AIR FRYER SWEET POTATO FRIES RECIPE
Steps:
- Gather the ingredients.
- Scrub and peel sweet potatoes.
- Cut sweet potatoes into evenly sized matchsticks. Make sure they are square on all six sides so they cook evenly, and cut them to a similar in length. Place sticks in refrigerator overnight to dry them out. Or if you're looking to make them faster, just dry off as much of the moisture as possible.
- Toss sweet potatoes with olive oil, cornstarch, salt, pepper, garlic powder, and paprika in a large bowl until sweet potatoes are completely coated.
- Heat air fryer to 400 F for 8 minutes. Add sweet potato fries to preheated air fryer basket in one even layer. Do not overlap fries or they will not crisp properly.
- Cook at 400 F for 8 to 10 minutes. Check after 8 minutes to see if they need to be cooked for longer. (Every air fryer is slightly different). Remove from air fryer and sprinkle with more salt, if needed. Keep warm in a 200 F oven while you prepare the next batch, or eat them right away. Serve hot with your favorite dipping sauces, such as an aioli with garlic or pesto.

- Preheat the air fryer to 400 degrees F (200 degrees C).
- Combine sweet potato fries and canola oil in a bowl and mix. Season with salt, pepper, garlic powder, and paprika. Mix until all fries are evenly coated.
- Divide sweet potatoes into 2 or 3 batches for cooking. Place an even layer of sweet potatoes in the fry basket, insert in the air fryer, and cook until golden, about 10 minutes. Repeat with remaining sweet potatoes.

- Peel the sweet potatoes and slice into ½ cm sticks. Put in a bowl, drizzle over the oil and give them a good toss to coat. Sprinkle over the paprika, mixed herbs and ½ tsp each of salt and pepper, then give it all a good mix with your hands to ensure it's evenly coated.
- Cook, in batches, in a single layer in your air fryer basket for around 10-15 mins, until lightly golden, giving a little shake or toss after 5 mins. Once all the batches have cooked, return the fries to the air fryer, give it a good shake and cook for a further 1-2 mins to heat through.

- Wash and peel your sweet potatoes. Cut the potatoes, slice them in half lengthwise with a sharp knife on a cutting board. Then cut each half in half again lengthwise. You will have 4 sections of sweet potato. Cut each section into fries. We want them to be quite small, about 1/4-inch wide.
- Place sweet potato fries into a large bowl, and cover with water. Let them soak for a minimum of 1 hour, or as long as overnight.
- Drain the water out and place the sweet potatoes on a towel on the counter. Pat dry with a towel. You want them to be as dry as possible.
- Place sweet potatoes in a large bowl. Add about 3 tsp of cornstarch, 3/4 tsp of garlic powder, 3/4 tsp paprika, and 1/8 tsp of black pepper. Use a large spoon and mix up the cornstarch and seasonings into the sweet potatoes. The white cornstarch will disappear. Add 3 tbsp of olive oil, and mix it up again.
