Too Easy Granola Bars (Muesli Bars) image

I found this on the allrecipes website about 12 months ago and have altered it to suit my family. This is a regular in my kids' lunch boxes. I don't understand why people buy muesli bars when they are so fast and cheap to make from scratch. Recipe can be doubled and tripled; remember to use a larger tin though.

2 cups rolled oats
1/2 cup brown sugar
1/2 cup wheat germ
1/2 teaspoon cinnamon
1 cup flour
1/2 cup honey
1 egg, lightly beaten
1/2 cup vegetable oil
2 teaspoons vanilla
sultanas, apricots, dates (your choice, chop first and optional) or fig (your choice, chop first and optional)

Steps:

  • In a large bowl mix the rolled oats, brown sugar, wheat germ, cinnamon, and flour; stir.
  • In large measuring jug add the honey, egg, vegetable oil, and vanilla; mix.
  • Make a well and add the wet to the dry and mix like mad.
  • Generously grease an 18x28cm (9x13 inch) tray.
  • Pour in mixture; press with your fingertips.
  • Bake at 175 degrees Celsius or 350 degrees Fahrenheit for 30 to 35 minutes (or until the sides are golden).
  • Cool for 5 minutes.
  • Slice into even fingers while warm (it will be too hard once cold).
  • Cool in the baking tin.
  • Keep in a well sealed jar for up to 5 days.
