CILANTRO LIME DRESSING



Cilantro Lime Dressing image

This easy cilantro lime dressing is great to have on hand in the fridge for topping onto salads, tacos, or burrito bowls. To make it creamy, add 1/2 avocado or Greek yogurt to the base recipe!

Number Of Ingredients 8

2 cups fresh cilantro
1 garlic clove
¼ cup lime juice
2 teaspoons maple syrup or honey
½ teaspoon ground coriander
½ teaspoon sea salt
½ cup extra-virgin olive oil
1 avocado or ½ cup plain whole milk Greek yogurt

Steps:

  • In a food processor, place the cilantro, garlic, lime juice, maple syrup, coriander, and salt and pulse to combine. With the blade running, pour in the olive oil and process until smooth.
  • Make it creamy (optional) - blend with 1 avocado or ½ cup plain whole milk Greek yogurt

Yogurt and Bean Dressing With Cilantro and Lime image

One of my favorite variations on Lisa Feldman's bean and yogurt dressing base is her cilantro-lime dressing. Blend cilantro into just about any dressing, purée, sauce or soup, and I'll be there with a spoon. I use a little more cilantro and lime juice than Lisa calls for, to achieve a pale speckled-green mixture that is slightly zingy; add a small green chile if you want a bit more spice.

Number Of Ingredients 8

1 small garlic clove, halved, green shoot removed
1/2 cup cooked white beans, drained and rinsed if using canned beans
1/2 cup whole milk or 2 percent Greek yogurt or regular yogurt
1 ice cube, if using Greek yogurt
1 tablespoon extra-virgin olive oil
3 tablespoons chopped cilantro
Optional: 1 small serrano or jalapeño, minced
1 to 2 tablespoons fresh lime juice (to taste)

Steps:

  • Process garlic in a food processor fitted with the steel blade until minced garlic is adhering to sides. Stop processor and scrape down. Add beans, yogurt, and ice cube and process until smooth. Add remaining ingredients and process until mixture is smooth. Taste and adjust seasoning.

Yogurt and Bean Dressing With Thai Flavors image

This version of Lisa Feldman's yogurt and bean dressing is based on her slightly sweet Thai ginger dressing. Sriracha sauce, I've noticed, has become the go-to condiment for many chefs. It contributes just enough spice and pungency to the mix (you can add more if you want more heat). I like to serve this with grains, and as a dip or a dressing for crispy salads.

Number Of Ingredients 12

1 ice cube, if using Greek yogurt
1 teaspoon minced fresh ginger
1-2 teaspoons soy sauce, to taste
1 teaspoon sriracha (more to taste)
1 teaspoon brown sugar
1 1/2 tablespoons fresh lime juice
Salt to taste
1 tablespoon chopped cilantro
1 tablespoon grape seed oil

Steps:

  • Process garlic in a food processor fitted with a steel blade until minced garlic is adhering to sides. Stop processor and scrape down. Add beans, yogurt, and ice cube and process until smooth. Add remaining ingredients and process until mixture is smooth. Taste and adjust seasoning.
  • Scrape into a bowl. Serve as a dip or use with grains or crisp salads (it's a bit too thick for delicate lettuces like spring mixes).

1 cup plain Greek yogurt
1/2 cup buttermilk
1/2 cup fresh cilantro leaves, finely minced
1 tablespoon finely minced lime zest plus 1/4 cup lime juice
1 teaspoon ground cumin, toasted
1/2 serrano chile, finely minced
Kosher salt and freshly cracked black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Whisk together the yogurt, buttermilk, cilantro, lime zest and juice, cumin and serrano chile in a medium bowl. Season with salt and pepper. Whisk in the olive oil.
