Hosting brunch or breakfast this weekend? Knock your guests' socks off with this Yogurt French Toast recipe, which has ALL of the flavor and less fat than the regular. Crusty pieces of bread are dipped in a yogurt, skim milk and egg mixture before frying in a pan with a little butter until golden brown. The French Toast pieces are then baked until cooked through. Enjoy warm with fresh berries and your favorite syrup!

1 loaf ciabatta bread, sliced into 12-1" thick slices
1/3 cup Greek yogurt
1 ¼ cup milk, at room temperature
½ teaspoon ground cinnamon
4 eggs, at room temperature
1 tablespoon unsalted butter
Sliced fruit
Pure maple syrup
Powdered sugar, optional

Steps:

  • Preheat oven to 300°F.
  • Crack the eggs into a bowl or a large baking dish. Whisk them together, then pour in the milk and the yogurt. Stir until just mixed. Sprinkle in the cinnamon and whisk.
  • Slice the bread into 1" thick slices if you haven't already.
  • Dip the sliced bread into the egg/milk/yogurt mixture and let sit for five minutes.
  • While bread is soaking in the mixture, heat a large skillet or a griddle over medium-high heat. Melt the butter in the pan.
  • After the bread has soaked, gently lift it out of the liquid mixture and place in the searing hot pan.
  • Sear on both sides until browned, then transfer to a baking sheet into the warm oven. Transferring the cooked French toast into the oven does two things: ensures that the toast is cooked through AND also keeps the toast warm while the rest is being cooked up.
  • Repeat the process as needed and once all the toast is cooked, serve topped with your favorite fruit and syrup.

2 eggs
1/2 cup fat-free (skim) milk
2 containers (6 oz each) Yoplait® Light strawberries 'n bananas yogurt
8 slices (1 inch thick) French bread
Strawberry slices

Steps:

  • In medium bowl, beat eggs, milk and 1 container yogurt until well blended. Spray griddle or skillet with cooking spray; heat griddle to 375°F or skillet over medium heat.
  • Dip bread slices in milk mixture, coating both sides. Place on griddle. Cook about 2 minutes on each side or until golden brown. Serve with additional yogurt and strawberries.

6 slices cinnamon raisin bread (thicker is better!)
1/2 cup low-fat vanilla yogurt
1/4 cup low-fat milk
2 eggs
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla
salt

Steps:

  • Beat eggs, yogurt, milk, salt, cinnamon, nutmeg, and vanilla in a mixing bowl.
  • Heat a lightly oiled skillet over med-high.
  • Dunk each slice of bread into egg mix, and soak both sides.
  • Place in pan and cook on both sides until golden.
  • Serve hot and top with yogurt and fresh berries, or your favorite syrup.

Custard yogurt toast is an egg and Greek yogurt custard baked into a piece of toast.

1 large egg
3 tablespoons Greek yogurt (we used whole milk yogurt, but non-fat is fine)
2 to 3 teaspoons maple syrup (honey or agave work as well)
Splash of vanilla extract
Berries of your choice or chocolate chips

Steps:

  • Gather the ingredients.
  • Whisk together the egg, yogurt, sweetener, and vanilla extract in a small bowl. You want to really mix these ingredients together well using a fork or a small whisk. Keep whisking until the mixture is completely smooth and begins to look glossy, making sure there are no lumps.
  • Take one slice of your bread and press down the center. Leave a border of crust, but press down most of the soft part of the bread to form a well.
  • Pour half of the yogurt mixture onto the bread, spreading into an even layer. The amount will vary based on the size, thickness, and type of bread you use.
  • Scatter half the berries or chocolate chips over the top. Get creative and make it fun with a design of your choice. Repeat with the second slice of bread.
  • Air fry (with one slice on each of two levels), at 350 F for 7 minutes (if your air fryer is standard single layer, air fry one slice at a time for 7 minutes). Check on the bread as it is cooking. You are looking for a glossy sheen and caramelized edges of the yogurt filling and golden brown toasted bread. Alternatively, you can bake both slices in a preheated 350 F oven for 12 to 15 minutes.
  • Allow the toast to cool for a minute or two, then dust with confectioners' sugar, if desired. Slice and serve immediately.
