- Preheat oven to 350°F. Bring 3 quarts water to a boil over high in a large stock-pot. Stir in pasta and 1 tablespoon of the salt, and return to a boil. Cook, stirring occasionally, until pasta is tender but still firm, about 6 minutes. Reserve and set aside 2 cups cooking water, and then drain the pasta. Return pasta to pot, and remove from heat. Cover to keep warm.
- Generously butter a 13- x 9-inch baking dish, and set aside. Toss together breadcrumbs; Parmesan cheese; and half of the cooked, crumbled bacon in a bowl, and set aside. Stir together flour, pepper, mustard, and remaining 1 1/2 teaspoons salt in a small bowl. Heat milk and buttermilk in a medium saucepan over medium, undisturbed, until barely steaming but not boiling, 4 to 5 minutes. Set aside.
- Melt butter in a large heavy saucepan over medium-high. Add flour mixture. Cook, whisking often, until mixture is smooth and thick and has a delicate golden color and toasted aroma, about 2 minutes. Slowly whisk in warm milk mixture. Bring to a boil over high. Cook, stirring often, until thickened to the texture of cream, about 3 minutes.
- Stir shredded Cheddar and Monterey Jack cheeses into milk mixture, and remove from heat. Stir in beaten eggs until mixture forms a smooth sauce.
- Uncover cooked pasta, and stir. (If pasta sticks together, stir in reserved warm cooking water, and drain again.) Stir cheese mixture and remaining bacon into drained pasta in stockpot.
- Transfer pasta mixture to prepared baking dish, and sprinkle evenly with breadcrumb mixture. Bake in preheated oven until firm, puffed up, and lightly browned, 35 to 40 minutes. Serve hot or warm.

- Preheat oven to 400°. Cook macaroni according to package directions. Meanwhile, in a 12-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoons in pan. , Drain macaroni; add macaroni to drippings. Stir in shredded cheeses and cream cheese; cook and stir over medium heat until cheese is melted, 2-3 minutes. Whisk 2 eggs, 1 cup milk, green onions, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper; pour into skillet. Cook and stir until slightly thickened, 3-4 minutes. Remove from the heat., Reserve 1/4 cup bacon for topping; sprinkle remaining bacon over macaroni. Place cornbread mix, paprika, remaining 4 eggs, 2 cups milk, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a blender; cover and process until smooth. Pour over bacon., Bake until puffed and golden brown, 30-35 minutes. Let stand 10 minutes before serving. Sprinkle with reserved 1/4 cup bacon and additional green onions.

- Preheat oven 350 degrees F.
- Lightly coat a shallow 2 1/2 quart baking dish with nonstick spray.
- Cut bread into cubes and spread evenly on a jelly roll pan.
- Bake for 10 minutes until golden brown.
- Fill a large pot with water and bring to boil.
- Add onion and pasta to pot and cook for 8 to 10 minutes until pasta is al dente.
- In a large bowl, whisk together the marscarpone, herb cheese, milk, salt, pepper, nutmeg, and cayenne until well blended.
- Stir in shredded cheese.
- Drain the pasta and onion in a colander.
- Add pasta to cheese mixture and toss to coat.
- Spread pasta and cheese in baking dish and sprinkle with bread crumbs and Parmesan cheese.
- Bake for 30 minutes until filling is bubbly.
- Remove to wire rack and allow to cool for 10 minutes.

- In a medium sauce pan, melt the butter in the olive oil over medium heat.
- Add the flour and cook for 3 minutes, stirring constantly, until it smells slightly nutty.
- Whisk in the milk and bring to a boil, stirring occasionally.
- Remove from the heat and stir in the mozzarella, monterey jack, 1/2 cup parmesan, pepper, salt, paprika, basil, oregano, and parsley.

- In a large bowl, blend the cornmeal, flour, baking powder, salt, and sugar, and set aside. In a medium bowl, beat the eggs until they're light lemon colored, and fluffy, add the milk, oil, half of the butter - melted, and the cream style corn, and mix until well blended. Add diced onion, minced garlic, cheese, and crumbled bacon, and stir to blend. Add the egg mixture to the flour mixture a little at a time, and stir until all ingredients are combined.
- Place the other half of the stick of butter in a 10 - 12-inch iron skillet, and place the skillet in the oven at 400 degrees until the butter melts. When butter is melted, and bubbly, remove the skillet from the oven and carefully pour the cornbread mixture into the hot skillet. Place the skillet back in the oven and bake for 30 - 40 minutes, or until the cornbread is golden brown, and a toothpick inserted in the center comes out clean.!
- If the cornbread is getting too brown on top, but the center is not done, cover the top with aluminum foil and allow the cornbread to continue to bake until the center is done.
- Remove the skillet from the oven, and place it on a wire rack to cool a little before cutting about 5 minutes. Top with butter, cheese, and extra crumbled bacon if desired.
