1 lb ground beef
3/4 cup onion, chopped
1/2 cup green pepper, chopped
2 garlic cloves, minced
3 tablespoons chili powder
1 teaspoon salt
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (15 ounce) can kidney beans, drained, rinsed
1/3 cup mincemeat, 1/2 of a 27 ounce jar of NONE SUCH Ready-to-Use Mincemeat
1/2 cup water

Steps:

  • In large skillet over medium-high heat, brown the ground beef. Drain beef and return to the skillet.
  • Add the onions, peppers, garlic, chili powder and salt; cook over medium heat for 5 minutes, stirring occasionally.
  • Add tomatoes, beans, mincemeat and water; simmer uncovered for 30 to 40 minutes, stirring occasionally.
  • Store leftovers covered in refrigerator.

This spicy and satisfying chili is made in the slow cooker. Start it before you head off to work, and return to a homemade meal ready to eat! I like to put two scoops of sour cream in with my bowl.

2 pounds ground beef
2 (16 ounce) cans kidney beans, rinsed and drained
2 (14.5 ounce) cans diced tomatoes, drained
1 (8 ounce) can tomato sauce
2 onions, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
3 tablespoons chili powder
1 tablespoon cayenne pepper
2 teaspoons salt
1 teaspoon ground black pepper
½ cup shredded Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat and stir in ground beef. Cook and stir until beef is crumbly, evenly browned, and no longer pink, about 7 minutes. Drain and discard any excess grease.
  • Combine ground beef, kidney beans, diced tomatoes, tomato sauce, onions, bell pepper, garlic, chili powder, cayenne pepper, salt, and black pepper in a slow cooker. Cover and cook on Low for 10 hours, or High for 4 hours.
  • Garnish each serving with Cheddar cheese.

1-1/2 pounds ground beef
1-1/2 pounds bulk Italian sausage
3 cans (14-1/2 ounces each) stewed tomatoes
2 cans (16 ounces each) kidney beans, rinsed and drained
1 cup chopped onion
1 large green pepper, chopped
1 can (6 ounces) tomato paste
2 jalapeno peppers, finely chopped
2 tablespoons chili powder
2 tablespoons white vinegar
1 tablespoon spicy brown mustard
1 tablespoon dried oregano
2 garlic cloves, minced
1-1/2 teaspoons ground cumin
1-1/2 teaspoons hot pepper sauce
1 teaspoon salt
1 teaspoon paprika
Sour cream, optional

Steps:

  • In a Dutch oven, cook beef and sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. Add the remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes, stirring frequently. If desired, serve with additional jalapeno and sour cream.

1 teaspoon canola oil
1 can (4 ounces) green chilies

1/8 teaspoon hot pepper sauce
1/8 teaspoon cayenne pepper
2 cans (15-1/2 ounces each) great northern beans, drained
3 cups reduced-sodium chicken broth
3 cups cubed cooked turkey breast

Steps:

4 pounds beef top round steak, cut into 1-inch cubes
4 garlic cloves, minced
1/4 cup canola oil
3 cups chopped onion
2-3/4 cups water, divided
2 cups sliced celery
3 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (15 ounces each) no-salt-added tomato sauce
1 jar (16 ounces) salsa
3 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon salt, optional
1 teaspoon pepper
1/4 cup all-purpose flour
1/4 cup yellow cornmeal
Shredded reduced-fat cheddar cheese, reduced-fat sour cream, sliced green onions and sliced ripe olives, optional

Steps:

  • In a Dutch oven over medium-high heat, saute steak and garlic in oil until browned. Add onion; cook and stir for 5 minutes. Stir in 2 cups water and next nine ingredients; bring to a boil. , Reduce heat; cover and simmer 2 hours or until tender. Combine flour, cornmeal and remaining water; stir until smooth. Bring chili to a boil. Add flour mixture; cook and stir 2 minutes or until thickened. If desired, garnish with reduced-fat cheese, reduced-fat sour cream, onions and olives.

1/2 lb bacon, chopped
1 lb ground beef (15% fat free)
1 lb ground pork
1 medium maui onion, chopped
3 garlic cloves, minced
1/2 cup water
1 teaspoon cayenne pepper
1 teaspoon fresh ground black pepper
1 bay leaf
2 tablespoons chili powder (to taste)
2 teaspoons ground cumin
1 teaspoon dried oregano
1 (16 ounce) can kidney beans, drained and rinsed
1 (16 ounce) can black beans, drained and rinsed
2 cups tomatoes, roughly chopped (or 14.5 oz canned tomatoes)
1 (6 ounce) can tomato paste
26 ounces beef stock
1 small bell pepper, chopped
1 teaspoon sugar (optional)
1 pinch sea salt (optional)

Steps:

  • In a large, heavy pot, fry the bacon; stirring frequently, until browned and slightly crispy. Drain all but 2 tablespoons of the fat.
  • Add the ground beef and pork, stirring occassionally until almost done.
  • Add onion and garlic, stirring occassionally, until onons are slightly tranluscent.
  • Add the water. Bring to a boil, then lower heat to a simmer.
  • Add cayenne, black pepper, bay leaf, chili powder, cumin, oregano and fresh tomatoes. Simmer for 20 minutes.
  • Add the remaining ingredients. Simmer for another 30 minutes.
  • NOTE: When grocer is out of ground beef and/or pork, I purchase the pre-chopped meats used for stir-fry dishes and just chop them a bit more and use that.

We really liked the mix of meat in this recipe... beef and Italian sausage, oh my! Also, the addition of lime juice and honey sweetens the flavor a bit, making for a more mild (but still tasty!) chili.

1 lb extra lean ground beef
8 oz light italian sausage (casing removed)
5 tsp minced garlic
1 c diced red onions
1 c diced celery
1 c diced green pepper
1 1/2 Tbsp chili powder
1 1/2 tsp ground cumin
1 1/2 tsp dried oregano
1 tsp ground coriander
1/4 tsp ground black pepper
1 can(s) diced tomatoes (19 oz.)
1 can(s) tomato sauce (14 oz.)
1 c beef broth
1 can(s) red kidney beans (19 oz.)
1 can(s) beans in tomato sauce
3 Tbsp chopped fresh cilantro
1/2 c grated medium cheddar cheese
1 Tbsp lime juice
1 Tbsp honey

Steps:

  • 1. Cook sausage, beef, garlic and onions in a large pot over medium-high heat until meat is no longer pink. Add celery and green pepper. Cook and stir for 3 minutes, or until vegetables begin to soften.
  • 2. Stir in chili powder, cumin, oregano, coriander, and black pepper. Cook for 1 more minute. Add undrained tomatoes, tomato sauce and beef broth. Bring mixture to a boil. Reduce heat to low. Cover and simmer for 20 minutes, stirring occasionally.
  • 3. Add beans and simmer, covered for 1 hour. Remove from heat. Stir in fresh cilantro, lime juice and honey. Serve chili topped with grated cheddar cheese, if desired.

  • Cut sausage into 1/2-in. pieces. Trim pork and cut into 1/2-in. pieces. , In a 5-qt. kettle or Dutch oven, cook sausage, pork and beef over medium heat, until sausage and beef are no longer pink and the pork juices run clear; drain, reserving 1 tablespoon drippings. Set meat aside. , Saute onions, green pepper and garlic in reserved drippings until tender. Add the next 12 ingredients. Return meat to the pan; bring to a boil.
