doubled.
  • Punch dough down and reshape into ball.
  • Let rise again until double (1 hour).
  • Grease 12-cup bundt pan and set aside.
  • Turn dough onto floured bread board and roll into a cylinder (24 inches long).
  • Put cylinder in prepared pan, pinching ends together to seal.
  • Let rise for 30 minutes.
  • Preheat oven to 375- degree oven.
  • Bake loaf for 1 hour or unti lightly browned.
  • Let cool on rack before slicing.

SPICY FENNEL BREAD

The smell of this spicy fennel bread is still lingering in the house making me feel so cozy! A few years ago, a breakfast spot opened up downtown that started making spicy fennel bagels. As an avid everything bagel lover, I was not sure at first but was quickly convinced to give it a try. Oh my goodness, was I happily surprised. The spice given off by the fennel was perfection melted into the bagel. A bit later I moved and craved these bagels so I decided to make my own version, spicy fennel bread.

1 ½ cups water, at room temperature
½ teaspoon active dry yeast
1 pinch white sugar
3 cups all-purpose flour
2 teaspoons fennel seeds
1 ½ teaspoons salt
1 teaspoon red pepper flakes
½ teaspoon minced onion
½ teaspoon minced garlic

Steps:

  • Combine water, yeast, and sugar in a measuring cup. Mix well.
  • Combine flour, fennel seeds, salt, red pepper flakes, onion, and garlic in a large bowl. Mix well until combined and any flour clumps are broken up. Slowly pour in the yeast-water mixture and stir into the flour.
  • Knead the bread by hand until dough is well combined and you have an even consistency. Transfer to an oiled bowl, cover with plastic wrap, and let rest on the countertop, 10 to 14 hours.
  • Remove dough onto the counter and knead once more. Let rise, 30 minutes to 1 hour.
  • While bread rises, preheat the oven to 450 degrees F (230 degrees C). Sprinkle the bottom of an oven-safe Dutch oven with flour, cover with the lid, and place in the oven while it preheats.
  • Remove the Dutch oven and carefully place the dough in the pot; cover with the lid.
  • Bake in the preheated oven for 30 minutes. Remove the lid and continue to bake until golden, about 30 minutes more. Remove from the oven and place on a rack to cool.

1 tablespoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¾ cup white sugar
1 tablespoon fennel seed
2 eggs, beaten
1 ¾ cups buttermilk
2 teaspoons melted butter
3 tablespoons butter, chilled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10 inch round cake pan.
  • In a large bowl, stir together the flour, baking powder, baking soda, salt, sugar, and fennel seed. In another bowl, stir together the eggs, buttermilk, and melted butter. Stir the wet ingredients into the flour mixture, until just blended using a large spoon. Spoon the batter into the prepared pan. Dot with the 3 tablespoons of chilled butter.
  • Bake for about 1 hour in the preheated oven, or until puffed and golden. Cut into wedges and serve warm.

AROMA BREAD WITH CORIANDER AND FENNEL

3 cups whole grain spelt flour (12 ounces)
1 cup whole grain rye flour (3 3/4 ounces)
1/2 cup coarse or medium stone-ground whole grain cornmeal (2 ounces)
1/2 cup sunflower seeds
1/4 cup flax or sesame seeds
2 tablespoons aroma spice blend (see below)
1 1/2 teaspoons fine sea salt
1/4 teaspoon rapid-rise or instant yeast
1/2 cup whole wheat, rye, Kamut, or spelt berries, soaked overnight and drained (optional)
2 cups cold water
Cornmeal, for sprinkling
Aroma Spice Blend
6 tablespoons whole coriander seeds
3 tablespoons fennel
3 tablespoons caraway seeds

Steps:

  • 1 To prepare the dough, start at least 12 hours ahead. Whisk together all the ingredients except the whole grain berries and the water in a large bowl. Scatter the grain berries on top and add almost all the water. Stir with a dough whisk or a wooden spoon until the flour is incorporated. The dough should be wet and sticky to the touch, like firm oatmeal; otherwise, add a bit more water. But don't worry too much about the liquid-to-flour ratio, as this is a forgiving dough. Cover loosely with plastic wrap and let sit at room temperature to ferment for at least 12 hours and up to 18 hours.
  • 2 The next day, finish the bread. Sprinkle a linen or cotton kitchen towel (not terry cloth) with cornmeal and generously flour your work surface. Using a bench scraper or a rubber spatula, scrape the stringy, bubbly dough onto the work surface. Using floured hands, fold it exactly 4 times, always toward the center - from the right and from the left, as well as from the top and the bottom. Turn the loaf upside down so the fold is at the bottom, and set it on the kitchen towel. Fold the towel over the loaf to cover, and let sit for about 1 hour.
  • 3 After about 30 minutes, position a rack in the bottom third of the oven and preheat to 475°F. Place a 4 1/2- to 5 1/2-quart cast-iron pot or Dutch oven with its lid in the center of the rack. After about 1 hour, your loaf should have nicely risen. (When you press it with your finger about 1/4 inch deep, the dimple should remain; if not, wait 15 more minutes.) But again, don't worry too much - I have sometimes been less than precise and still succeeded.
  • 4 Using thick pot holders, carefully remove the cast-iron pot from the oven and place it on a couple of folded kitchen towels (to avoid cracking); uncover. Unwrap the dough, sprinkle with a bit more cornmeal, and invert directly from the kitchen towel into the pot, seam side up (it might look a bit wiggly; that's normal). If the dough doesn't drop into the center, shake the pot once or twice (use caution, it is hot!).
  • 5 Cover with the lid and bake for 30 minutes. Uncover and bake until the loaf is nicely browned and an instant-read thermometer inserted into the center registers 200°F, 20 to 25 minutes. Using thick pot holders, remove the loaf from the cast-iron pot and transfer to a wire rack. If you can resist, allow to cool completely, about 3 hours, before cutting the loaf with a sharp serrated knife. And a sharp knife it must be - this is a German-style bread, after all.

1 c whole wheat flour
2 tsp fennel seed;crushed
1 1/3 c water
2 Tbsp butter

Steps:

  • 1. Here is the rest of the ingredients; 1 egg; 3/4 cup shredded Swiss Cheese 1 teaspoon of milk. Combine the contents of the roll mix and yeast packets with the whole wheat flour and 1 1/2 teaspoons of fennel seed.
  • 2. In a saucepan heat water and butter and add to the flour mixture and beat till moistened.Add egg and beat till blended.
  • 3. Knead in cheese until dough is smooth and elastic about 4-6 minutes. Pat dough into greased square baking dish and cover and let rise in a warm place till doubled about 25 minutes. Brush with milk and sprinkle remaining fennel seed. Bake 350 degrees for 30-35 minutes till golden brown.
