5 Minute Nacho Cheese Sauce image

The easiest 5 minute nacho cheese sauce made with no flour or roux. You will never go back once you taste this!

1 cup heavy whipping cream
2 cups freshly grated colby jack cheese
1/4 teaspoon paprika
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1 tablespoon cornstarch

Steps:

  • Heat a sauce pan on medium heat and add heavy cream
  • Once cream begins to get warm, add cheese, paprika, chili powder, garlic powder, and corn starch
  • Whisk until thick and creamy (around 5 minutes or less)
  • Serve with chips, over nachos or with any mexican themed dish!

Then the other day when making it I had some leftover rice and Velveeta and wanted to combine it with one can of chicken and rice soup and a can of rotel tomatoes. 1 c white or brown rice, leftover
4 oz velveeta cheese, cubed

2 (12 fluid ounce) cans evaporated milk
1 cup fat-free chicken broth
1/4 cup all-purpose flour
1/4 teaspoon cayenne pepper
2 cups shredded cheddar cheese

Steps:

  • Mix evaporated milk, broth and flour in medium saucepan over medium- high heat. Bring to a boil, stirring constantly. Reduce heat to medium-low; cook, stirring constantly, for 5 minutes. Stir in cayenne pepper and cheese, 1/2 cup at a time, allowing each addition to be melted before adding more cheese. Remove from heat. Serve with desired toppings.
  • Toppings: sliced green onions, additional shredded cheddar cheese, salsa and/or tortilla chips (optional).

This rich and tangy nacho cheese sauce only takes about 5 minutes to make and uses only real, simple ingredients.

2 Tbsp butter ($0.22)
2 Tbsp flour ($0.02)
1 cup whole milk ($0.30)
6 oz. medium cheddar, shredded (about 1.5 cups) ($2.25)
1/4 tsp salt ($0.02)
1/4 tsp chili powder ($0.02)

Steps:

  • Add the butter and flour to a small sauce pot. Heat and whisk the butter and flour together until they become bubbly and foamy. Continue to cook and whisk the bubbly mixture for about 60 seconds.
  • Whisk the milk into the flour and butter mixture. Turn the heat up slightly and allow the milk to come to a simmer while whisking. When it reaches a simmer, the mixture will thicken. Once it's thick enough to coat a spoon, turn off the heat.
  • Stir in the shredded cheddar, one handful at a time, until melted into the sauce. If needed, place the pot over a low flame to help the cheese melt. Do not overheat the cheese sauce.
  • Once all the cheese is melted into the sauce, stir in the salt and chili powder. Taste and adjust the seasoning as needed. If the sauce becomes too thick, simply whisk in an additional splash of milk.
