BRUSSELS SPROUTS AND ROASTED WINTER SQUASH HASH



Brussels Sprouts and Roasted Winter Squash Hash image

To this colorful winter hash I've added cooked black rice, which contributes a chewy texture and an earthy flavor that plays well against the sweetness of the squash and the seared brussels sprouts.

Number Of Ingredients 10

1 1/2 pounds winter squash, like butternut, halved, seeds and membranes scraped away
1 pound brussels sprouts, preferably small ones
2 tablespoons extra virgin olive oil
1 bunch scallions, sliced thin
2 garlic cloves, minced
Salt
freshly ground pepper
2 tablespoons tomato paste, dissolved in 1/4 cup water
1 cup cooked black rice
Poached eggs for serving optional

Steps:

  • Preheat the oven to 425 degrees. Cover a baking sheet with foil, and lightly oil the foil. Brush the cut sides of the squash with olive oil, and set on the baking sheet with the cut sides down. Bake 30 to 40 minutes until easily pierced with a paring knife. Remove from the heat, allow to cool until it can be handled, and peel and dice.
  • While the squash is in the oven, trim away the bottoms of the brussels sprouts and cut into quarters.
  • Heat the oil over medium-high in a large, heavy skillet. Add the brussels sprouts. Cook, stirring often or tossing in the pan, until just tender and the edges are seared light brown, about five minutes. Add salt to taste, and stir in the scallions and garlic. Stir together for a few minutes until the scallions and garlic are fragrant. Stir in the squash. Cook, stirring often, until the squash has caramelized lightly, about 10 minutes. It's fine if the squash falls apart in the pan. Season to taste with salt and pepper, and stir in the dissolved tomato paste. Continue to cook, stirring, until the tomato paste has caramelized, about five minutes. The tomato paste mixture will no longer be visible, but there should be rusty-colored traces on the bottom of your skillet. Stir in the black rice. Heat through, taste and adjust seasonings, and serve, topped with a poached egg if desired.

This is a recipe that combines all the best flavors of fall! Great for a Thanksgiving dinner instead of candied yams.

½ cup packed light brown sugar
¼ cup butter, melted
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon ground mace
2 pounds butternut squash - peeled, seeded, and cut into 1/2 inch slices
2 large apples - cored, and cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together brown sugar, butter, flour, salt, and mace. Arrange squash in an ungreased 9x13 inch baking dish. Top with slices of apple, then sprinkle with the sugar mixture. Cover with a lid or aluminum foil.
  • Bake for 50 to 60 minutes in the preheated oven, or until squash is tender.

Sweet Potato, Bacon and Apple Hash image

2 garnet yams, peeled and cut into 1/2-inch dice
Extra-virgin olive oil
Kosher salt
4 to 6 slices thick cut bacon, cut into lardons
1 large onion, cut in 1/2-inch dice
2 Granny Smith apples, cored and cut into 1/2-inch dice
4 scallions, white and green parts separated and thinly sliced
1/2 cup green pumpkin seeds (pepitas), toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, add the sweet potatoes, drizzle with olive oil and sprinkle with salt, to taste. Toss to coat and arrange them on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from the oven and reserve.
  • Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the sweet potatoes, and saute until the sweet potatoes are cooked through and starting to become crispy, about 7 to 8 minutes.
  • Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.
  • Fantastico!

APPLE HASH NAPOLEON



Apple Hash Napoleon image

3 Granny Smith apples
1/4 cup clarified butter
1/4 cup powdered sugar, plus more for garnish
2 cups apple cider
1 pint Apple and Anise ice cream, recipe follows
2 cups half-and-half
2 cups heavy cream
1/2 vanilla bean, split lengthwise
2 pieces star anise
8 large egg yolks
3/4 cups sugar
1/2 cup homemade applesauce

Steps:

  • Preheat convection oven to 275 degrees F.
  • Cover a sheet pan with a silpat mat or parchment paper. Using a Japanese mandoline, julienne the apple into thin sticks, like potato sticks. Make little nests or haystacks of the sticks on the silpat, about 3 inches in diameter.
  • Spatter the haystacks with melted clarified butter and douse with powdered sugar from a shaker. Bake in a convection oven until dry and crisp, about 60 to 75 minutes. Or use a fruit dehydrator to dry them out. Store them in an airtight container until ready to serve.
  • To make the sauce, place the cider in a small saucepan, and bring it to a simmer. Continue cooking until it becomes a thick golden syrup, about 1 hour. Let cool until ready to serve. You can refrigerate it if made the day before.
  • To serve the dessert, place one apple hash on a dessert plate, top it with a scoop of ice cream, then carefully place another piece of hash on top as a lid. Press down gently. Spoon a "swoosh" of cider reduction on the plate and sprinkle the whole thing with powdered sugar.
  • Put a large mixing bowl in the freezer to chill.
  • In a saucepan over medium heat, bring the half-and-half, cream, vanilla bean, and star anise to a simmer, stirring occasionally to make sure the mixture doesn?t burn or stick to the bottom of the pan.
  • In a bowl, whisk together the egg yolks and sugar. When the cream mixture reaches a fast simmer turn it off, do not let it boil!
  • In a thin stream, whisk half of it into the egg yolk mixture. Then pour the egg-cream mixture into the saucepan containing the rest of the cream mixture. Cook over medium heat, stirring constantly with a wooden spoon. At 160 degrees F, the mixture will give off a puff of steam. When the mixture reaches 180 degrees, it will be thickened and creamy, like eggnog. If you don?t have a thermometer, test it by dipping a wooden spoon into the mixture. Run your finger down the back of the spoon. If the stripe remains clear, the mixture is ready, if the edges blur, it is not quite thick enough yet. When it is ready, quickly remove from the heat.
  • Meanwhile, remove the bowl from the freezer, put 4 handfuls of ice cubes in the bottom, and add cold water to cover. Rest a smaller bowl in the ice water.
  • Strain the cream mixture through a fine sieve to remove the vanilla bean pieces and star anise, into a smaller bowl. Stir in the homemade applesauce and chill 3 hours, then freeze according to the directions for your ice cream maker.
