Horseradish-Yogurt Sauce image

This fresh new take on classic horseradish sauce makes a lot, but you're going to want extra. It's the perfect companion for both our Porcini-Rubbed Beef Rib Roast and our Crispy Baby Yukon Gold Potatoes.

Number Of Ingredients 6

4 cups Greek-style yogurt, preferably full-fat
1 (6-ounce) jar prepared horseradish
2 garlic cloves, finely grated
2 teaspoons kosher salt
3/4 teaspoon crushed red pepper flakes
1/2 teaspoon freshly ground black pepper

Steps:

  • Whisk yogurt, horseradish, garlic, salt, red pepper, and black pepper in a medium bowl.
  • Do Ahead
  • Sauce can be made 1 day ahead; transfer to an airtight container and chill.

Great on smoked salmon, smoked trout, a juicy hamburger or roast beef! I love the Horseradish Dill Sauce from Annie Gunn's (a restaurant here in St. Louis. . .they serve it with their smoked seafood platter), so I made an attempt to recreate it here and it's not bad :)

1/2 cup sour cream
2 tablespoons mayonnaise
1 tablespoon horseradish
1 teaspoon minced garlic
1 tablespoon fresh dill
1/2 teaspoon dried dill
1 tablespoon chopped chives
1/4 teaspoon no salt all purpose seasoning (I used Don's Flavor Enhancer With Very Low Sodium)
1/8 teaspoon seasoning salt

Steps:

  • Mix together all ingredients and refrigerate for at least 2 hours prior to serving. (It is best if left 24 hours for flavors to truly come together).

This recipe for an easy appetizer borrows from the Ashkenazi tradition, making it a perfect Hanukkah offering. Roasted beets, dill, walnuts and horseradish are whirred in a blender with yogurt, garlic and olive oil, coming together into a pungent magenta purée. It is thick enough to serve on latkes, and creamy enough to go it alone as a dip with vegetables. (The New York Times)

2 medium beets, scrubbed and trimmed
2 tablespoons extra-virgin olive oil, more for beets
45 grams walnuts (about 1/2 cup)
1 very large clove garlic, minced
3 grams kosher salt (1 teaspoon), more to taste
1 cup Greek yogurt
2 tablespoons lemon juice, more to taste
2 teaspoons chopped dill
1 1/2 teaspoons prepared horseradish

Steps:

  • To roast beets, heat oven to 375 degrees. Place beets in a small baking dish and drizzle with olive oil. Add 3 tablespoons water to bottom of dish and cover tightly with foil. Bake until tender, about 1 to 1 1/2 hours, turning beets after 45 minutes. Let cool, then peel.
  • Using a food processor, grind walnuts, garlic and salt until very finely ground. Scrape down sides of bowl. Add the peeled beets, oil, yogurt, lemon juice, dill and horseradish and pulse until relatively smooth. Taste for seasoning and add more lemon or salt, or both, if needed. Serve with latkes or fritters, or use as a dip for vegetables.
