This wild rice side dish goes well with roasted chicken, turkey, or braised pork shoulder.

4 scallions
1 tablespoon extra-virgin olive oil
Coarse salt and ground pepper
1 1/4 cup wild rice or wild rice blend (any seasoning packet discarded)
2 tablespoons red-wine vinegar
1/2 cup dried cherries or cranberries
1/2 cup pecans, toasted and chopped

Steps:

  • Thinly slice scallions, separating white and green parts. In a medium saucepan, heat olive oil over medium-high. Add scallion whites and cook, stirring often, until soft, 3 minutes; season with salt and pepper. Add wild rice and cook according to package instructions.
  • Meanwhile, in a small saucepan, combine vinegar, dried cherries, and 2 tablespoons water. Bring to a boil over medium-high. Reduce to a simmer and cook until vinegar is almost absorbed, 3 minutes. Transfer to a bowl and add rice mixture, scallion greens, and chopped pecans. Stir well to combine and season to taste with salt and pepper. Serve warm or at room temperature.

1 cup arborio or medium-grain rice
5 cups whole milk
1/4 cup raisins
1/2 teaspoon grated orange peel
1/4 vanilla bean, split lengthwise
4 large egg yolks
1/2 cup sugar

Steps:

  • Place rice in strainer and rinse under cold running water until water runs clear. Place rice, milk, raisins, and orange peel in large saucepan. Scrape seeds from vanilla bean into pan; add bean. Bring rice mixture to simmer over medium heat, stirring occasionally. Reduce heat to lowest possible temperature, cover, and simmer, stirring occasionally, until rice is tender, about 23 minutes. Remove from heat. Add egg yolks; stir until thickened, about 1 minute. Stir in sugar.
  • Divide pudding among eight 3/4-cup ramekins or custard cups. Chill until cold, about 3 hours. DO AHEAD Can be made 1 day ahead. Cover and keep chilled.

1/4 teaspoon table salt
1 cup medium grain rice (white) or 1 large grain white rice
2 1/2 cups whole milk
2 1/2 cups half-and-half
2/3 cup granulated sugar
1 1/4 teaspoons vanilla extract
1/2 cup chopped prunes or 1/2 cup apricot
1 teaspoon ground cinnamon

Steps:

  • Bring 2 cups water to boil in large, heavy-bottomed pot (at least 3 quarts) or small soup kettle (4 to 5 quarts). Stir in salt and rice; cover and simmer over low heat, stirring once or twice until water is almost fully absorbed, 15 to 20 minutes.
  • Add milk, half-and-half and sugar. Increase heat to medium-high to bring to simmer, then reduce heat to maintain simmer. Cook uncovered, stirring frequently, until mixture starts to thicken, about 30 minutes. Reduce heat to low and continue to cook, stirring every couple of minutes to prevent 10sticking and scorching, until a spoon is just able to stand up in the pudding, about 15 minutes longer.
  • Remove from heat and stir in vanilla extract, dried fruit, and cinnamon. Cool and serve at room temperature or chilled. (Can be covered with plastic wrap on surface of pudding and then refrigerated up to 2 days.).

This rice not only looks beautiful, but it's bursting with savory flavors, and your house will smell delicious when you cook this! This is a recipe I adapted from Taste Of Home's Holiday Recipes. I made it my own by altering a few ingredients and adding others, but yield amount and cooking time/method are the same. I like to make the rice mix a day or two ahead to let all the flavors meld. This makes 2 batches of rice.

2 cups uncooked long grain rice
1 cup dried mixed fruit (I use a mixture of dates, apricots, and cranberries)
1 cup slivered almonds
1/2 cup raisins or 1/2 cup sultana
2 tablespoons dried onion flakes
4 teaspoons chicken bouillon granules
4 teaspoons curry powder
1 teaspoon salt
2 1/2 cups water
2 tablespoons butter

Steps:

  • In a large bowl, combine the first 8 ingredients. You can do this a day or two in advance to allow flavors to meld, but it's not necessary.
  • Combine water and butter in a saucepan; bring to a boil.
  • Add 2 cups rice mix, reduce heat, and simmer for 20 minutes, or until liquid is absorbed.
  • NOTE: I make this a complete meal by adding cooked chicken thighs. You can store this rice mix in an airtight container for up to 3 months.

Rather than browning the rice in butter, cook it like pasta, in plenty of water, then drain it. Sweat the leeks in a tiny amount of butter, then toss everything together. Studded with dried fruits and leeks, this dish boasts the mosaic look and texture of a classic pilaf.

4 ounces wild rice (1/2 cup plus 2 tablespoons)
Kosher salt and freshly ground black pepper
1 teaspoon extra-virgin olive oil
1 small leek, trimmed, well washed, and cut into 1/4-inch rounds (about 2/3 cup)
6 tablespoons Chicken Stock, or low-sodium canned
1/3 cup dried cranberries
1/4 cup chopped dried pears

Steps:

  • In a 2-quart pot of boiling salted water, add the rice and cook until the grains begin to puff and break open, about 40 minutes to 1 hour. Drain and refresh in cold water. Season with salt and pepper.
  • Heat the oil in a 2-quart saucepan. Add the leek and cook for 1 minute. Add 3 tablespoons of the stock, the cranberries, and pears and cook, covered, stirring occasionally, until soft, about 8 minutes. Add the rice and remaining stock, raise the heat to high, and cook, stirring, 1 to 2 minutes. Season with salt and pepper and serve.

This is a takeoff of a Cooking Light recipe which calls for quinoa. I realized at the last minute I didn't have enough, and this recipe was born as a result.

2 cups vegetable broth or 2 cups chicken broth
3/4 cup wild rice
1/4 cup pearl barley
1 tablespoon Smart Balance butter spread
1 cup onion, diced
1 cup leek, green parts (or 2 c green and white, omit onion)
1/2 cup celery, diced
1/2 teaspoon black pepper
1/2 teaspoon ground sage
4 garlic cloves
1/2 cup dried cranberries (cherry flavored are great!)
1/4 cup walnuts, chopped

Steps:

  • Bring broth and 1/4 teaspoon salt to a boil in a medium saucepan. Add wild rice and barley. Cover, reduce heat, and simmer 45 minutes or until liquid is absorbed. Let stand 15 minutes; fluff with a fork.
  • Melt butter in a large nonstick skillet coated with cooking spray over medium heat.
  • Add leek, celery, remaining 1/4 teaspoon salt, pepper, and sage; cook 10 minutes or until tender, stirring occasionally.
  • Add garlic; cook 1 minute.
  • Stir in cooked rice, cranberries, and walnuts; cook until thoroughly heated.

5 1/2 cups whole, low-fat or skim milk
1/2 cup sugar
2 teaspoons vanilla extract
3/4 cup long-grain white rice
3/4 cup diced ( 1/2 inch) dried fruits (raisins, apricots, figs, cherries)
1 cup yogurt or sour cream (optional)

Steps:

  • Bring the milk, sugar and vanilla to a boil in a saucepan. Add the rice, mix well, and bring the mixture back to a boil. Cover, reduce the heat to very low, and simmer for about 40 minutes, until the rice is very soft. (The mixture should still be soupy; if it is not, add enough additional milk to make it soupy.)
  • Add the dried fruits to the pudding, mix, and set aside until cooled to room temperature. Spoon into six dessert dishes and serve, if desired, with 1 or 2 tablespoons of yogurt or sour cream on top.
