Ingredients

1 quart vanilla ice cream
3 tablespoons white Creme de Cacao
3 tablespoons green creme de menthe
1/2 cup chocolate wafer crumbs (which I prefer) or 1/2 cup chocolate syrup
whipped cream
maraschino cherry

Steps:

In each of 4 parfait glasses, alternate layers of ice cream, about 2 tsps each crème de cacao, crème de menthe, and the wafer crumbs. (or you can stir the liqueurs into the softened ice cream).
Top each with whipped cream and a cherry.
Place in freezer until serving time.

Parfaits, quick and easy when you want dessert and don't feel like baking~ Found this on line and thought yea would be great for St. Patty's Day coming up.

Ingredients

15 oreo cookies, finely chopped 1 1/2 cups or oreo cream mint cookies
10 chocolate covered mint patties, finely chopped about 1/2 cup
2 pkg 3.9 oz each jello chocolate instant pudding
1 qt 4 cups cold milk
2-4 dash(es) green food coloring
2 c thawed cool whipped topping

Steps:

1. Combine chopped cookies and mint patties. Beat pudding mixes and milk with whisk 2 min. Let stand 5 min. Meanwhile, stir food coloring into cool whip until well blended.
2. Layer half each of the pudding, cool whip and cookie mixture evenly in 1/2 parfait glasses or dessert glasses. repeat layers. Refrigerate 30 minutes.

1-1/2 cups cold 2% milk
1 package (3.9 ounces) instant chocolate pudding mix
2-3/4 cups whipped topping, divided
1 package (4.67 ounces) Andes mint candies, chopped, divided
1 chocolate crumb crust (9 inches)
1/4 teaspoon mint extract
2 drops green food coloring, optional

Steps:

In a small bowl, whisk milk and pudding mix 2 minutes. Stir in 3/4 cup whipped topping. Fold in 3/4 cup of the mint candies. Spoon into crust., Place remaining whipped topping in another bowl. Fold in extract and, if desired, food coloring. Spread over pudding mixture; top with remaining candies. Refrigerate, covered, 4 hours or until set.
