ONE POT CHICKEN

One Pot Chicken image

True confession: When it comes to a roast or rotisserie chicken, I don't care a hoot about crisp skin. Sure, I want it flavorful, and golden brown is always nice, but what I'm after is great meat. Freak? I think not. So here is my recipe for roast chicken. I've never done this on television because it rarely creates a "camera perfect" skin, but listen to me...it's the best chicken I've ever made. And it may just be the easiest. I know...I've gone on the record many times as being anti-baste, but that's when turkey was the critter in question and turkey ain't chicken. In this case, we want to promote browning and getting some of the fallen fat up top will assist that process...in this case. This recipe first appeared in EveryDayCook.Photo by Lynne Calamia

Time 9h25m

Number Of Ingredients 5

1 (4-pound) roaster chicken
2 quarts water
1/3 cup kosher salt
2 teaspoons peanut or canola oil
1 teaspoon kosher salt

Steps:

  • Dissolve the first dose of salt in the water in a containerI typically use a straight-sided container to ensure the bird will submerge. large enough to hold the chicken. Make sure the bird's cavity is empty and place in brine, breast-side down. Cover and refrigerate 8 to 12 hours. (I usually do this in the morning after I make coffee so that I can cook it that night.)
  • To cook, place an empty 4-quart cast-iron Dutch oven in the middle of your oven and crank it to 550°F.
  • Give the oven at least 30 minutes to get hot. Meanwhile, drain and thoroughly dry the bird with paper towels, allowing it to come to room temperature while you wait on the oven.
  • When the oven is good and hot, rub the bird down with the oil and sprinkle on the remaining teaspoon of salt. Then, open the oven door, slide out the rack holding the Dutch oven, and drop the bird straight down into it, breast-side up. Quickly cover with the hot lid, slide the rack back in, and close the door as quickly as possible.
  • Leave the chicken alone for 15 minutes. Then, remove the lid and baste the top of the bird with some of the juices that have accumulated at the bottom of the pot. Cook 12 minutes.
  • Remove the Dutch oven to a safe spot (the cooktop would be fine) and don't touch for 10 minutes. Then, remove the lid and allow the bird to rest for 5 minutes. At this point, use your instant-read thermometer to take a reading right in the middle of the breast. I usually see 150°F at this point, and that's ok. Carryover heat will take care of the rest.
  • Slide a pair of tongs or a wooden spoon into the cavity and gently lift the bird out to a platter or carving board, tilting it first so that any hot juices drain into the pot.
  • I serve this in a rather unorthodox, but insanely satisfactory manner: Pour the juices (a lovely co-mingling of schmaltz and jus) into a few bowls and position around the platter which should be central to the table. Give everyone a knife (not too long or sharp) and allow them to carve off hunks of bird, which should be dipped (by hand) into the juices and consumed forthwith. Plates? We don't need no stinkin' plates! But you will need several napkins. You're welcome.

40 CLOVES AND A CHICKEN

40 Cloves and a Chicken image

Low and slow cooking transforms this garlic-filled chicken dish into a golden brown, juicy braise.Despite the fact that this recipe is classic European peasant fare, modern cooks tend to avoid it because unless you have a chronic vampire problem, 40 cloves seems...excessive. Ah! But when cooked into the chicken, the garlic becomes smooth and sweet and produces an aroma that wraps the kitchen like a hug. Make sure you have bread on hand to spread the soft garlic cloves onto and don't forget to sop up that oil. Yes, all of it. This recipe first appeared in Season 4 of Good Eats.

BROILED, BUTTERFLIED CHICKEN

Broiled, Butterflied Chicken image

Provided by Alton Brown

Categories     main-dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

1 1/2 teaspoons black peppercorns
4 garlic cloves, minced
1/2 teaspoon kosher salt
1 lemon, zested
Extra virgin olive oil
Onions, carrots and celery cut into 3 to 4-inch pieces
3 to 4-pound broiler/fryer chicken
1 cup red wine
8 ounces chicken stock
2 to 3 sprigs thyme
Canola oil

Steps:

  • Position the oven rack 8 inches from the flame/coil and turn broiler to high. Crack peppercorns with a mortar and pestle until coarsely ground. Add garlic and salt and work well. Add lemon zest and work just until you can smell lemon. Add just enough oil to form a paste.
  • Check out your refrigerator for onions, carrots and celery that are a little past their prime. Cut vegetables into pieces and place in a deep roasting pan.
  • Place chicken on a plastic cutting board breast-side down. Using kitchen shears, cut ribs down one side of back bone and then the other and remove. Open chicken like a book and remove the keel bone separating the breast halves by slicing through the thin membrane covering it, then by placing two fingers underneath the bone and levering it out. Turn chicken breast-side up and spread out like a butterfly by pressing down on the breast and pulling the legs towards you. Loosen the skin at the neck and the edges of the thighs. Evenly distribute the garlic mixture under the skin, saving 2 teaspoons for the jus. Drizzle the skin with oil and rub in, being sure to cover the bird evenly. Drizzle oil on bone side of chicken as well.
  • Arrange bird in roasting pan, breast up, atop vegetables.
  • Place pan in oven being sure to leave the oven door ajar. Check bird in 10 minutes. If the skin is a dark mahogany, hold the drumstick ends with paper towels and flip bone-side up. Cook 12 to 15 minutes or until the internal temperature reaches 165 degrees. Juices must run clear. Remove and place chicken into a deep bowl and cover loosely with foil.
  • Tilt pan so that any fat will pool at corner. Siphon this off with a bulb baster. (This fat is great in vinaigrettes). Set pan over 2 burners set on high. Deglaze pan with a few shots of red wine and scrape brown bits from bottom using a carrot chunk held with tongs. Add chicken stock, thyme, the remaining garlic paste and reduce briefly to make a jus. Strain out vegetables and discard. Slice chicken onto plates or serve in quarters. Sauce lightly with jus and serve.

CHICKEN WITH 40 CLOVES OF GARLIC

Chicken With 40 Cloves of Garlic image

In the two decades after World War II, Jane Stern and Michael Stern told Marian Burros of The Times in 1991, "a nation once known for square meals and the bluenose abstinence of Prohibition fell in love with deluxe food, vintage wine and the joy of cooking." They captured that gourmania in their book of that year, "American Gourmet," and this recipe, for a luxe and amazing casserole of nutmeg-scented chicken and garlic, comes from it. Serve the dish with a baguette or two, and squeeze the buds of garlic out on the bread. Spread the mash like butter and use the bread to mop up the luscious sauce.

Categories     dinner, times classics, main course

Time 1h40m

Yield 6 to 8 servings

Number Of Ingredients 13

2/3 cup olive oil
8 chicken drumsticks
8 chicken thighs
4 celery ribs, cut into 4 inch-long strips
2 cups chopped onion
6 parsley sprigs
1 teaspoon dried tarragon
1/2 cup dry vermouth
2 1/2 teaspoons salt
1/4 teaspoon freshly ground pepper
dash grated nutmeg
40 cloves garlic, unpeeled
Freshly sliced French bread

Steps:

  • Put the oil in a shallow dish and add the chicken pieces; coat evenly with oil.
  • Preheat oven to 375 degrees.
  • In a heavy 6-quart casserole, combine the celery, onions, parsley and tarragon. Lay the oiled chicken pieces on top. Pour on the vermouth. Sprinkle with salt and pepper and a dash of nutmeg. Tuck the garlic cloves in and around the chicken pieces. Cover the casserole tightly with aluminum foil, then the lid. Bake 90 minutes without removing the lid.
  • Serve chicken, pan juices and garlic cloves with French bread. Diners should squeeze the buds of garlic from their husks onto the bread, then spread the garlic like butter.

HONEY-GLAZED CHICKEN AND SHALLOTS

Honey-Glazed Chicken and Shallots image

The combination of a sweet glaze, tangy shallots and pan-roasted chicken makes this a quick but decadent one-pan meal. Caramelizing shallots first, then tossing them with sherry vinegar gives them a pickled but syrupy bite. A little heat from a spicy chile and some freshness from parsley leaves balance this flavorful dish. Serve right off the stove, over cooked grains or alongside a crisp salad.

Categories     dinner, quick, weeknight, poultry, main course

Time 40m

Yield 4 servings

Number Of Ingredients 10

2 pounds bone-in, skin-on chicken thighs or drumsticks (6 to 8 pieces)
Salt
2 tablespoons neutral oil, such as grapeseed or canola
1 pound shallots (about 8), peeled and halved, quartered if large
3 tablespoons honey
2 tablespoons lime juice
1 garlic clove, minced
1 fresh hot chile, such as Thai, Scotch bonnet or serrano, minced with or without seeds
1 tablespoon sherry vinegar
1/2 cup fresh flat-leaf parsley leaves

Steps:

  • Pat the chicken dry and season all over with salt. Heat 1 tablespoon oil in a large skillet over medium. Add the shallots and cook, turning frequently, until lightly caramelized on all sides, about 5 minutes. Transfer the shallots to a medium bowl and set aside.
  • Add the remaining 1 tablespoon oil to the skillet, and raise the heat to medium-high. Place the chicken skin side down and sear without moving until the skin is golden brown, about 10 minutes. Turn and cook the other side until lightly browned, about 5 minutes.
  • Reduce heat to medium-low, and add 1/4 cup water to the skillet. Use a spatula or tongs to loosen any stuck bits. Stir the honey, lime juice, garlic and chile into the liquid around the chicken pieces. Cover with a lid or foil, and cook until the meat is cooked through, about 8 minutes. Uncover, raise the heat to high and cook until the sauce is thickened, about 2 minutes more.
  • Toss the shallots with the sherry vinegar and parsley, and season with salt. Serve the chicken with the dressed shallots and spoon the pan sauce over everything.

Good Eats 40 Cloves and a Chicken (Alton Brown) image

Tender and succulent, this is fall-off-the-bone chicken, with tons of roasted garlic! This recipe can be made quicker and without too much fuss, it's suggested to purchase whole garlic cloves already peeled. They are usually found in a jar in the produce section and sometimes even packed in oil. :)
