PIZZA PINWHEELS
Pizza Pinwheels are super easy to make, customizable, freeze beautifully, and absolutely irresistible for snacks, appetizers or fun meals! Pizza Pinwheels are basically pillowy pizza dough smothered in marinara, mozzarella, pepperoni/your topping of choice, showered with Parmesan, rolled and baked to bubbly cheesiliciousness. You can use store bought pizza dough and then these Pizza Pinwheels literally come together in minutes!

Steps:
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. Set aside.
- Roll out a long piece of parchment paper and lightly flour it . Roll dough into a 12x16 inch rectangle on floured parchment.
- Whisk together all of the Pizza Sauce ingredients. Evenly spread 3/4 cup Pizza Sauce over dough, leaving a 1" border on the top long edge (the side you will roll towards so it can seal - see recipe post photos).
- Microwave pepperoni on a paper towel lined plate for 20 seconds then dab off any excess grease. Evenly top sauce with mozzarella, pepperoni, green bell peppers and Parmesan.
- Starting from the long side closest towards you, tightly roll up the dough, pinching in any escaping ingredients and seal up seam. Don't worry about it looking too pretty! Using a serrated knife, cut off the ends of the roll (if they are uneven) then slice roll into 12 equal pieces. I find the easiest way to do this is to slice the roll in half, then in half again so you have 4 equal pieces. Slice each of these pieces into 3 pinwheels.
- Place each pinwheel, cut side up, on prepared baking sheet. Bake at 375 degrees F for 25-30 minutes or until dough is golden. Remove from oven and let cool for 5 minutes before removing pinwheels from pan to a wire rack. The Pizza Pinwheels will be a little soft at first but will firm up as they cool. Garnish with fresh parsley and serve with remaining warmed pizza sauce if desired.
- To Freeze: Allow BAKED Pizza Pinwheels to cool to room temperature. Store in a large sealable plastic bag. When ready to eat, thaw, then bake at 350 degrees F for 10 minutes or until warmed through.
PIZZA PINWHEELS
Steps:
- Preheat oven to 350°F. Line a large baking sheet with foil and spray lightly with cooking spray. Lightly flour a large wooden cutting board. Roll out dough onto the floured surface, pressing seems together as you go.
- Spread pizza sauce evenly over the dough, to the edges. Top with shredded mozzarella and your choice of pizza toppings.
- Roll pizza width-wise (the longest side) and seal the edges. Slice into 1-inch pieces with a sharp serrated knife. Place pinwheels on the prepared cookie sheet, about 2 inches apart.
- Bake for about 10-12 minutes, or until the tops are golden brown and the middles are cooked through.
- Allow to cool for a couple of minutes, then serve with marinara or ranch for dipping.

- Preheat your oven to 425 degrees.
- Form the pizza dough into a rectangluar shape. The backside of an 18"x13" baking sheet works great for this.
- Spread the pizza sauce over the dough, leaving ½ inch without the sauce at one of the short ends. Add the ham, pineapple, and mozzarella over the sauce.
- Roll the pizza, starting at the short end with the sauce right to the edge. Use the edge without the sauce to seal the roll, pinching the dough together a little, if necessary.
- Cut the pizza roll into 8 equal pieces. Place the pieces on a non-stick or parchment paper-lined pan. Bake for 20 minutes, until the pizza dough is cooked. Sprinkle the top with some minced chives, if using.

TRADITIONAL WHITE PIZZA

- Preheat oven to 500 degrees F and, if you have one, place a pizza stone on the bottom rack of the oven.
- Place the rolled out pizza dough onto a pizza peel or the back of a cookie sheet, dusted with cornmeal and using flour, as necessary, to help facilitate moving the dough. Sprinkle the pizza with the cheeses, oregano, salt and pepper. Bake the pizza for 10 to 12 minutes, use the peel to turn the pizza around and back an additional, 10 to 12 minutes, or until the cheese has melted and the pizza is golden. Sprinkle the cheese and olive oil over the pizza and serve immediately.
- In a large bowl combine yeast with water and sugar and stir well to combine. Set aside until foamy, about 5 minutes. Add the salt, olive oil, and half of the flour and mix well to thoroughly combine. Add all remaining flour except 1/2 cup and mix well with your hands, working to incorporate the flour little by little. The dough should be slightly sticky to the touch. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour, as necessary, to form a smooth and elastic dough that is not sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
- Preheat oven to 500 degrees F and if you have one, place a pizza stone on the bottom rack of the oven.
- Divide dough into 2 portions for 2 (12 to 14-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a 1/8-inch thickness. Transfer dough to a pizza peel (sprinkle with cornmeal to help facilitate moving dough) and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings and the thickness of the crust). Remove from the oven with a metal peel or spatula and serve immediately.
- Yield: 2 (12 or 14-inch) pizzas or 4 calzones, serving 4 to 6
PIZZA PUFF PINWHEELS

- Preheat oven to 200C/180C fan/gas 6. Unroll the pastry onto a lightly floured surface and roll it out to 40 x 32cm. Spread a layer of pasta sauce over it, leaving a 1cm border around the edges. Arrange the ham evenly on top, then scatter the grated cheese over.
- Starting at one of the short ends, roll the pastry up as tightly as possible. Chill in the fridge for 10 minutes or so.
- Take a very sharp knife and cut the roll into 12 equal slices, laying them flat on 2 non-stick baking trays as you go. Brush each pinwheel lightly with beaten egg and sprinkle over the herbs. Bake for 12-15 minutes until puffed and golden. Leave to stand for 5-10 minutes before serving.

PINWHEEL PIZZAS
Use a packet bread mix to roll up individual pizza buns filled with tomato, basil, mozzarella and pepperoni

- Oil a 25cm springform tin. Make up the bread mix following pack instructions.
- Turn the dough onto a lightly floured surface and roll out to an oblong 35 x 22cm using a rolling pin. Spread the tomato purée over the dough (leaving a border of dough plain all the way round), then scatter with the basil, pepper, pepperoni and mozzarella.
- Carefully and firmly roll up from the longest side to make a Swiss roll, then slice evenly into 8 thick pinwheels. Arrange 7 around the edge of the tin and put the eighth in the centre. Cover the tin with cling film and leave in a warm place until well risen. Depending on the heat in the room, this can take up to 1 hr.
- Heat oven to 240C/220C fan/gas 7. Remove the cling film, scatter with the cheddar and bake for 12-15 mins until golden.

- Preheat oven to 350 degrees.
- Grease two cookie sheets.
- Unroll crescent rolls, do not separate them, and press perforations together to make one large rectangle.
- Mix filling ingredients together in a large bowl and spread onto each rectangle. Roll up like a jelly roll and place in freezer for 15 minutes for easier slicing.
- Cut into 2 inch slices and place pinwheels cut side down onto baking sheets two inches apart.
