Coconut Almond Energy Bites image

5 ingredient energy bites loaded with a sweet and salty flavor from shredded coconut, dates, crunchy almonds, and a hint of sea salt. These are the perfect healthy snack as they contain NO refined sugars!

20 Medjool dates, pitted
1/2 - 3/4 cup dry roasted unsalted almonds (or peanuts or cashews)
1 cup unsweetened, shredded coconut (see notes)
2 tablespoons almond butter (or peanut butter)
1/2 teaspoon sea salt
OPTIONAL: chia seeds, hemp seeds, flax meal

Steps:

  • Soak the dates in a bowl with hot water and allow to soften for just a few minutes. Remove the dates from the water and wipe them with a kitchen towel.
  • Pulse 1/2 cup of almonds in a food processor if you want the energy bites to have a smooth texture and 3/4 cup of almonds if you want a more crunchy texture. You want them to break down into smaller pieces. If you used 3/4 cup of almonds, remove 3 tablespoons of pulsed almonds to a bowl, set aside.
  • Add the 1/2 cup of shredded coconut, almond butter, sea salt, and any optional seeds, along with the dates to the food processor and continue to pulse until a soft dough ball forms. Taste and add additional salt to taste. Remove the dough ball to a bowl and add the reserved 3 tablespoons of pulsed almonds (if using). Roll the dough into small balls - you'll get about 12-16 pieces. Then roll the energy balls in the remaining 1/2 cup of shredded coconut. Place on a baking sheet and allow to harden in the refrigerator or freezer. Transfer to an airtight container and store in the refrigerator or freezer.

These tasty little treats were inspired by Katie's post for lemon poppy seed no bake cookies that she shared on her blog just a couple of days ago: http://www.katiekdid.com/2012/03/27/lemon-poppy-seed-no-bake-cookies/ I made them my own adding in some chocolate and desiccated coconut in place of the poppy seeds and using a home-made almond butter in place of the coconut butter. Also I eliminated the lemon flavour due to my citrus allergy. I really like these as a not so indulgent treat that keeps me going and makes me happy. I hope you do, too!

Number Of Ingredients 8

1/2 cup almond flour (I ground up some whole almonds for this)
1/2 cup coconut flour (I ground up some unsweetened desiccated coconut for this)
1/8 teaspoon salt
1 tablespoon desiccated coconut (unsweetened)
1/2 tablespoon grated chocolate (or grind some chips in your food processor until they're quite small)
1/4 cup almond butter (I used my home-made vanilla version without added fat or sugar)
1/2 teaspoon vanilla extract
2 -3 tablespoons black tea (can use water, too)

Steps:

  • In a big bowl combine both flours, salt, desiccated coconut and chocolate.
  • Microwave your almond butter on high for 30 seconds to make it runny and then stir in vanilla.
  • Add this to the flour mixture and knead into a dough adding tea as necessary. You should be able to form this with your hands easily like you would form cookies. Depending on your flours and almond butter you will need more or less liquid. Just make sure this does hold together well without being sticky.
  • Roll into bite-sized balls and refrigerate until ready to use (I left mine over night).
  • Enjoy!

  • ROASTING ALMONDS: If topping your bites with almonds (optional), preheat the oven to 350 F (176 C) and place raw almonds on a small baking sheet. Place almonds in the preheated oven and bake for 8 minutes (be careful not to burn). Set aside for later use.
  • BITES: To a food processor, add pitted dates and coconut flakes and pulse until well combined and only small chunks of date remain — about 1 minute.
  • Add in the almond butter, cacao powder, vanilla extract, and salt. Pulse until everything is evenly combined. The mixture should be wet enough to stick together when you squeeze it but dry enough not to stick to your hands too much. If too dry, add more almond butter 1 Tbsp at a time. If too sticky, add more coconut flakes 1 Tbsp at a time.
  • Scoop out 2-Tbsp amounts and use your hands to roll into balls. As original recipe is written, makes ~12 balls. Place balls on a parchment-lined plate or baking sheet and transfer to the freezer for 20 minutes, or until semi-firm to the touch.
