405 g Lean beef round steak (buy 450g), fat trimmed, cut into 3cm pieces
1 small Brown onion finely chopped
300 g Button mushrooms halved
2 clove(s) Garlic crushed
2 medium Carrot(s) sliced
1 400g can Canned pinto beans, rinsed, drained
1.5 individual Beef stock cube gluten-free variety, (to make 350ml beef stock)
1 400g can Canned diced tomatoes
0.5 tsp Dried oregano
0.25 tsp Dried thyme
4 sprig(s) Fresh thyme to serve
1 x 3 second spray(s) Oil spray

Steps:

  • Place beef in a slow cooker. Lightly spray a large frying-pan with oil and heat over medium-high heat. Add onion, mushrooms and garlic. Cook for 5 minutes, stirring occasionally. Add onion mixture and carrots to slow cooker.
  • Place half the beans in slow cooker. Place remaining beans in blender. Add one-third of stock to blender and puree. Add mixture to slow cooker. Add remaining stock, tomatoes, oregano and dried thyme to slow cooker and season with salt and pepper.
  • Cover and cook on high for 6 hours, or until beef is tender. Serve topped with fresh thyme.

Steps:

  • Place the beef in a slow cooker. Mist a nonstick frying pan with cooking spray. Add the onion, mushrooms and garlic. Sauté over medium-high heat 5 minutes, stirring occasionally. Add to the slow cooker with the carrots.
  • Place half of the beans in the slow cooker. Put the remaining beans in a blender. Add ⅓ of stock to blender and purée. Add mixture to slow cooker. Add the remaining stock, tomatoes, oregano, dried thyme, salt and pepper.
  • Cover and cook on the High setting of slow cooker for 6 to 7 hours. Garnish with fresh thyme.

14 1/2 ounces canned crushed tomatoes
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
2 tablespoons thyme

Steps:

  • Place a beef in a 5 quart slow cooker. Coat a 12 inch nonstick skillet with cooking spray. Add onions, mushrooms, and garlic. Saute over medium high heat 5 minutes, stirring occasionally.
  • Place half of beans in a slow cooker. Place remaining beans in a blender. Add 1/2 cup of broth to blender and puree. Add mixture to slow cooker. Add remaining broth, tomatoes, oregano, dried thyme, salt and pepper to slow cooker.
  • Cover and cook on high setting of slow cooker for 6 to 7 hours. Garnish with fresh thyme if desired.

1 1/2 lbs boneless chuck roast, trimmed and cut into 1-inch cubes
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon fresh ground black pepper, divided
2 tablespoons all-purpose flour
2 medium onions, cut into quarters
8 garlic cloves, crushed
1/4 cup dry red wine
1 cup fat free low-sodium beef broth
2 tablespoons tomato paste
3 bay leaves
3 fresh thyme sprigs
1 (14 1/2 ounce) can diced tomatoes, drained
3 cups sliced zucchini (1-inch slices)
2 cups sliced carrots (1-inch slices)

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat. Sprinkle beef with 1/2 t. salt and 1/4 t. pepper; dredge in flour. Add beef to pan; saute 2 minutes, browning on all sides. Place beef in slow cooker or crock pot.
