I am partial to some arugula, romaine and spinach. 3/4 cup Fisher® Sliced Almonds, toasted
1 tsp. paprika
Pinch of kosher salt
1 Tbsp. plus 1 teaspoon Red Wine vinegar
2 tsp. Grainy Mustard
1/3 cup extra-virgin olive oil
1/8 tsp. salt
3 cups mixed greens, washed
6 red radishes, tops trimmed down to 1/2 inch, thoroughly washed and dried
1/4 cup flat-leaf parsley, stemmed, leaves washed and dried
3/4 cup seedless red (or green) grapes, stemmed, washed and dried

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Almonds: Combine the almonds and paprika and a pinch of salt. Toss to blend. Transfer to a baking sheet and toast until browned, 5-8 minutes. Set aside.
  • 3. Dressing: Whisk all dressing ingredients together in a small bowl, set aside.
  • 4. Salad: Place the radishes on a flat surface and, using a small, sharp knife, slice them into ¼ inch rounds (with the bit of the tops still attached).
  • 5. Toss the mixed greens, radishes, parsley and grapes to the bowl and toss to blend. Top with the almonds. Serve immediately.

White Almond-Garlic Soup with Grapes image

1 3/4 cups (about 8 ounces) blanched, ground almonds
3 slices white bread, crusts removed, diced
10 cloves garlic, peeled
6 cups milk
2 teaspoons sherry vinegar
2 cups extra-virgin olive oil
Kosher salt and freshly ground black pepper to taste
36 white seedless grapes, halved, for garnish

Steps:

  • In a large bowl, combine the almonds, bread, garlic, milk and vinegar. Working in three batches, transfer about a third of the mixture to a blender and process until smooth. With the motor running, slowly pour in 1/4 cup of olive oil. Strain the soup through a fine mesh sieve into a bowl. Repeat process with the remaining mixture.
  • Season the soup to taste with salt and pepper and chill for several hours. Before serving, taste the soup; if it tastes too strongly of either garlic or vinegar, add a bit of water. Serve the soup garnished with grape halves.

1 3/4 cups all-purpose flour, plus more for dusting
5 tablespoons sugar
1 teaspoon salt
10 tablespoons cold unsalted butter, cut into small pieces
1 large egg yolk, for brushing
1/2 cup plus 2 tablespoons sliced almonds
1/4 cup plus 2 tablespoons sugar
1 large egg yolk
2 tablespoons unsalted butter, at room temperature
1 1/2 teaspoons pure vanilla extract
1 teaspoon finely grated lemon zest
1 pound seedless grapes (red, purple and/or green; about 2 cups)

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor. Add half of the butter and pulse until the mixture looks like coarse meal. Add the remaining butter and pulse into pea-size pieces. Add 1/4 cup ice water and pulse until the dough clumps together but has not yet formed a ball. Turn out the dough onto a piece of plastic wrap; press into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the filling: Pulse 1/2 cup almonds, 1/4 cup sugar, the egg yolk, butter, vanilla and lemon zest in a food processor to make a paste.
  • Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Roll out the dough into a 12-inch round on a lightly floured surface. Transfer the dough to the prepared baking sheet. Spread the almond filling over the dough, leaving a 2 1/2-inch border; top with the grapes. Fold the edge of the dough over the fruit by about 2 inches, pleating as needed. Refrigerate until firm, 30 minutes.
  • Lightly beat the egg yolk with 1 tablespoon water. Brush the dough with the egg wash. Scatter the remaining 2 tablespoons almonds all over the galette, then sprinkle with the remaining 2 tablespoons sugar. Bake until the crust is golden brown and the grapes are softened, about 40 minutes. Let cool on the baking sheet.

3 large garlic cloves
2 cups diced stale bread, crusts removed
2 cups peeled, fried and salted Marcona almonds, or whole blanched almonds
1 cup white seedless grapes, halved
1 cup red seedless grapes, halved
Salt
1 1/2 cups extra virgin olive oil
1 1/2 to 2 tablespoons sherry vinegar
Extra virgin olive oil, as needed
1/4 cup diced bread
Salt
1/2 cup mixed red and white seedless grapes, cut into small dice
1/4 cup peeled, fried and salted Marcona almonds, or whole blanched almonds
1 scallion, thinly sliced diagonally
Almond oil or extra virgin olive oil, for drizzling
Sherry vinegar, as needed

Steps:

  • For the gazpacho: Place garlic cloves in a small pan of cold water over high heat. When water comes to a boil, strain garlic and chill until needed. Cover stale bread cubes with water and allow to sit until soft, about 10 minutes.
  • Squeeze all the water from bread and put into a blender with almonds, grapes and garlic cloves. Season with a bit of salt and purée until mixture is very smooth, almost like mashed potatoes; if necessary drizzle in a bit of water to help mixture to purée.
  • Place 1 cup ice-cold water in a measuring cup. Place olive oil in another cup. With blender running, slowly drizzle in both liquids, simultaneously, through opening of blender. Gazpacho will turn very smooth and silky. Add 1 1/2 tablespoons vinegar or more, if desired. Adjust salt to taste. To thin soup, if desired, add 1 to 3 tablespoons cold water, one tablespoon at a time. Transfer to a covered container and refrigerate until very cold, about 2 hours.
  • For garnish and serving: Preheat oven to 400 degrees. Drizzle oil over diced bread and sprinkle with salt. Spread on a baking sheet and bake until browned, 5 to 8 minutes. Transfer to a small bowl, and add grapes, almonds and scallion. Add a drizzle of oil and a small sprinkling of vinegar and salt. To serve, ladle gazpacho into four chilled soup plates. Add garnish, and drizzle with more oil.

Although frangipane sounds fancy, it's a breeze to whiz up in a food processor-simply grind the almonds and sugar, then add the flour, butter, and eggs. The oven's heat concentrates the grapes' sweetness and perfume, and dusting the hot tart with confectioners sugar bestows a subtle shine.

1 cup whole blanched almonds, toasted and cooled completely
1/2 cup sugar, divided
1/4 cup all-purpose flour
1/8 teaspoon salt
3/4 stick unsalted butter, softened
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
2 cups seedless red grapes (3/4 pound), halved
1/3 cup sliced almonds (preferably with skin)
Confectioners sugar for dusting
Equipment: an 11- by 8-inch rectangular tart pan with a removable bottom (see cooks' note, below); pie weights or dried beans

Steps:

  • Make tart shell:
  • Preheat oven to 375°F with rack in middle. Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 12-by 10-inch rectangle. Fit dough into tart pan, letting excess hang over edge. Fold overhang inward and press against side of pan to reinforce edge. Lightly prick bottom all over with a fork. Chill until firm, about 30 minutes (or freeze 10 minutes).
  • Line shell with foil and fill with pie weights. Bake until sides are set and edges are pale golden, 20 to 25 minutes.
  • Carefully remove foil and weights and bake shell until deep golden all over, 15 to 20 minutes more. Cool completely. Leave oven on.
  • Make filling and bake tart:
  • Pulse whole almonds with 1/4 cup sugar in a food processor until finely ground. Add flour and salt and pulse to combine.
  • Beat together butter and remaining 1/4 cup sugar with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in extracts. With mixer at low speed, mix in almond mixture until just combined.
  • Spread filling evenly in tart shell and scatter grapes over it, lightly pressing them in. Sprinkle sliced almonds around grapes. Bake until filling is puffed and golden-brown, 35 to 40 minutes. While still hot, dust tart with confectioners sugar, then cool completely.
