Steps:
- In large skillet over medium-high heat, brown the ground beef. Drain beef and return to the skillet.
- Add the onions, peppers, garlic, chili powder and salt; cook over medium heat for 5 minutes, stirring occasionally.
- Add tomatoes, beans, mincemeat and water; simmer uncovered for 30 to 40 minutes, stirring occasionally.
- Store leftovers covered in refrigerator.

- Heat a large skillet over medium-high heat and stir in ground beef. Cook and stir until beef is crumbly, evenly browned, and no longer pink, about 7 minutes. Drain and discard any excess grease.
- Combine ground beef, kidney beans, diced tomatoes, tomato sauce, onions, bell pepper, garlic, chili powder, cayenne pepper, salt, and black pepper in a slow cooker. Cover and cook on Low for 10 hours, or High for 4 hours.
- Garnish each serving with Cheddar cheese.

Steps:
- In a large, heavy pot, fry the bacon; stirring frequently, until browned and slightly crispy. Drain all but 2 tablespoons of the fat.
- Add the ground beef and pork, stirring occassionally until almost done.
- Add onion and garlic, stirring occassionally, until onons are slightly tranluscent.
- Add the water. Bring to a boil, then lower heat to a simmer.
- Add cayenne, black pepper, bay leaf, chili powder, cumin, oregano and fresh tomatoes. Simmer for 20 minutes.
- Add the remaining ingredients. Simmer for another 30 minutes.
- NOTE: When grocer is out of ground beef and/or pork, I purchase the pre-chopped meats used for stir-fry dishes and just chop them a bit more and use that.

KIMMY'S ZESTY CHILI
We really liked the mix of meat in this recipe... beef and Italian sausage, oh my! Also, the addition of lime juice and honey sweetens the flavor a bit, making for a more mild (but still tasty!) chili.

- 1. Cook sausage, beef, garlic and onions in a large pot over medium-high heat until meat is no longer pink. Add celery and green pepper. Cook and stir for 3 minutes, or until vegetables begin to soften.
- 2. Stir in chili powder, cumin, oregano, coriander, and black pepper. Cook for 1 more minute. Add undrained tomatoes, tomato sauce and beef broth. Bring mixture to a boil. Reduce heat to low. Cover and simmer for 20 minutes, stirring occasionally.
- 3. Add beans and simmer, covered for 1 hour. Remove from heat. Stir in fresh cilantro, lime juice and honey. Serve chili topped with grated cheddar cheese, if desired.
