Zia Zip Spice Mix (Formerly: NM Zippy Spice Mix)
1 Tbs. each black pepper (coarse ground) chipotle (Hatch Mild), cumin, garlic powder, Himalayan Crystal salt, NM green chile powder (Hatch HOT!), onion powder, paprika, thyme
1 tsp. each: cayenne chives, cilantro, coriander, lemon oil (OR lemon peel OR lemon zest), NM red chile powder (Hatch XXX-HOT!), oregano
(Yields 1 large spice container full)
Hot 'n Spicy NM Hummus
Step 1 (Blend these ingredients until smooth)
3 Tbs. olive oil (extra virgin cold pressed)
1/2 cup lemon juice
1 avocado
1 or 2 bell peppers (red or orange)
3 sun-dried tomatoes
2 cloves garlic minced
1/4 cup tahini
Step 2 (Blend in these ingredients until creamy)
2 cups butter beans (OR lima beans OR garbanzo beans)
1 to 3 tsp. Himalayan Crystal salts to taste
1 tsp. Mediterranean herbs
1 tsp. cumin
1 to 3 tsp. Zia Zip Spice Mix
Optional:
Add flax seed meal to thicken or water (juice) fro
(Yields 1 quart Hot 'n Spicy NM Hummus store extra in a container and refrigerate)
Enchanted Green Chile PeaCado Dip (Formerly: NM Gr
1/2 cup chopped fresh cilantro (OR 8 tsp. dried cilantro OR chopped fresh parsley)
2 hot NM green chili peppers
2 cups frozen petite peas thawed
1 pkg. fresh tofu drained
2 Tbs. Avocado oil
1 Tbs. lemon juice
1 tsp. ground cumin
1/4 tsp. freshly ground pepper
1 to 3 tsp. Himalayan Crystal salts to taste
(Yields 1 quart Enchanted Green Chile PeaCado Dip store extra in a container and refrigerate)
Zia Hot 'n Spicy PeaCado Hummus
2 cups each Hot 'n Spicy NM Hummus Enchanted Green Chile PeaCado Dip
1 to 3 Hot NM green chili peppers to taste
2 Tbs. Zia Zip Spice Mix
(Yields 1 quart Zia Hot 'n Spicy PeaCado Hummus refrigerate)

Steps:

  • Zia Zip Spice Mix (Formerly: NM Zippy Spice Mix) Mix the spices up. Put some in a shaker for present use. Put excess in an air tight bag and freeze or store in a cool dark place for use later. Hot 'n Spicy NM Hummus Step 1: In a food processor or blender, process the oil, lemon juice, avocado, bell peppers, sun-dried tomatoes, garlic, and tahini until smooth (15-20 minutes). Step 2: Add the beans and seasonings and process until creamy (15-20 minutes). Optional: You may need to thin with extra water (from the beans) or add flax seed meal to thicken to your desired consistency. Refrigerate for one hour to let flavors harmonize. Serve on wraps, with raw veggies, or in pita sandwiches. Great Variations: Add an avocado to this recipe to make the hummus green and creamier, OR add 1 or 2 red or orange bell peppers to make the hummus sweeter and a more vibrant orange, OR add a few sun-dried tomatoes for a more flavorful and deeper-colored hummus. Experiment and enjoy! Enchanted Green Chile PeaCado Dip (Formerly: NM Green Chile PeaCado Dip) Combine the cilantro with all the remaining ingredients in a food processor or blender and process until smooth, approximately 20-30 minutes on high. Refrigerate for one hour to let flavors harmonize. Serve with chips or veggies. Zia Hot 'n Spicy PeaCado Hummus (Formerly: Hot 'n Spicy NM Green Chile PeaCado Hummus) Combine equal portions of Spicy NM Hummus and NM Green Chile PeaCado Dip. 1 large onion, chopped
4 cloves garlic, minced
1 tablespoon Italian seasoning
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon red pepper flakes
4 medium potatoes, cubed
4 cups chicken broth
4 cups chopped kale
1 cup half-and-half

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
  • Heat oil in the cooker. Add sausage and cook until no longer pink, about 3 minutes. Stir in onion and garlic; cook until softened and translucent, about 3 minutes. Stir in Italian seasoning, salt, pepper, and red pepper flakes. Add potatoes and chicken broth. Close and lock the lid. Select high pressure and set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.
  • Stir kale into the cooker. Select Saute function. Cook, uncovered, for 2 minutes. Stir in half-and-half. Turn off the cooker and serve.

¼ cup butter
1 teaspoon dried rosemary, crushed
¼ teaspoon dried thyme, crushed
¼ teaspoon garlic powder
1 teaspoon dried parsley
1 teaspoon salt
1 tablespoon Dijon mustard
½ teaspoon coarsely ground black pepper
1 ½ tablespoons Worcestershire sauce
¼ teaspoon ground cumin
⅛ teaspoon cayenne pepper
⅓ cup beef drippings

Steps:

  • Melt butter in a small saucepan over medium heat. Stir in the rosemary, thyme, garlic powder, parsley flakes and salt. 1-1/2 cups cooked rice
1 can (4 ounces) chopped green chilies

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add the butter, zucchini, mushrooms and onions; cook and stir until vegetables are tender. Drain. 1 pound ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup milk
⅔ cup ketchup
½ cup shredded Cheddar cheese
¼ cup chopped green bell pepper
1 cup dried minced onion
1 teaspoon salt, or to taste
1 cup crushed potato chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Bring a saucepan of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente; drain.
  • Cook ground beef in a skillet over medium heat, stirring until evenly browned; drain. Stir in cooked macaroni, condensed soup, milk, and ketchup until well blended. Mix in the Cheddar cheese, green pepper, and minced onion. Season with salt, and pour into a 2 quart baking dish.
