- Preheat oven to 375°. In a large skillet, cook the beef, onion and pepper over medium heat until meat is no longer pink and onion is tender, 5-7 minutes, breaking the meat into crumbles. Drain. Stir in the beans, tomato paste, water, ketchup, oregano and salt., Separate crescent dough into 4 rectangles; seal perforations. Spoon a fourth of the meat mixture onto half of each rectangle; sprinkle with cheese. Fold dough over filling; pinch edges to seal. Cut slits in tops., Place on an ungreased baking sheet. Bake until golden brown, 13-15 minutes.

SLOPPY JOE CALZONE
Steps:
- 1. Adjust oven rack to lowest position. Preheat oven to 425 F. Sprinkle cornmeal on large cookie sheet. Set aside.
- 2. Heat 1 teaspoon of the oil in a large skillet over medium heat. Add onion, celery, garlic and salt. Cook, stirring, 3 minutes, until vegetables soften. Stir in ground beef, breaking up with the back of the spoon. Cook 3 to 5 minutes, until beef is no longer pink. Add marinara sauce and carrot, stirring until combined. Reduce heat to medium-low; simmer 15 minutes. Transfer to a large bowl; cool 15 to 20 minutes, until room temperature. Makes 4 cups.
- 3. Divide dough into 4 equal pieces. On a lightly floured surface, shape dough into four 7-inch circles. Spread 1/2 cup of the meat filling in bottom half of dough circle, leaving a 1/2 inch border. Sprinkle with 1 tablespoon of the parmesan. Fold top half of circle over filling to make a semicircle. Fold edge over and flute. Transfer Calzone to prepared sheet. Refrigerate. Repeat process with remaining dough and 1 1/2 cups filling. Brush top of each Calzone with the remaining 2 tablespoons oil. Bake 15 to 20 minutes, until golden brown.
- For another batch of Calzones or a pasta topper: Freeze remaining 2 cups filling in a microwave-proof bowl for up to 2 weeks. To reheat: Microwave on high 5 to 6 minutes.

THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
SUPER SLOPPY JOES

- Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. Serve with your favorite sides or sliced tomatoes seasoned with salt and pepper, dill pickles and Deviled Potato Salad. Have plenty of napkins on hand!
- Boil potatoes in water seasoned with coarse salt until they are tender, about 10 minutes. Drain cooked potatoes and return to the warm pot to dry them out. Let the potatoes stand 2 minutes, then spread potatoes out on to a cookie sheet to quick-cool them.
- In the bottom of a medium mixing bowl, grate 1/4 onion using a hand grater. Add mustard and mayonnaise, paprika and cayenne pepper sauce to the grated onion and stir to combine. Add potatoes to the bowl and stir to evenly distribute dressing. Season potato salad with salt and pepper and taste to adjust your seasonings. Top servings of salad with chopped scallions.

- Heat a large pan over medium heat and add the oil. When hot, add the meat, cayenne, cumin and some salt and pepper. Cook, without stirring, until the meat is browned on the bottom, about 5 minutes. Break it up with a wooden spoon, then add the onions and garlic and cook for 2 more minutes.
- Add the tomato, liquid, mustard and sugar, if using, to the pan and bring to a simmer; simmer for 5 minutes.
- Toast the tortillas or buns. Serve the sloppy joe mixture on the tortillas or buns and top with your favorite toppers.
