CREAMY PARMESAN ORZO
From Cooking Light, this is a wonderful side or light main dish. It is good even without the pine nuts if you don't have them on hand, also any herb will work for the basil, you just may need a little more or less depending on the herb.

Steps:
- Bring a medium pot of boiling water to a boil over medium heat. Season the water with salt, then add the orzo and cook to al dente. Drain, reserving the cooking water.
- In another pot of boiling water, over medium heat, blanch the leeks for 1 or 2 minutes, then remove and shock in a bowl of ice water. Drain and set aside.
- In a skillet, over low heat, melt the butter and add the corn and scraped milk from all 4 cobs. Cook for 1 minute and add about 1 cup reserved pasta cooking water. Bring to a simmer and cook until thick and reduced, about 10 minutes, stirring occasionally. Add more pasta cooking water if gets too dry. Add the blanched leeks and heat through, about 1 minute. Add the orzo and toss to combine. Season with salt, to taste. Transfer the corn and orzo to a serving bowl, garnish with parsley and serve immediately.

Steps:
- heat the olive oil in a skillet over about medium-high heat.
- add onion and saute for a few minutes
- add garlic and orzo pasta and saute until the orzo is starting to brown slightly.
- add a dash of salt and pepper. BE CARFUL WITH THE SALT! with the chik. broth and parmesan cheese it will be to salty if you add too much.
- Start adding the warmed chicken broth a little at a time letting it evaporate before you add more. Do this with about half of the chicken broth and then pour in the rest of it.
- Let this come back to a simmer.
- cover and reduce heat to low.
- simmer for about 30 minutes or until orzo is al dente.
- Just before serving add parmesan cheese to taste. I use a couple of palms full.
