1/2 cup Panko*
4 ounces cream cheese, softened
1/4 cup white cheddar cheese
1/4 cup sharp cheddar cheese
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Kosher salt and freshly ground black pepper, to taste
6 jalapeños, halved lengthwise, seeds and membranes removed

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper; set aside. Heat olive in a large skillet over medium high heat. Add Panko and cook, stirring, until browned and toasted, about 3 minutes. Spoon the filling into each jalapeño cavity. Place on prepared baking sheet, cavity side up, and bake until the filling is runny and golden, about 15 to 20 minutes.

4 green jalapeno peppers
4 red jalapeno peppers
9 ounces soft goat cheese
¾ cup finely grated Cheddar cheese
½ cup finely shredded Monterey Jack cheese
1 teaspoon chili powder
1 teaspoon ground cumin
¼ teaspoon ground coriander
¼ cup gluten-free bread crumbs
2 tablespoons cotija cheese
1 tablespoon dried Mexican oregano
2 tablespoons fresh thyme leaves

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Cut jalapenos in half lengthwise. Put on disposable gloves to remove the seeds and membranes.
  • Mix goat cheese, Cheddar cheese, Monterey Jack, chili powder, cumin, and coriander until well combined. Mix bread crumbs, cotija, and oregano together in a separate bowl.
  • Fill each jalapeno half with equal amounts of the goat cheese mixture. Gently roll the tops of the filled peppers in the bread crumb mixture. Arrange peppers on the prepared baking sheet.
  • Bake in the preheated oven until bread crumbs are browned, about 20 minutes. Garnish with fresh thyme.

After a number of unsatisfactory attempts at making deep-fried poppers, I modified a recipe by Emeril that is much easier than frying and everyone in our family agrees that these are at least as good as -- if not better than -- any fried poppers they have had! We love hot peppers and always make a lot of these from the ones we grow in our garden every year.

8 ounces cream cheese, softened
1 cup finely shredded Cheddar cheese
1 ½ tablespoons taco seasoning mix
12 jalapeno peppers, halved lengthwise and seeded
2 tablespoons fine bread crumbs, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with foil or parchment paper.
  • Blend cream cheese, Cheddar cheese, and taco seasoning together in a bowl; spread into jalapeno halves and arrange onto prepared baking sheet. Sprinkle bread crumbs over the cheese filling.
  • Bake until the peppers are just tender, 20 to 30 minutes.

1/2 cup low-fat cheddar cheese, shredded
1 tablespoon fat-free mayonnaise
8 jalapeno peppers
1/4 cup fat free egg substitute
3/4 cup panko breadcrumbs

Steps:

  • Preheat oven to 350ºF. Coat a large baking sheet with cooking spray.
  • In a medium bowl, combine cream cheese, cheddar cheese and mayonnaise; mix well and set aside.
  • Halve jalapenos lengthwise and remove seeds (wear gloves if possible). Stuff jalapeno halves with cream cheese mixture.
  • Place egg substitute in a shallow dish. Place Panko bread crumbs in a separate shallow dish.
  • Dip stuffed jalapeno halves into egg substitute and then roll in bread crumbs to coat.
  • Transfer jalapenos to prepared baking sheet and coat with cooking spray.
  • Bake until filling is bubbly, about 30 minutes. Serve hot.
