1 package (16 ounces) spiral pasta
1 small onion, chopped
1 garlic clove, minced
6 tablespoons butter, divided
6 tablespoons all-purpose flour
4 cups whole milk
1 can (14-1/2 ounces) vegetable or chicken broth
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup shredded Parmesan cheese
1/4 cup bread crumbs
1/2 teaspoon Italian seasoning

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large saucepan, saute onion and garlic in 4 tablespoons butter until tender. Stir in the flour until blended. Gradually add milk and broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheeses until melted., Melt the remaining butter; stir in bread crumbs and Italian seasoning. Drain pasta; toss with cheese sauce. Sprinkle with seasoned bread crumbs.

100g cream cheese
2 tbsp fresh pesto
320g sheet puff pastry
a little flour , for dusting
1 egg , beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Tip the cream cheese and pesto into a bowl and mix well.
  • Unroll the pastry on a lightly floured surface and cut in half lengthways. Spread the pesto mix over one half, pop the other piece of pastry on top to create a sandwich, then cut in half lengthways to create 2 long rectangles. Divide each rectangle into short strips, about 1cm thick. Twist each pastry strip and place on a baking tray lined with parchment.
  • Brush with egg and bake for 20-25 mins until risen and golden brown.

By now....Anyone who knows me, knows I'm a Cheeseaholic! about a Month ago, I paid $16.59 for about an ounce wedge of Apple smoked Provolone. Nevertheless, I'm always looking for new ways to use my favorite ingredient. And these Cheese twists, sure do the trick! This recipe is a Play off of the Barefoot Contessa's "Cheese Straws"...

Number Of Ingredients 7

1 sheets puff pastry
1 egg (lightly beaten)
1/4 c shredded sharp white cheddar
1/2 c shredded mozzerella & provolone blend
1/4 c freshly grated parmesan
1/2 tsp parsley
1/2 tsp granulated garlic

Steps:

  • 1. Brush Sheet of Puff Pastry with beaten egg
  • 2. Evenly sprinkle over Granulated Garlic
  • 3. Evenly distribute all the cheeses over the puff pastry
  • 4. Sprinkle over Parsley
  • 5. Firmly (But not too firmly) Roll over the puff pastry with a rolling pin, So cheese sticks firmly
  • 6. Cut Horizontally. then proceed to cut vertically 8 times. Leaving you with 18 short strips. Note: You can leave these Longer, Just don't cut Horizontally :)
  • 7. Take each end of a strip with both your index finger and thumb of both hands, And Gently give it 1 to 2 twists. (You'll lose a little cheese, thats totally normal) Repeat for the rest of the strips
  • 8. Put on a Baking sheet, lined with Parchment Paper, and place into 400 degree oven for 15-20 minutes (Closer to 15 for Softer-Crisp twists. Closer to 20 for Very crisp straws)
  • 9. allow to cool for 2-3 mins, and enjoy Hot :)

2 cups whole wheat flour
1/4 cup corn meal
1/2 cup Parmesan cheese
1 egg
3/4 cup water

Steps:

  • Preheat oven to 325 degrees.
  • Mix all ingredients except 1/4 cup Parmesan cheese. Knead until thoroughly mixed. Roll dough into quarter-sized balls. On a lightly floured surface, roll balls into pencil-shaped "sticks" in Parmesan so the sticks are coated. Flatten with rolling pin or by hand. Twist each about 6 to 8 times and place on ungreased baking sheet. Bake approximately 30 minutes. Cool on pan. Store in sealed container

  • PREPARE CHEESE TWISTS: Unroll the two sheets of puff pastry dough onto a lightly floured cutting board or parchment paper. Each sheet should be about 10 x 12 inches (stretch a bit if needed). In a small bowl, mix together water, egg, salt and mustard powder mustard. Lightly brush this egg wash on the puff pastry sheets. Sprinkle on the cheese and thyme (if using) evenly. Press down gently with the heel of your hand (or a rolling pin) to make the cheese stick to the dough. Using a pizza cutter or knife, cut first sheet into about 12 strips. Also cut the strips in half if you want shorter twists and twice as many. Repeat with 2nd sheet of dough.
  • BAKE: Cover two large baking sheets with parchment paper. Twist each strip into a corkscrew and lay it on the pan. Repeat until all strips have been twisted. Leave a little space (about 1/2 inch) between each twist as they will expand a bit. Bake for 10-15 minutes or until the cheese twists are golden brown. Turn half way through for more even browning.

  • Grate 6 oz. cheese on the medium holes of a box grater. Line 2 baking sheets with parchment paper. Arrange racks in upper and lower thirds of oven; preheat to 400°.
  • Dust work surface lightly with flour and unfold or unroll puff pastry on surface. Roll out lightly with a rolling pin to smooth creases, then cut pastry in half crosswise.
  • Mix 1 egg yolk and 1 tsp. water with pastry brush in a small bowl. Lightly brush egg wash across surface of 1 piece of pastry.
  • Using your fingertips and holding your hand at least 8" above the surface, sprinkle ½ tsp. paprika, then ⅛ tsp. cayenne over cheese. Season with salt (go easy if you’re already using a salty cheese like Parm), then very generously season with black pepper.
  • Place second sheet of puff pastry over top, aligning edges, and press gently to flatten. Lightly brush surface of second sheet with more egg wash.
  • Sprinkle with remaining cheese, paprika, and cayenne; season with salt and pepper.
  • Dust rolling pin with a bit more flour. Gently roll over top of pastry (yes, you’re rolling directly over the cheese). If bottom layer of pastry starts to stick, dust underneath with more flour, or if rolling pin starts to stick to cheese, dust pin with more flour.
  • Using your knife, cut rectangle into ½"-thick strips. For fewer straws that are longer, cut lengthwise. For more straws that are shorter (and easier to handle), cut crosswise.
  • Working one strip at a time, transfer to prepared sheets and twist 2 ends in opposite directions several times. Repeat, spacing twists about 1" apart, until you’ve used all the pastry and filled both sheets.
