Categories     main-dish

Time 40m

Yield 6 sandwiches

Number Of Ingredients 11

6 crusty rolls, such as a Portuguese or country sourdough, split in half lengthwise
1/3 cup Dijon mustard
1 1/2 pounds grilled medium-rare steak, preferably from porterhouse, hanger, or ribeye, thinly sliced
Kosher salt and freshly ground black pepper
3/4 pound Saga blue cheese, cut into 12 slices
ROASTED SHALLOTS, roughly chopped, recipe follows
4 cups loosely packed watercress, washed and dried
18 shallots (about 1 3/4 pounds), unpeeled
1/4 cup extra-virgin olive oil
1 tablespoon kosher salt, plus more
Freshly ground black pepper

Steps:

  • Toast the rolls, split side-up, under a broiler.
  • Transfer the rolls to a work surface. Using a knife, slather the bottom half of each roll with some of the mustard and top with slices of the beef, overlapping the meat slightly. Season with salt and pepper to taste. Cover each portion of meat with 2 slices of cheese. Broil until the cheese is lightly browned and melted, about 1 minute.
  • Transfer the open-faced sandwiches to the work surface. Top each sandwich with 1/6 of the roasted shallots and the watercress. Slather the roll tops with the remaining mustard and cover the sandwiches. Slice the sandwiches in half crosswise.
  • Preheat the oven to 400 degrees F. In a large bowl, toss the shallots with oil, and the salt and season with pepper to taste. Transfer to an aluminum foil-lined baking sheet and arrange in a single layer. Bake until the shallot skins are somewhat charred and crispy and the shallots are very tender, about 40 minutes. Remove from the oven and allow to cool slightly.
  • Using a knife, slice off the tips of the shallots (the end opposite the root end) and discard. Gently squeeze the shallots from their skins and season with salt and pepper to taste. Serve warm or at room temperature.

CHICAGO STEAKHOUSE SANDWICH

Chicago Steakhouse Sandwich image

Provided by Jeff Mauro, host of Sandwich King

Time 30m

Yield 4 servings

Number Of Ingredients 14

One 20-ounce boneless rib eye steak
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon crushed red pepper
Three 10-ounce bags fresh spinach, washed and stemmed
Kosher salt and freshly ground black pepper
2 tablespoons crumbled blue cheese
1/2 cup buttermilk
1 cup mayonnaise
1/4 teaspoon Dijon mustard
1/2 teaspoon minced fresh dill
1/8 teaspoon ground black pepper
1 fresh loaf crispy French bread, cut into 8-inch segments, buttered and grilled

Steps:

  • For the steak: Heat a cast-iron skillet over high heat until very hot. Sprinkle both sides of the steak with salt and pepper. Place the steak in the hot skillet, reduce the heat to medium and sear until well browned, about 4 minutes. Flip the steak and cook until medium/medium-rare, about 6 more minutes. Set aside, loosely covered with foil, and let rest before slicing.
  • For the sauteed garlicky spinach: Heat the oil and sliced garlic in a Dutch oven over medium heat, stirring occasionally until the garlic is golden brown and crispy. Remove the garlic and set aside on a paper towel to drain. Add the crushed red pepper and cook until fragrant, about 30 seconds. Add the spinach and stir to combine with the oil. Cover and let cook over medium-high heat until the spinach is wilted but still bright in color, about 4 minutes. Season with salt and pepper and toss with the garlic chips.
  • For the buttermilk blue cheese dressing: Mix the mayonnaise, buttermilk, blue cheese, dill, mustard and pepper together in a bowl and set aside. Adjust the seasoning if necessary.
  • For the sandwich build: Slice the rested steak against the grain into 1/4-inch slices, removing any non-rendered fat. Place the steak slices on the bottom bun, top with the spinach and schmear the top bun with buttermilk blue cheese dressing.

THE COMISKEY BREADED STEAK SANDWICH

Provided by Jeff Mauro, host of Sandwich King

Categories     main-dish

Time 50m

Yield 4 sandwiches

Number Of Ingredients 27

Canola oil, for frying
1 1/2 pounds top sirloin, cut against the grain on the bias into eight 1/8-inch strips or fingers
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
4 eggs
3 cups Italian-style breadcrumbs
1/4 cup smoked almonds
1/4 grated Parmesan
2 tablespoons extra-virgin olive oil
1/4 teaspoon paprika
3 red bell peppers, fire roasted, from a jar
1 clove garlic, smashed
1/2 shallot, chopped
Kosher salt and freshly ground black pepper
4 ounces gorgonzola dolce, at room temperature
Four 6-inch tomato focaccia rolls, split and toasted (or your favorite focaccia bread)
Homemade Hot Giardiniera, recipe follows (or your favorite oil-packed hot giardiniera), finely chopped
1/4 cup table salt
1 cup small-diced carrots
1 cup tiny cauliflower florets
4 to 8 serrano peppers, sliced (depending on heat level desired)
2 cloves garlic, minced
1 stalk celery, diced small
1 red bell pepper, diced small
2 cups canola oil
1 tablespoon dried oregano
1/2 teaspoon freshly ground black pepper

Steps:

  • For the steak: Preheat the oven to 200 degrees F. Fill a large cast-iron skillet with 1 1/2 inches of oil and heat over medium-high heat. Sprinkle the steak strips with salt and pepper. In a shallow bowl, add the flour. In another shallow bowl, lightly beat the eggs. In another shallow bowl, add the breadcrumbs. Lightly coat both sides of the steak in the flour, then in the egg and then in the breadcrumbs.
  • Pan-fry the steaks, however many can fit at a time, until golden brown on both sides, about 3 minutes per side. Remove the steaks from the oil and onto a baking sheet lined with a wire rack or paper towels. Season the fried steaks with salt and keep warm in the oven while you cook the rest, if need be.
  • For the roasted red pepper sauce: Combine the almonds, Parmesan, oil, paprika, bell peppers, garlic and shallot in a food processor and blend until smooth, about 15 seconds. Season, and then place into a small saucepan and simmer for 5 minutes to take away the raw garlic bite and intensify the flavors. Set aside.
  • For the sandwich build: Schmear some of the gorgonzola on the bottom half of the bread. Place the hot breaded steak on the cheese, then the roasted red pepper sauce and then the giardiniera. Repeat with the remaining ingredients. Cut in half and serve with extra red pepper sauce for smothering.
  • Combine 2 cups water and the salt in a glass or non-reactive bowl. Mix until the salt is dissolved. Add the carrots, cauliflower, serranos, garlic, celery and bell pepper to the salt water and stir to combine. Cover and refrigerate overnight.
  • Day 2, drain and rinse the vegetables. In a clean bowl, mix together the oil with the oregano and pepper. Add the vegetables and mix to combine. Allow to marinate overnight. Giardiniera will only get better with time. After 2 days at the most in the bowl, you can place in air-tight mason jars and keep in the fridge for at least 2 to 3 weeks.
