PHILIPPINE STIR-FRIED RICE NOODLES: PANSIT GRISADO



Philippine Stir-Fried Rice Noodles: Pansit Grisado image

Number Of Ingredients 14

4 ounces soy oil
2 cloves garlic, peeled and minced
4 ounces julienned Spanish onion
1 pound boneless pork loin, trimmed and cut into 1 1/2 inch strips
4 ounces soy sauce
2 pints white chicken stock
1/2 ounce oyster sauce
14 ounces carrots, washed, peeled and cut julienne
14 green cabbage, washed and finely cut chiffonade
8 ounces Chinese sausage, cut into narrow strips, about 1 1/2 inches long
1 pound rice noodles, soaked in warm water (to cover) for 20 minutes
Salt and ground white pepper
3 scallions, washed, trimmed, and coarsely chopped, as a garnish
2 lemons, washed, tips cut off, sliced into wedges, as a garnish

Steps:

  • In a wok, heat oil over medium-high heat. Add garlic and onions and stir-fry until translucent.
  • Add pork and sear. Add soy sauce, chicken stock, oyster sauce, carrots, celery, cabbage, and sausage to wok. Reduce heat and simmer for 5 minutes or until vegetables are al dente and wok is almost dry.
  • Drain rice noodles, stir into wok and cook for 5 to 7 minutes on medium-low heat with meat and vegetables.
  • Season, to taste, and serve immediately on a warmed plate. Garnish with scallions and a lemon wedge.

FRIED ALLIGATOR NUGGETS

1/2 pound alligator meat, cut into 1/2-inch cubes
Fish batter, for coating (see *Cook's Note)
Cooking oil, for frying
Salt and freshly ground black pepper
Serving suggestions: various dipping sauces such as remoulade, mustard, or cocktail

Steps:

  • Fill a deep pot halfway full with oil. Heat to 360 degrees F. Coat the alligator meat with the fish batter. Fry for 2 to 3 minutes, until gator floats in oil. Remove and add salt and pepper to taste. Serve as an appetizer with remoulade sauce, mustard sauce, or cocktail sauce for dipping.

General Tso's Gator Alligator and Snap Peas with Kumquat 3-2-1 Sauce Spicy Peanut Rice image

Peanut oil, to cook
1 pound cleaned alligator meat, 1/2-inch dice
2 tablespoons minced garlic
1 tablespoon minced ginger
8 kumquats, 1/8 inch slices (may sub with 2 zested and sectioned oranges or tangerines)
1/2 cup rice vinegar
1/4 cup naturally brewed soy sauce
2 tablespoons sugar
2 cups snap peas, blanched
Salt and freshly ground black peppe,r to taste
Peanut oil, for cooking
1 cup whole roasted peanuts, unsalted
5 Thai bird chiles, chopped
1 small yellow onion, minced
4 cups cooked Chinese rice (or other long grain)
1 tablespoon naturally brewed soy sauce
Salt and freshly ground black peppe, to taste

Steps:

  • In a large saute pan on high heat, coat well with oil and add alligator. Season and quickly brown meat, 2 to 3 minutes. Remove and set aside on paper towels. Wipe out pan and coat lightly with oil. Saute the garlic and ginger for 2 minutes. Add the kumquats and stir. In a small bowl, mix together the vinegar, soy and sugar until dissloved. Deglaze with mixture and reduce by 50 percent. Add back the alligator and snap peas, check for seasoning.
  • In a small wok or sautee pan, coat lightly with oil and saute the peanuts, chiles and onions for 3 to 4 minutes or until onions start to take on color. Add the rice and stir until hot. Add soy sauce and check for seasoning.
  • PLATING On a large round plate, place a small mound of rice in the middles and top with alligator. Ladle a little sauce on top. Enjoy.
  • WINE: Very chilly beer like Foster's or Corona with a lime.

6 garlic cloves, chopped
1/4 cup fresh ginger, peeled and chopped
1/2 cup vegetable oil
1/2 cup tahini (sesame paste)
1/2 cup smooth peanut butter
1/2 cup good soy sauce
1/4 cup dry sherry
1/4 cup sherry vinegar
1/4 cup honey
1/2 teaspoon hot chili oil
2 tablespoons dark sesame oil
1/2 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
1 pound spaghetti
1 red bell pepper, julienned
1 yellow bell pepper, julienned
4 scallions, sliced diagonally (white and green parts)

Steps:

  • Place the garlic and ginger in a food processor fitted with a steel blade. Add the vegetable oil, tahini, peanut butter, soy sauce, sherry, sherry vinegar, honey, chili oil, sesame oil, and ground peppers. Puree the sauce.
  • Add a splash of oil to a large pot of boiling salted water and cook the spaghetti al dente. Drain the pasta in a colander, place it in a large bowl, and while still warm, toss with 3/4 of the sauce. Add the red and yellow bell peppers and scallions; toss well. Serve warm or at room temperature. The remaining sauce may be added, as needed, to moisten the pasta.
