California sushi roll without the hassle of rolling sushi. My 8 year old son created this recipe. He diced everything using the Vidalia Chopper--a really good tool to have in the kitchen when cooking with kids. He is so proud! This tastes better after chilling at least 1 hour, but overnight is better. Serving size is approximate. Cooking time is really for chill time. You can adjust ingredients to your own preference.

2 (8 ounce) packages imitation crabmeat
1/2 seedless cucumber, peel left on
1 avocado
1 cup cooked rice, prepared
salt
pepper

Steps:

  • Using a Vidalia Chopper (or dice by hand), dice up cucumber and imitation crab.
  • Peel avocado and dice by hand because it's too mushy to go through the chopper.
  • Add avocado to the cucumber and crab mixture.
  • Add rice and mix well.
  • Add salt and pepper to taste.
  • Chill at least one hour.

SALMON SUSHI SALAD

A light lunch or dinner, this salmon salad is a homemade version of your favourite sushi platter, with edamame beans, avocado and pomegranate seeds

100g sushi rice
50g frozen edamame beans
1 tbsp sesame oil
1 sheet nori , torn
handful pomegranate seeds
50g smoked salmon , cut into bite-sized slices
1 small avocado , stoned, peeled and sliced
1 tsp black sesame seeds
sushi ginger , to serve (optional)
1 tsp vegetable oil
2 tsp pomegranate molasses
1 tsp soy sauce

Steps:

  • Rinse the sushi rice really well and put in a small saucepan covered with 200ml cold water. Bring to the boil, then simmer for 10 mins with the lid on. Remove from the heat and keep the lid on for 15 mins before transferring to a serving bowl.
  • Meanwhile, pour boiling water over the edamame and leave to defrost until the rice is cooked. To make the dressing, combine all the ingredients, then set aside.
  • Heat the sesame oil in a non-stick pan and add the nori. Cook for 1-2 mins on a medium heat until crisp.
  • To assemble the salad, drain the edamame, then tip onto the rice along with the pomegranate seeds and salmon. Fan out the avocado slices on top and sprinkle over the black sesame seeds. Drizzle over the dressing and top with slices of sushi ginger, if you like.

We LOVE sushi, and it makes a wonderful appetizer for a summer Shabbos meal. But sushi takes time to prepare. This Sushi Salad is a great way to enjoy the great taste of sushi without all the time and effort required to prepare sushi. 1 cup sushi rice (uncooked)
2 carrots
2 stalks celery
1 mango
1 cucumber
2 tablespoons rice vinegar
1 tablespoon sugar
1 teaspoon salt
1/8 cup light soy sauce
1 teaspoon wasabi (optional)
1 sheet sushi fresh seaweed

Steps:

  • In a pot with a cover, bring 1 1/2 cups of water to a boil.
  • Add 1 cup of sushi rice. Turn heat down to low, cover, and cook for 18 minutes.
  • Turn off the burner, and let the rice steam in the covered pot for 5 minutes.
  • Remove the cover and stir the rice vinegar, sugar and salt into the rice. Flake the rice with a fork, and let cool.
  • Cut mango, cucumber, and celery into small squares.
  • Grate carrot.
  • Stir the vegetables into the cooled rice.
  • In a small bowl, mix the soy sauce with the wasabi. Then stir the soy and wasabi mixture into the rice.
  • Tear sushi seaweed paper into small pieces and sprinkle on top of the salad.

2 cups water
1 cup sushi rice, rinsed
¼ cup seasoned rice vinegar
1 tablespoon white sugar
1 teaspoon salt
1 medium carrot, peeled and thinly sliced into 1-inch strips
½ cucumber, peeled and thinly sliced into 1-inch strips
6 pieces imitation crab sticks, chopped, or more to taste
¼ cup pickled ginger
2 tablespoons water
2 tablespoons wasabi sauce
1 tablespoon vegetable oil
2 sheets nori, torn into nickel-sized pieces
½ ripe avocado, cut into small pieces
1 tablespoon sesame seeds, or as needed

Steps:

  • Bring water and rice to a boil in a saucepan, about 5 minutes. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes.
  • Combine rice vinegar, sugar, and salt to a slight boil in a saucepan, about 5 minutes. Stir until dissolved and let cool 2 minutes. Pour mixture over cooked rice. Transfer to a serving bowl.
  • Combine carrot, cucumber, crab sticks, ginger, water, wasabi, and oil in a bowl.
  • Combine wet crab mixture with cooked rice in the serving bowl. Add avocado and nori just before serving. Sprinkle sesame seeds on top.

1 cup green or red Swiss chard, stemmed and finely chopped
1 garlic clove
1/4 teaspoon coarse salt
1 cup low-fat Greek yogurt
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
1/8 teaspoon cayenne pepper
2 whole-wheat pitas, cut into wedges and toasted

Steps:

  • Prepare an ice bath; set aside. Bring a large saucepan of water to a boil. Add chard; cook until just tender, 3 to 5 minutes. Drain. Immediately plunge into ice bath to stop the cooking. Drain.
  • Using a mortar and pestle, grind garlic and salt into a paste. Stir chard, yogurt, garlic paste, oil, lemon juice, and cayenne pepper in a medium bowl. Serve with pita wedges.

I created this yummy salad because I love sushi, but have neither the equipment nor the patience to make sushi rolls. For the best sushi rice, a rice cooker is a necessity. This recipe can be easily adapted to reflect your own favorite variety of sushi.

1 ½ cups sushi rice, or Japanese short-grain white rice
2 cups water
½ cup rice wine vinegar
¼ cup sugar
⅛ cup sake
12 ounces imitation crabmeat, flaked
1 cup seeded and chopped cucumber
1 avocado, chopped
1 tablespoon soy sauce, or to taste

Steps:

  • Rinse rice in a strainer under cold water until water runs clear. Transfer rice to a medium saucepan, add 3 cups water, and bring to a boil. Reduce heat to low, cover, and cook under rice is tender and water is absorbed, about 20 minutes.
  • Meanwhile, combine rice wine vinegar, sugar, and sake in a microwave-safe bowl. Microwave on high until sugar is completely dissolved, about 1 minute.
  • Place cooked rice in a large bowl. Stir in vinegar mixture until well combined and let sit for 2 minutes. Stir again. Add imitation crabmeat, cucumber, and chopped avocado; mix well. Use soy sauce to season individual portions.

1 cup sushi rice (uncooked)
1 red pepper
1 yellow pepper
1 orange bell pepper
1 cucumber
1 carrot
1 tablespoon rice vinegar
1/2 cup light soy sauce
1/2-1 teaspoon wasabi
2 sheets sushi fresh seaweed
1 cup imitation crabmeat (optional)

Steps:

  • Cook rice let cool for 5 minutes.
  • While rice is cooking cut all 3 peppers into medium square pieces (about the size of your pinky finger nail).
  • Cut cucumber into slices (not peeled) then cut each slice into fours.
  • Grate carrot.
  • Add rice vinegar to the rice and mix up.
  • Add all vegetables to rice and mix up.
  • Take soy sauce and put it in a closed lid container with wasabi and shake until all wasabi has dissolved into soy sauce.
  • Mix soy/wasabi sauce into rice.
  • Crunch up sushi seaweed paper onto the top of salad.
  • EAT!
  • Put imitation crab on salad as desired.
  • Also eat with pickled ginger on the side if you would like.
  • It's also good if you put some steamed sliced white mushrooms into the salad as well, but it's awesome without as well.
  • ENJOY.
  • For Vegetarian option, do not use the crabmeat option.
