CHIPOTLE MASHED POTATOES WITH BACON
Spice up mashed potatoes with chipotle chiles in adobo and then seal the deal with chopped bacon.

Steps:
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the bacon, chopped chipotles, 2 teaspoons salt and a few grinds of pepper.
CREAMY MASHED POTATOES
Steps:
- Peel the potatoes and cut into uniform 1/2-inch pieces. Place into a 4-quart saucepan and cover with cold water by at least 1-inch. Cover, set over high heat and bring to a boil. Once boiling, remove the lid, decrease the heat to maintain a simmer and cook until the potatoes can easily be crushed with a pair of tongs, approximately 15 to 20 minutes. Drain in a colander.
- Put the cream, butter, salt and pepper into the now empty 4-quart saucepan and place back over the heat until the butter has melted. Remove from the heat and set a food mill fitted with the smallest die, on top of the pot. Add 1 cup of potatoes at a time to the mill. Once all of the potatoes have passed through the mill, stir to combine. Taste and adjust the seasoning, if necessary. Serve immediately.
WHITE CHEDDAR AND CHIPOTLE MASHED POTATOES
Steps:
- Boil potatoes and garlic in large pot of salted water until potatoes are very tender, about 20 minutes. Drain. Return to pot. Mash with potato masher. Immediately add cheese, milk, chilies and butter and mash until smooth and cheese is melted. Season to taste with salt and pepper.
CHIPOTLE MASHED SWEET POTATOES
Steps:
- Put the sweet potatoes in a steamer basket and put the steamer in a large pot of simmering water that is 1 inch from the bottom of the basket. Cover and steam over medium-high heat for 20 minutes, or until the sweet potatoes are fork tender.
- Remove the steamer basket, pour the water out of the pot and dump the sweet potatoes in the pot. Add the butter and salt and mash with a potato masher. Add the chile and sauce and continue mashing to combine. Serve immediately.
CHIPOTLE-CHEDDAR MASHED POTATOES

Steps:
- Remove 1 chile and 1 tablespoon adobo sauce from can.
- (more if you wish, to taste) Chop chile to measure 1 tablespoon.
- Reserve remaining chiles and adobo sauce for another use.
- Place potato and garlic in a large dutch oven, cover with water and bring to boil.
- Cook 15 minutes or until potato is tender, Drain.
- Return potato mixture to the dutch oven.
- Add chopped chile and adobo sauce, cheese, and remaining ingredients.
- Mash to desired consistency with a potato masher.
- Cook 3 minutes over medium heat or until thoroughly heated, stirring constantly.

- Peel the potatoes and cut in chunks. Place in pan and cover with water. Salt the water with 1 tablespoon salt.
- Cover, and bring to a boil. Cook until tender (usually 15-20 minutes). Drain off water.
- Add milk, sour cream and butter and mash the potatoes until smooth using a potato masher.
- Add the chipotle and green onions. Mash again. Salt to taste. Serve.

CHIPOTLE MASHED POTATOES

- 1. In a medium saucepan, bring about 2 quarts of water to a boil. Place the potatoes in boiling water and cook, over medium heat, stirring occasionally, until the potatoes are easily pierced with a fork, about 20 minutes. Drain the potatoes in a colander.
- 2. To a blender or food processor fitted with a steel blade, add the chipotle peppers and garlic and process until minced, about 5 seconds. Add the potatoes, milk, butter, parsley, paprika, and salt and process until the mixture is smooth, about 10 seconds. Stop to scrape the sides at least once. (I like to leave a few lumps for a "home-style" texture.)
- 3. Transfer the potatoes to a bowl and serve immediately.
GARLIC, WHITE CHEDDAR AND CHIPOTLE MASHED POTATOES

- Preheat oven to 350°F. Toss garlic with oil in baking pan. Cover with foil; bake 30 minutes. Uncover; bake until garlic is tender, about 15 minutes. Cool; peel and chop.
- Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain. Transfer potatoes to large bowl. Add garlic and remaining ingredients. Using electric mixer, beat mixture until smooth. Season to taste with salt and pepper. (Can be prepared 2 hours ahead. Cover; let stand at room temperature. Rewarm, stirring constantly, before serving.)
CHIPOTLE MASHED POTATOES
Steps:
- In a kettle combine potatoes with enough salted cold water to cover by 2 inches and boil potatoes until very tender, about 30 minutes. Drain potatoes in a colander, and, when just cool enough to handle, peel potatoes. Return warm potatoes to kettle and with a potato masher mash potatoes with milk over very low heat. Chop chiles and mash into potatoes with sour cream and salt and pepper to taste. Potatoes may be made up to this point 1 day ahead and chilled, covered. Reheat potatoes, covered, in a 350°F. oven about 30 minutes and season with salt and pepper. Chop cilantro and stir into potatoes.

- Rinse and quarter the potatoes. In a large pot, bring salted water to a boil. Add the potatoes and cook for about 15 minutes over medium- high heat, or until thoroughly cooked and soft. Drain.
