PICKLED WIENERS (HOT DOGS)



Pickled Wieners (Hot Dogs) image

4 pounds wieners, cut into bite-sized pieces
2 large onions, thinly sliced
3/4 cup sugar
2 tablespoons salt
4 teaspoons ground cumin
4 1/2 ounces hot sauce
4 cups white vinegar
1 teaspoon pickling spices
1 1/2 teaspoon whole black peppercorns

Steps:

  • Place the wieners and onions in jars. Combine the sugar, salt, cumin, hot sauce, vinegar, pickling spices, and black peppercorns in a saucepan over medium-high heat. Bring to a boil and let cook, stirring occasionally, for 3 minutes. Let the liquid cool slightly then pour over the wieners and onions in the jars. Cover the jars tightly and place in the refrigerator for 3-4 days to pickle before serving. Store leftovers in the refrigerator.

1 cup brown sugar
1 cup bourbon
3 pounds cocktail wieners (or you can use hot dogs cut into bite-sized pieces)

Steps:

  • Add ketchup, brown sugar, and bourbon to slow cooker and stir to combine. Add wieners and cook on low for 6 hours. Serve straight out of the cooker with toothpicks. Wieners can also be cooked on the stovetop. Combine the ingredients in a large saucepan, then place it on top of a large skillet over low heat and cook at below a simmer for 6 hours.

4 tablespoons margarine
2 yellow onions, minced, divided
2 tablespoons chili powder
2 tablespoons paprika
1/2 teaspoon allspice
1/2 teaspoon curry
1 teaspoon dry mustard
1 teaspoon ground cinnamon
1 pound ground beef, 80/20
1/4 cup water
20 hot dogs
1 teaspoon salt
20 hot dog buns
Yellow mustard
2 tablespoons celery salt

Steps:

  • In a medium saute pan over medium heat add, margarine and 1 minced onion. Saute till translucent, but do not brown. Next add chili powder, paprika, allspice, curry, dry mustard and cinnamon. Then add beef, stir thoroughly and cook for 5 minutes, add water and simmer over medium to low heat for 30 minutes.
  • In a medium sauce pot boil hot dogs with salt and steam buns.
  • When meat is done simmering, add meat mixture to the hot dog in the bun, top evenly with minced onion, yellow mustard, and a sprinkle celery salt.

COCKTAIL WIENERS

A sweet and savory treat for any get-together that will sure be a crowd pleaser. It's cheap and easy to make in a slow cooker with only three ingredients. I make this for any get-together and it is always a hit! I was a little unsure at first about the grape jelly concoction, but I tried it and have never done it any other way. It is so savory with just enough sweet. I always receive or over hear lots of agreement with the taste of the sauce. It always disappears at parties, and the next day I have cravings for these cocktail wienies. Try it for your next potluck, back yard BBQ, or any event!

I am laughing at the picture of these in The Spatulatta Cookbook. This cookbook is meant for parents cooking with their children -most of us have clean counters. It is really a cute cookbook so if you have a budding cook this looks like a good choice to me. http://www.spatulatta.com/recipes/134-doggie-appreciation/519-wiener-dogs I can't wait to do these with my GS. Maybe this is how I can get DH to eat a dill pickle sliced lengthwise. Ask his sons, the guy eats them on hamburgers only b/c they are sliced the "right way". :) You need toothpicks.

8 ounces refrigerated crescent dinner rolls
6 turkey hot dogs, DIVIDED
12 baby dill pickles
1/2 red bell pepper
6 cherry tomatoes
6 black olives, pitted
2 tablespoons cream cheese, less and at room temperature

Steps:

  • Preheat the oven to 350 degrees.
  • Carefully unwrap the crescent dough. You want to keep two triangles together to make one long rectangle.
  • Lay the rectangle down on a clean counter.
  • Put a hot dog on the dough and wrap the dough around it, pressing the edges together.
  • Move it to a cookie sheet.
  • Do this for 4 weenie dogs, SAVING 2 hot dogs for next step.
  • Cut the 2 remaining hot dogs into thirds, and save the 4 rounded ends for the dogs' NOSES.
  • Put the 4 NOSES on the cookie sheet, with the crescent wrapped weenies, and BAKE for 12 to 15 minutes, or until the dough on the wrapped hot dogs is BROWNED on the edges.
  • While the dogs are in the oven, prepare their legs and tails: for each dog, cut 2 pickles in HALF horizontally (crosswise) with a butter knife and carefully push a toothpick halfway into the cut end of each one. Choose another pickle for the tail and stick a toothpick in it, too.
  • Cut (use a kitchen scissors) the red bell pepper into teardrop shapes for the floppy EARS.
  • Push a toothpick through the middle of a cherry tomato and stick the ears onto each side of the toothpick, kind of hanging down.
  • When the dogs come out of the oven, let them cool awhile on the sheet, and then stick on the NOSES with a toothpick.
  • With another toothpick, add the tomato head with its droopy ears.
  • Push the toothpicks holding the legs and tails into the dogs.
  • Last of all, cut the olives into thick squares for the EYES using the cream cheese to stick them on.
  • Now, the fun part. Admire your dogs, ask mom if you can take a picture of it and post to RZ, and then chow down. Make sure you remove the toothpicks first!

oil, bacon grease or a combo of both
flour
water, milk or a combo of both
salt & pepper

Steps:

  • 1. In a skillet, heat your oil or grease over medium heat. If you want it to taste mild, use oil. If you want it to have a stronger pork taste, use some bacon grease. I like to use a little of both. How much you use will depends on how many wieners you have. For 2 wieners I use about 1 T. of oil, 1 T. of bacon grease and 2 T. of flour (later in recipe). Slice wieners into coins into grease. Fry until desired crispness...I like mine about half crispy. Sprinkle flour on top of wieners and stir (should be the consistency of wet sand) and fry for a few minutes until flour starts to get a nice tan color. A little at a time while constantly stirring, add your liquid. If you want a stronger taste, use water. If you like a creamier taste, use milk, or some of both. How much will depend on how much grease you started with, but for what I've told you already will probably be around 2 cups. Cook and stir until bubbly and desired thickness. Season with salt and pepper. Serve over biscuits, toast or your favorite bread.
