TURKEY QUESADILLA

2 flour tortillas
2 tablespoons cranberry sauce
3 tablespoons grated Jack or Cheddar
2 tablespoons leftover stuffing
2 tablespoons cooked and chopped green beans
3 tablespoons chopped cooked turkey
1 teaspoon chopped jalapeno peppers
Vegetable oil cooking spray

Steps:

  • Place 2 tortillas on your board. Spread 1 with cranberry sauce and set aside. Sprinkle the cheese over the other one and crumble the stuffing on top. Add the green beans, turkey, and jalapeno peppers. Pick up the first tortilla and place it cranberry side down onto the filled one. Press gently but firmly to keep the quesadilla together.
  • Spray a nonstick skillet with cooking spray and put it over medium heat. Place the quesadilla in the skillet and cook until the bottom is lightly browned and the cheese is melted, about 2 minutes. Flip the quesadilla and cook it on the other side for another 2 minutes. Slide it onto a cutting board, cut it into wedges, and serve.

Angel and Brenda's Spanish Tortilla image

Number Of Ingredients 12

2 small sweet potatoes or yams, peeled and cut into 1/4-inch thick slices
2 small white potatoes, peeled and cut into 1/2-inch thick slices
8 large eggs
6 sun-dried tomatoes, chopped
1 small hot pepper, chopped
2 tablespoons chopped fresh basil leaves
Kosher salt
Freshly ground black pepper
Vegetable oil cooking spray
1 medium onion, chopped
10 white mushrooms, sliced
1 garlic clove, finely chopped

Steps:

  • Heat the oven to 375 degrees F.
  • Put the sweet potatoes and potatoes in a medium pot, cover them with water, and bring to a boil over high heat. Cook until they are just tender, 5 to 10 minutes, and drain well.
  • While the potatoes are cooking, whisk the eggs together in a large bowl. Add the sun-dried tomatoes, hot pepper, and basil. Season well with salt and pepper.
  • Generously spray a large, oven-proof skillet with cooking spray and put it over medium-high heat. Add the onions, mushrooms, and garlic, season with salt and pepper, and cook until the vegetables are soft and just beginning to brown, about 8 minutes. Scrape them into the egg mixture.
  • Spray the pan again with the cooking spray and add the drained sweet potatoes and potatoes in an even layer. Cook over medium-high heat until they start to brown, about 5 minutes. Add them to the eggs and mix well.
  • Spray the pan again and put it over low heat. Add the egg mixture and spread it out evenly. Cook until the bottom begins to set, about 5 minutes. Use a heatproof spatula to loosen the edge of the tortilla as it cooks on the stove top. Put the pan into the oven and cook until the top is puffed, set, and golden brown, about 8 to 10 minutes.
  • Remove the tortilla from the oven and let it rest for 5 minutes. Place a large plate upside down on top of the tortilla. Using a potholder, with e hand on the handle of the pan and the other on the bottom of the plate turn over the pan and plate so that the tortilla is now on the plate. Slice and serve.

1 1/2 pounds russet potatoes (about 2 medium)
Extra-virgin olive oil, for frying (about 4 cups), *See Cook's Note
2 medium onions, thinly sliced (1 1/2 pounds)
4 teaspoons kosher salt
10 large eggs
Serving suggestions: sliced chorizo, roasted pequillo peppers, or crumbled goat cheese or Sofrito, recipe follows
1/2 cup extra-virgin olive oil
2 onions, finely chopped (3 1/4 cups)
1/2 teaspoon sugar
4 teaspoons kosher salt
6 ripe plum tomatoes (about 1 pound)
1/2 teaspoon pimenton
Bay leaf

Steps:

  • Peel and thinly slice the potatoes. Soak slices in water for 10 minutes. Drain and dry completely in a salad spinner. Meanwhile, pour enough olive oil into a large saucepan so it's about an inch deep. Heat over medium heat until a slice of onion bubbles gently when placed in the oil, about 310 degrees F. Add the onions and fry, stirring occasionally until just golden, about 8 minutes. Scoop the onions from the oil with a slotted spoon and drain on a paper-towel lined baking sheet.
  • Add about half of the potatoes, and fry until lightly golden and a little puffy, about 10 minutes. Scoop the potatoes from the oil, add to the onions. Repeat with the rest of the potatoes. Reserve the oil. Season the vegetables with 3 teaspoons of the salt. (The preparation of the vegetables can be done up to 2 hours ahead.)
  • Break the eggs into a large bowl. Whisk just enough to combine but not so much that they get loose and runny, about 15 times. Add the vegetables and remaining 1 teaspoon salt.
  • Heat a medium (10-inch) nonstick skillet over medium heat. Add 2 tablespoons of the reserved oil and heat. Add the tortilla mixture and stir briskly with a spatula to get peaks and valleys in the folds of the egg, about 2 to 3 minutes. Stop stirring and reduce the heat to low, cover and cook until the eggs are set but still pretty loose, about 5 minutes. Lay a flat pan lid or a plate on top and invert the tortilla. Add more oil to the pan if needed, and slide the tortilla back into the pan, cover and finish cooking until set and lightly brown, about 3 minutes more. Slide the tortilla out of the pan to a cutting board to cool slightly.
  • Cut into cubes or thin wedges and serve warm or room temperature as is or with 1 of the suggested toppings.
  • Heat the olive oil in a medium skillet over medium heat. Add the onions and sugar and half the salt. Cook, stirring occasionally, until golden and sweet, about 1 hour. If the onions begin to get really brown, add a splash of water to slow them down.
  • Meanwhile, cut the tomatoes, crosswise. Grate them on the cut side on the largest holes of a box grater into a bowl all the way down to the skins. Discard skins. Add tomato puree, pimenton and bay leaf to the caramelized onions, and continue to cook until quite thick and the tomato separates from the oil, about 10 to 15 minutes more. Season with the remaining salt or to taste. Serve warm or at room temperature.

For the tortilla:
3 large garlic cloves, minced
1 teaspoon plus 1 1/2 tablespoons kosher salt, divided
2 cups plus 1 tablespoon extra-virgin olive oil, divided
6 packed cups winter greens, such as collards, Lacinato kale or mustard greens, stems removed, leaves cut into 1/4-inch thick ribbons
2 pounds starchy potatoes, such as Yukon gold, peeled and sliced into 1/4-inch rounds (6 to 8 medium potatoes)
1 medium yellow onion, diced
Freshly ground black pepper
10 large eggs
For the pimentón aioli:
1/2 cup good mayonnaise, such as Hellman's
1 teaspoon pimentón or smoked Spanish paprika
1 teaspoon Tabasco
1 large garlic clove, finely minced

Steps:

  • In a 12- to 14-inch non-stick skillet over medium heat, heat 1 tablespoon oil. Add the garlic and cook, stirring, until fragrant, about 1 minute. Add the greens and cook, tossing occasionally, until wilted and softened, about 5 minutes. Transfer to a large bowl and set aside.
  • Wipe out the skillet and heat 2 cups oil over medium heat until a potato added to the oil sizzles gently. Add half the potatoes and onion to the pan. Cook, stirring occasionally, until the potatoes are soft but not browned, 15 to 20 minutes. Remove potato mixture with a slotted spoon and transfer to the bowl with the greens. Repeat with remaining potato mixture, reserving oil. Season potato mixture with 1 1/2 tablespoons salt and a few grinds of pepper. Add the eggs and stir carefully to combine, keeping the potatoes intact.
  • In the same skillet over medium-high heat, add 1/4 cup reserved oil and swirl to coat. When the pan is hot, add the egg mixture and reduce the heat to low. Give it a shake and gently agitate the eggs in the middle of the pan with a spatula. As the tortilla sets, occasionally shake the pan and run the spatula along the rim to keep the tortilla from sticking. Cook until the eggs are almost set, 25 to 35 minutes.
  • Meanwhile, make the pimentón aioli. In a small bowl, stir together mayonnaise, pimentón, Tabsaco, and garlic. Refrigerate until ready to use.
  • When you can easily lift the side of the tortilla up with the spatula and see underneath, it is ready to flip. Place a plate, platter, or inverted or rimless baking sheet larger than the skillet on top of the tortilla in the skillet, then flip the skillet over so the tortilla transfers onto the plate. Slide the tortilla back into the skillet and add any runny egg that was left on the plate. Continue to cook until tortilla is light golden on the underside, pushing the edges under to give it a nice round shape, 5 to 7 minutes more.
  • Flip tortilla onto a wire rack to cool. To serve, thinly slice around the perimeter to square off the sides (save those for a cook's treat). Cut the tortilla in 6 equal rows lengthwise and widthwise to make 36 bites. Serve tortilla with aioli for dipping.
  • DO AHEAD: The tortilla can be made 3 days in advance, kept whole, wrapped tightly in plastic, and refrigerated. The aioli can be made 3 days in advance and refrigerated.
