3 -4 medium potatoes
1/2 teaspoon salt, for potatoes
1 red onion, finely chopped
2 -3 tablespoons mayonnaise
2 -3 tablespoons unsweetened plain yogurt
1 tablespoon whole grain honey mustard
2 tablespoons milk, enough to make the dressing how thick thin you want it

Steps:

  • Don't peel the potatoes. Just wash if needed. Then cut in to medium dice. Put in pan with enough water to cover. Add the amount of salt for your taste. Bring to the boil. Cook until tender, but not mushy. Cool a little.
  • While the potatoes are cooking mix all the other ingredients for the dressing together in a bowl or jug.
  • You may want to add more or less milk to the dressing, depending how thick or thin you want to coat the potatoes.

2 lbs new potatoes
2 stalks celery, diced 1/2 inch
15 -20 cornichons, sliced into rounds (about 1/4 pounds)
1 red bell pepper, diced 1/2 inch
2 tablespoons honey mustard dressing

Steps:

  • Scrub the potatoes and cut them into 3/4-inch cubes, leaving the skin on.
  • Steam or boil the potato pieces until they are just tender but still firm.
  • While the potatoes are cooking, assemble the rest of the ingredients in a large bowl. As soon as the potatoes are done, drain them and transfer into the bowl. Toss just enough to blend everything, and serve immediately.

My husband and I love strong flavors. I wanted to make potato salad and came up with this one. Utilize the horseradish to your own taste.

5 red potatoes
1/2 cup sweet onion, chopped
1/2 cup red pepper, diced
1/2 cup green pepper, diced
3 tablespoons horseradish mustard (I used Woebers brand.)
3/4 cup light mayonnaise
salt and pepper

Steps:

  • Cook the potatoes in boiling water till fork tender. Or use the baked potato feature on your microwave. Cool.
  • Dice potatoes to bite size.Put in large bowl.
  • Add the onions and peppers.
  • Mix in the horseradish mustard and the mayonnaise. Use more or less to your taste.
  • Salt and pepper to taste.

A few years ago we discovered that it tastes just as good when using instant mashed potatoes. This is so easy, and it will keep for several days in the fridge. 8 servings instant mashed potatoes (prepare according to package instructions)
2 tablespoons onion flakes
6 hard-boiled eggs, chopped
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons prepared yellow mustard
1 tablespoon vinegar
1 cup relish sandwich spread (Kraft Original Sandwich Spread)
1/2 cup sweet pickle relish

Steps:

  • Add onions to liquids for instant potatoes. Cook according to package instructions.
  • While potatoes are still warm, add the remaining ingredients. Mix well.
  • This dish can be served warm or cold.
  • If this is too "whangy" for your taste, cut the vinegar and mustard in half.

This tasty tangy mustard based potato salad gives a great zing to your summer picnics or just about anytime.

5 lbs potatoes, peeled and cubed
6 eggs
1 onion, finely chopped
3 stalks celery, diced (optional)
2 tablespoons sweet pickle relish
2 tablespoons prepared mustard
1/2 cup creamy salad dressing (miracle whip)
2 teaspoons paprika
3 slices bacon, crumbled (Bac-os can be used)

Steps:

  • Bring a large pot of salted water to boil.
  • Add potatoes and cook until tender but still firm, about 15 mintues.
  • Drain and set aside.
  • Place eggs in a saucepan and cover with cold water.
  • Bring water to boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes.
  • Remove eggs, cool, peel and chop or slice.
  • In a mixing bowl, combine potatoes, eggs, onion, celery, bacon and relish.
  • Mix lightly to not break down potatoes too much (unless you like them mushy.)
  • Blend together the mustard and salad dressing.
  • Add to potato mixture and mix well.
  • Sprinkle with paprika and refrigerate until chilled.

1 cup mayonnaise
1/4 cup Dijon mustard
1/2-3/4 cup chopped red onion
2 green onions with tops, sliced
2 cloves garlic, minced
3 tablespoons snipped fresh dill or 1 tablespoon dill weed
1/2 teaspoon salt
1/3 teaspoon pepper
1/4 teaspoon lime juice

Steps:

  • Place the potatoes in a saucepan and cover with water.
  • Cover and bring to a boil; cook until tender, about 25 minutes.
  • Drain thoroughly and cool slightly.
  • Meanwhile, combine the remaining ingredients.
  • Cut potatoes into chunks; place in a bowl.
