Cordials are nostalgic and remind us of simpler times. A fast paced life is no reason to forego the finer things - like how to make homemade fruit and berry cordials! In this post, you will find three recipes which will show you how to make cordials with fruit, berries, or citrus!

Number Of Ingredients 3

5 cups berries
5 cups water
2 cups sugar

Steps:

  • Add all ingredient to a large sauce pan and stir to combine. Bring to a boil over high heat.
  • Once the mixture comes to a boil, continue to boil and stir for 5 minutes. Stir continuously and do not leave the mixture unattended.
  • Next, turn off the heat, but leave the sauce pan on the burner. Allow the mixture to steep and cool for 1 hour.
  • After the hour has passed, pour the mixture through cheesecloth to drain and to remove all of the berry seeds and/or pulp.
  • Transfer to a sterile bottle or jar. Keep refrigerated.
  • To use, pour approximately 1/4 cup of the syrup into a large drinking glass. Add ice and pour in 1 1/2 cups of cold water. Stir and enjoy.

My mum used to make this all the time when we were kids. I used to make it for my DH who absolutely loved it, but now his diet won't allow him to have it. It can be made with all Lemons or all Oranges, whatever takes your fancy, or whatever you may have an abundance of. Mum's recipe was written in pints and not litres so I have left it this way, but the amount you get depends on the size of the bottles, and when serving you may like to add more or use less cordial pending on your taste.

3 cups sugar
1 tablespoon citric acid
1 tablespoon tartaric
3 large lemons
3 large oranges
2 1/2 pints boiling water

Steps:

  • Put sugar and acids in a large mixing bowl. Grate the rind of the fruit and add the sugar and acids in bowl.
  • Squeeze juice from the fruit and add to mixture.
  • Pour the boiling water over and stir until sugar is completely dissolved.
  • Cool the mixture strain and then bottle.
  • To serve dilute with ice cold water, mixing one part of cordial to four parts of water.

For a lucky recipient, package your homemade liqueur in a decorative bottle and give it along with a few cordial glasses. Look for one of a kind bottle and glasses at antique stores.

1 1/2 cups sugar
1 cup water
3 medium oranges or 6 medium pears
1 bottle (750 ml) vodka

Steps:

  • 1. For syrup, in small pan, mix sugar and water. Bring to boiling, stirring til sugar dissolves. Remove from heat. Cool for 30 minutes.
  • 2. For orange cordial, score orange peels into four lengthwise sections; remove peels with your fingers. Reserve fruit for another use. Using a sharp knife, scrape off white portions from peels. Discard. Cut peels into strips. For pear cordial, score and thinly slice pears.
  • 3. Pour cooled syrup into a sterilized 2 quart glass jar. Add orange peel strips or pear slices. Pour vodka into jar; stir gently. Cover jar with a tight fitting lid. Allow to stand (steep) in a cool dry place for 3 weeks.
  • 4. LIne a colander or sieve with several layers of 100 percent cotton cheesecloth or coffee filters. Set colander over a large bowl. Strain fruit cordial through a sieve. Discard orange peel strips or pear slices.
  • 5. Transfer strained cordial to sterilized jars or bottles. Seal and label. Store at room temperature for p to 2 weeks. Makes about 5 cups.

This is an easy way to make cordial and it's good for gifts! Other berries such as raspberries, strawberries or blueberries may be used in place of blackberries, and rum or brandy may be used in place of the vodka.

1 quart blackberries
1 quart vodka

Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
  • Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.

To every four quarts of black currants, picked from the stem and lightly bruised, add one gallon of the best whiskey; let it remain four months, shaking the jar occasionally; then drain off the liquor and strain; add three pounds of loaf sugar and a quarter of a pound of best cloves, slightly bruised; bottle well, and seal.
  • Cherry cordial. To six pounds of cherries, add three pounds of sugar and one gallon of whiskey. Shake the jar often for the first three weeks, then bottle.
