WHITE BEAN & GARLIC STEW
Delicious recipe I adapted from: The Fat Free Vegan website. Please do not fear the number of garlic cloves in the recipe. They are kept whole and simmered for an hour in the broth, which mellows their flavor out perfectly. Almost like roasted garlic! This stew is nice served with crusty whole wheat bread, or over warm brown rice.

Steps:
- Break the garlic bulb into cloves and peel off the skin, leaving cloves whole.
- If some of the cloves are very large, you may cut them in half lengthwise.
- Spray a large, non-stick pan lightly with olive oil.
- Add the onion and sauté until it turns a rich, medium-brown, about 5 minutes.
- Add the garlic, carrots ans celery and sauté for 1 more minute.
- Add the beans, tomatoes, bay leaves, and vegetable broth.
- Cover the pot and simmer for about an hour, adding water if it gets too thick.
- Stir in the salt and pepper.
- If you're serving the stew right away, add all the parsley and the lemon juice.
- If you're serving it later or at room temperature, add the parsley and lemon juice right before serving.

- In a large pot over medium-high heat, add olive oil, onions, carrots, and celery. Cook and stir for about 8 minutes to soften the vegetables.
- Add the garlic, tomato paste, dried Italian Seasoning, salt, and pepper. Cook and stir for 1 minute.
- Pour in the vegetable broth, diced tomatoes (with liquid), potato, and white beans (drained and rinsed). Stir to combine, cover with a lid, and simmer for 20 minutes.
- Garnish with fresh parsley and serve with a side of French bread!

- Put the garlic cloves in a medium bowl with their papery skins still on. Pour over the boiling water and leave for 2 minutes (or see food team’s tip). Remove the garlic, reserving the water for later, then, as soon as the garlic is cool enough to handle, remove the skins and cut each clove in half lengthways.
- Melt the butter in a heavy-based saucepan over a low heat. Add the garlic, celery and thyme and cook gently for 3-4 minutes, being careful not to let the mixture colour. Pour over the wine and increase the heat, allowing the liquid to bubble and reduce by half.
- Add the beans, bay leaves, stock and reserved garlic water to the pan and stir. Reduce the heat to low and leave the stew to bubble gently for 30 minutes or until thickened and reduced. Use a potato masher to gently mash some of the mixture, making the stew a little thicker.
- Meanwhile make the gremolata by combining the chopped parsley, crushed garlic and lemon zest and juice in a small bowl.
