SAUTEED ZUCCHINI AND ROASTED RED PEPPERS



Sauteed Zucchini and Roasted Red Peppers image

This is really easy to add other vegetables to, like broccoli or green beans, and is a super-easy side dish.

2 small zucchini, halved lengthwise and cut into half-moons
1 (10 ounce) jar roasted red peppers packed in oil
1 lemon, juice of

Steps:

  • Slice the red peppers into strips.
  • Pour the oil into a skillet and heat over med-high heat.
  • Add zucchini and sauté until tender, about 4 minutes.
  • Add lemon juice and red pepper strips and sauté 1-2 more minutes.

ZESTY ZUCCHINI, ROASTED RED PEPPER AND PENNE PASTA



Zesty Zucchini, Roasted Red Pepper and Penne Pasta image

This was adapted from a recipe found some years ago in a newspaper. The red pepper flakes are what gives it the heat, so if you don't like things hot, use sparingly.

Number Of Ingredients 10

3 medium zucchini (about 1 1/2 pounds)
1 jar(s) (12 ounces) roasted red peppers packed in water
2 large cloves garlic, chopped
2 Tbsp capers, drained
1/8-1/2 tsp red pepper flakes, more or less depending on how much "heat" you like
2 Tbsp olive oil
2 Tbsp butter
1/4 c fresh basil, chopped
salt and pepper, to taste
8 oz penne pasta

Steps:

  • 1. Slice zucchini in half lengthwise. Cut each half into 4 slices (lengthwise). Cut each slice into 4 pieces. Julienne roasted red peppers.
  • 2. Heat butter and oil in large skillet. Add garlic, capers and red pepper flakes. Saute 1 minute.
  • 3. Stir in roasted red peppers, heat through - about 1 minute.
  • 4. Add zucchini, cover and cook over medium heat about 5-7 minutes, stirring occasionally. Turn heat to low and keep warm while cooking penne.
  • 5. Cook penne according to package directions. Drain. Combine in a large serving dish with basil, zucchini and peppers. Season with salt and pepper to taste. Mix well and serve.

Zucchini Stuffed with Feta and Roasted Red Peppers image

two 6-ounce zucchini
1/3 cup finely chopped drained bottled roasted red peppers
1/3 cup finely chopped drained feta
1/8 teaspoon dried oregano, crumbled
freshly ground black pepper to taste

Steps:

  • Preheat broiler.
  • Cut zucchini crosswise into 3/4-inch-thick sections, discarding ends, and with a melonballer scoop out center of each section, leaving 1/16-inch-thick shells and reserving centers for another use. In a steamer set over simmering water steam zucchini shells, covered, 4 minutes, or until barely tender but still bright green. Transfer shells to paper towels to drain upside down.
  • In a small bowl stir together roasted peppers, feta, oregano, and black pepper and mound in each shell. Arrange shells in a lightly oiled shallow flameproof baking dish and broil about 4 inches from heat until bubbling and beginning to turn golden, about 4 minutes.

1 medium zucchini
2 tablespoons lemon juice
1/2 package (8-oz size) cream cheese, softened
1 tablespoon chopped fresh chives
Dash salt
1 roasted red bell pepper, thinly sliced
2 tablespoons crumbled feta cheese

Steps:

  • Use mandoline slicer or knife to slice zucchini into 1/4-inch-thick slices. Place slices in small bowl. Add 1 tablespoon of the lemon juice; toss.
  • In another small bowl, beat remaining 1 tablespoon lemon juice, the cream cheese, chives and salt with whisk until well blended.
  • Arrange zucchini slices on large platter. Top each slice with generous teaspoon cream cheese mixture, a few red pepper slices and some crumbled feta cheese. Serve cold.
