Best Ever Pumpkin Spice Bread image

This Best Ever Pumpkin Spice Bread is moist and flavourful and packed with pumpkin and spices, and it's so easy to make in only one bowl!

2 cups canned pumpkin (NOT pumpkin pie filling)
1 2/3 cups white sugar
2/3 cup vegetable oil
4 eggs
2 1/4 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon allspice
1/2 teaspoon cloves
1-2 teaspoons freshly grated ginger (or 2 teaspoons powdered ginger)
a pinch of salt
Butter for greasing the loaf pans

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • In the bowl of your stand mixer (or in a large bowl using a hand mixer), add the pumpkin, sugar, oil and eggs and beat on low speed until the mixture is combined and smooth.
  • Add the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves, ginger, and salt and mix on low speed, just until combined and no streaks of flour are visible.
  • Grease 2 loaf pans with butter and line with parchment paper.
  • Divide the batter evenly between the loaf pans and bake for 55-60 minutes at 350 degrees Fahrenheit or until a toothpick inserted into the middle of one of the loaves comes out clean.
  • Remove from the oven and cool in the pans for about 5 minutes before removing to a wire rack to cool completely.
  • Serve when cool, or store in an airtight container for up to 4 days.

I clipped this recipe out of the paper. It's a little different from the usual pumpkin bread; a nice combination of autumn spices and chocolate chips.

1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon clove
1/2 cup butter, softened
1 cup sugar
2 eggs
3/4 cup canned pumpkin
3/4 cup chocolate chips
3/4 cup chopped walnuts, divided

Steps:

  • Combine flour, baking soda, salt and spices and set aside.
  • In a large bowl, cream butter and sugar, mixing well. Blend in eggs.
  • To the butter and sugar mixture add flour mixture and pumpkin alternately, beginning and ending with flour mixture.
  • Stir in chocolate chips and 1/2 cup chopped walnuts.
  • Spoon into greased 9 x 5 inch loaf pan. Sprinkle with remaining 1/4 cup walnuts.
  • Bake at 350 degrees for 40 to 60 minutes. Test periodically with a toothpick or cake tester until it comes out clean.
  • Cool in pan for about 10 minutes, then remove and cool completely on wire rack.

2 1/2 cups sugar
1/2 cup butter, softened
1 (15 ounce) can solid-pack pumpkin
1 (8 1/4 ounce) can crushed pineapple in juice (juice reserved)
4 large eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon salt
confectioners' sugar (optional)

Steps:

  • Heat oven to 350°F Lightly spray two, 8 1/2x4-inch loaf pans with cooking spray. Beat sugar and butter in a bowl until blended. Add pumpkin, pineapple and eggs; beat well. Set aside.
  • Combine flour, baking soda, pumpkin pie spice and salt in a separate bowl; stir into the pumpkin mixture, mixing until the dry ingredients are completely moistened. Divide batter between the prepared pans; spread evenly.
  • Bake for 55 to 65 minutes or until a tester inserted in the center comes out clean. Cool for 5 minutes. Remove from pans and cool on wire racks. Sprinkle with confectioners' sugar, if desired.
  • Variation: If desired, walnuts may be added to the batter. Just prepare recipe as directed, stirring in one cup coarsely chopped walnuts when adding the dry ingredients.

I enjoy this scrumptious loaf time and again, including for Christmas dinner. Be sure to serve with Roasted Garlic Gravy (#203656) and a baked acorn squash, along with salad or sweet peas, for a real feast.

1 cup onion, chopped
4 -5 garlic cloves, minced
1 1/2 cups carrots, grated
1 1/2 cups celery, finely chopped
3 1/2 cups chickpeas
1 cup whole wheat bread crumbs
1 tablespoon parsley flakes or 1/4 cup fresh parsley
1 teaspoon thyme
1 teaspoon savory
1 tablespoon tarragon
1/3-1/2 cup apple juice
1/4 teaspoon salt

Steps:

  • Saute the vegetables in a little water, till the onions are well softened.
  • Put the chickpeas in a colander, and rinse for 1 minute under hot water. This will make them much easier to mash. Put them in a large bowl and mash with a fork or potato masher.
  • Heat oven to 300°F.
  • Combine all other ingredients with the chickpeas, and mix well.
  • Transfer mixture to a nonstick or lightly oiled loaf pan and pat in in evenly. Cover the pan with aluminum foil and bake for 1 hour.
  • Cool the loaf, in the pan, for a few minutes before serving.
  • Leftovers are great warmed up on a toasted sandwich with gravy!
