ZESTY PUB CHEESE DIP



Zesty Pub Cheese Dip image

Easy to make, all American classic cheddar pub cheese dip with a touch of heat from hot sauce. Chef tried and true and very customizable.

3 cups shredded cheddar*
2-3 oz cream cheese
2 pieces spreadable cheese such as Laughing Cow (or increase cream cheese by 2 oz or add 2 oz sour cream)
1 clove garlic (or 1 tsp garlic powder)
2/3 cup beer**
1 tbsp Worcestershire sauce (or to taste)
1 tbsp Dijon mustard (or to taste)
1 tsp hot sauce (or to taste)
1 tsp prepared horseradish (or to taste)
1 tsp sweet paprika + a pinch to sprinkle over dip
1/2 tsp black pepper
1 tsp sea salt (or to taste)
2 tbsp finely cut fresh chives + 1 tsp more to sprinkle over dip

Steps:

  • In the bowl of a food processor add the shredded cheddar, cream cheese, spreadable cheese (or substitute) and roughly chopped garlic clove. Process until combined.
  • Add all the other ingredients except for the beer, salt and chives. Process and while processing slowly add the beer while monitoring the consistency (do not add it all if the dip is becoming runny).
  • Transfer to a mixing bowl and taste. Adjust seasonings as needed and add salt as needed. Fold in the chives, cover and refrigerate.
  • Serve garnished with a pinch of paprika and chives and accompanied by crackers, bread sticks and/or veggie sticks.

Alder's Pub Cheese With Potato Bread Chips image

Pub cheese is a traditional bar snack, but this version, served at Alder by the chef Wylie Dufresne, takes a number of liberties with the usual recipe. A red-wine reduction seasoned with miso and mustard add color and a complex tang. The "potato chips" are easy to make if you have a rolling pin and four hours, or serve the concoction with your favorite cracker.

1/2 loaf sliced potato bread, crusts removed
Melted butter, for brushing
Sea salt, for sprinkling
1 (750 ml) bottle red wine
5 cloves garlic, peeled
2 large shallots, peeled
2 thyme branches
1 bay leaf
1 whole clove
1 tablespoon Dijon mustard
1 tablespoon red miso paste
2/3 cup whole milk
6 ounces cream cheese (2/3 cup), at room temperature
10 ounces aged cheddar, coarsely grated (2 1/4 cups)
Pistachio nuts, chopped, for sprinkling (optional)

Steps:

  • To make the potato bread chips, heat the oven to 200 degrees. Place a slice of bread on a clean surface and use a rolling pin to flatten it as thinly as possible. Brush both sides of the bread with butter and sprinkle lightly with salt. Repeat with remaining bread slices. Spread flattened slices out on baking sheets. Bake until golden and crisp, about 4 hours. Chips can be made the day before.
  • While the chips bake, prepare the pub cheese: In a large pot over medium heat, combine the wine, garlic, shallots, thyme, bay leaf and clove. Bring mixture to a boil; reduce heat and simmer until the wine has almost evaporated, about 1 hour and 15 minutes. Strain mixture through a fine-mesh sieve into a bowl (you should have about 1/3 cup); use a rubber spatula to press on the solids and extract additional liquid. Whisk in mustard and miso. Cool to room temperature. This can be made up to a week ahead; refrigerate if not using the same day.
  • Place a medium bowl in a freezer to chill. Meanwhile, in a blender or food processor, combine 1/3 cup of the wine mixture (save the rest or discard), milk, cream cheese and cheddar. Run until the mixture is fairly smooth; stop to scrape down the sides occasionally.
  • Scrape the mixture into a medium-sized pot. Cook over medium-low heat, stirring occasionally, until the mixture reaches 150 degrees on an instant read thermometer and the cheese is melted, 8 to 10 minutes. Pour mixture into the chilled bowl and whisk to cool. Chill in the refrigerator until very cold, at least 4 hours (or up to 5 days).
  • Serve pub cheese in a bowl or ramekins, or mounded on a plate, with the potato bread chips alongside. Garnish pub cheese with pistachio nuts if using.

Also known as beer cheese, a creamy spreadable cheese often found at bars and casual eateries. It's also a good item to incorporate into a charcuterie or snack board. Serving suggestions are carrots, celery, crackers, crostini, pretzels, or pita chips.

2 fluid ounces lager beer at room temperature, or more if needed
10 ounces freshly grated sharp Cheddar cheese
½ (8 ounce) package cream cheese, at room temperature
½ tablespoon Worcestershire sauce
2 teaspoons dry mustard powder (such as Colman's®)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon finely chopped fresh chives

Steps:

  • To quickly remove any carbonation, pour the room temperature beer into a bowl, and whisk occasionally for 5 to 10 minutes.
  • Combine Cheddar cheese, cream cheese, Worcestershire, mustard powder, garlic powder, and onion powder in a food processor. Pulse until the ingredients are mixed.
  • Turn food processor to high and slowly pour in beer through the feed tube; blend until smooth. If mixture is too thick, add a bit more beer to reach your desired consistency.
  • Transfer to a serving bowl and sprinkle with chopped chives. Store in the fridge, tightly covered, for up to 10 days.

8 ounces cream cheese, softened
1/3 tablespoon strong ale or 1/3 tablespoon beer
1 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1/2 cup pecans, toasted and finely chopped
1/2 cup fresh parsley, finely chopped

Steps:

  • Place cheeses in food processor or blender, process until smooth.
  • Gradually add ale, mustard and cayenne pepper.
  • If mixture is soft, refrigerate until firm enough to hold shape.
  • Mould into a disc shape (a sphere or ball!!).
  • Combine pecans and parsley.
  • Pat the mixture onto the ball or roll the ball in the mixture until the cheese mixture is covered completely.
  • Place on a serving plate or board and surround with crackers or flatbreads.
  • Slices of apple are nice with this too.
