6 dried New Mexico chiles
6 dried pasilla chiles
1 cup water
1 tablespoon oregano leaves
6 pounds chuck, cubed or coarse ground
2 to 3 tablespoons vegetable oil
4 medium onions, finely diced
Black pepper
1 (15-ounce) can tomato sauce
4 cups beef broth
2 tablespoons vinegar
1 teaspoon hot red pepper sauce
16 tablespoons Texas chili powder
2 tablespoons ground cumin
1 teaspoon cayenne pepper
1 tablespoon monosodium glutamate
1 teaspoon sugar
14 garlic cloves, crushed- use remaining pulp
Salt

Steps:

  • Remove stems and seeds from pepper pods and boil chile peppers in water for approximately 1 hour, until pulp separates from skin. Scrape pulp from skin, mash into a paste. Use 1 cup of this paste in recipe.
  • Place 1 cup of water in a small saucepan and add the oregano. Bring to a boil, remove from the heat and steep like tea. Strain, and add the strained liquid to the chili pot.
  • In a saute pan, brown the beef, a small batch at a time, in hot oil adding onions and black pepper to each batch. Remove meat to chili pot as it browns. Add remaining ingredients and blend well. Cover and simmer 2 hours, stirring occasionally.

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.

2 lbs sirloin beef, trimmed, cut into cubes
1 medium onion, diced
1 1/2 teaspoons fresh garlic, minced
1/4 cup vegetable oil
8 ounces beef broth
1 (15 ounce) can tomato sauce
4 tablespoons mild chili powder, Gebhardt brand
1 1/2 teaspoons dark chili powder, Pasilla
1 1/2 teaspoons dark chili powder, New Mexico
1 1/2 teaspoons cumin
1 1/2 teaspoons salt
1 1/2 teaspoons vinegar
1/2 teaspoon oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne
1/4 teaspoon Tabasco sauce

Steps:

  • Heat oil in large deep skillet.
  • Add beef, onion and garlic. Cook until meat is lightly browned.
  • Stir in remaining ingredients.
  • Simmer, covered, for 2 hours stirring occasionally.
  • Garnish with sour cream and/or cheddar cheese if desired.

1 lb. ground beef
16 oz. can tomatoes
1 pkg. chili seasoning mix
3 1/2 cups water,
1/2 cup uncooked macaroni
1 beef bouillon cube

Steps:

  • 1. Brown 1 lb. ground beef in heavy pan. Drain fat. Add 16 oz. can tomatoes, 1 pkg. chili seasoning mix, 3 1/2 cups water, 1/2 cup uncooked macaroni and 1 beef bouillon cube. Stir to mix. Simmer, covered, 20 minutes. Ladle into 6 serving bowls. top with 6 slices toasted French bread. sprinkle with 1/4 cup grated Parmesan cheese. Serves 6 Source: My Old Recipes

5 slices Bacon
8 ounces Italian Sausage (mild)
1 1/4 pounds Beef Chuck (cubed)
1 clove Garlic
2 1/2 cups Water
16 ounce Pinto Beans (1 can)
1 Green Pepper (medium)
2 pieces Red Chili Peppers (dried & crushed)
2 Jalapeño Peppers (chopped & deseeded))
4 tablespoons Chili Powder (could add more)
6 ounce Tomato Paste (can)
1 cups Onion (chopped))
1/2 teaspoon Salt
1/4 teaspoon Oregano
10 ounce Beef Broth (can)
1/2 bottle Beer (drink other 1/2)

Steps:

  • Cook bacon til crispy -- drain (keeping the drippings) and crumble. .
  • Brown sausage, beef, onions,green pepper, garlic in the drippings.
  • To the beef mix, add bacon, chili pepper, Jalapeños, chili powder, salt and oregano.
  • Stir in water, tomato paste, beef broth, beer, and beans.
  • Bring to a boil, the simmer covered for 1 hour.
  • Refrigerate overnight (VIP).
  • Simmer uncovered 1/2 hour.
  • Serve with following condiments: Sour Cream, Lime, Cheddar Cheese, Onions. The sour cream and lime, tame the spices and adds a distinctive taste.
  • Buon Appetito!!

1 (29 ounce) can tomato sauce

¼ cup chopped green bell pepper

1 ½ teaspoons garlic powder
1 teaspoon salt
½ teaspoon ground black pepper

½ teaspoon white sugar
⅛ teaspoon ground cayenne pepper
2 cups canned red beans, drained and rinsed

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
  • Add all ingredients to a large kettle. Bring to boil. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally.
