Zesty Sweet & White Potato Spears image

Mix it up at the dinner table with this side dish of white and sweet potatoes cut into spears and baked with Parmesan and parsley.

1-1/2 lb. sweet potatoes (about 3), cut into thin spears
1-1/2 lb. baking potatoes (about 3), cut into thin spears
1/2 cup KRAFT Lite Zesty Italian Dressing
1/4 cup KRAFT Grated Parmesan Cheese
2 Tbsp. chopped fresh parsley

Steps:

  • Heat oven to 375°F.
  • Toss potatoes with dressing.
  • Spread into single layer on rimmed baking sheet sprayed with cooking spray.
  • Bake 1 hour or until done, turning after 30 min. and sprinkling with cheese for the last 5 min. Top with parsley.

1 1/2 lbs sweet potatoes, cut into spears (about 3)
1 1/2 lbs white potatoes, Idaho (about 3) or 1 1/2 lbs russet potatoes, cut into spears (about 3)
1/2 cup zesty Italian dressing
1/3 cup parmesan cheese, grated
3 tablespoons fresh parsley, chopped
salt
pepper

Steps:

  • Preheat oven to 375*F.
  • Toss potatoes with dressing.
  • Place on a lightly greased baking sheet or 15"x10"x1" baking pan.
  • Cook 30 minutes. Turn potatoes, and cook an additional 30 minutes, sprinkling with cheese during the last 5 minutes of baking.
  • Remove from oven and sprinkle parsley over potatoes. Salt and pepper to taste. Enjoy!
  • Makes 8 servings.

1/3 cup barbecue sauce (Diana, spicy or original)
1 teaspoon all-purpose flour
1/2 teaspoon chili powder
1/2 teaspoon salt
2 sweet potatoes, peeled and cut into wedges
1/4 cup light mayonnaise
1/4 teaspoon lime zest

Steps:

  • Preheat the grill to medium.
  • Measure out the BBQ sauce and remove 1 tablespoon and reserve. Combine the remaining sauce with the flour, chili powder and salt. Toss with the sweet potatoes.
  • Lay the sweet potato wedges, two deep, in a row on a large piece of heavy-duty foil. Fold over the foil and seal tightly.
  • Cover the grill and cook the packet, turning often, for 30 minutes or until the potatoes are tender and well browned.
  • Stir the reserved sauce with the mayonnaise and lime zest. Serve with the potato wedges.
